Love this! What are your thoughts on "Velveting" that beef first....Washing (and massaging!!) it in cold water, then marinating in a touch of baking soda, Soy Sauce, Sugar, a splash of Xiaoshing wine... It really tenderizes it up.

I usually gently microwave (meaning, check up on them now and then) the noodles so that you can separate them without having them overcooked in the final dish. Otherwise they either clump up or break up in the stir fry process

Hmm... if it has wheat in it, then it's definitely not the correct noodle to use for this dish. There should only be a variety of starch, mainly rice starch in there. Also, no one really add fish sauce into this dish because the funk combined with all the other flavours are kinda weird.
