    You guys should look into something like a hay bailing hook to help with handling those cumbersome rotisserie skewer baskets. Use one in your off-hand to grip further away from you in between the grates and not break your wrists from handling such a heavy and awkward object!

    Wow... here's where you can tell that there's no secrets to good food, just a hell of a lot of love and hard work!     When i was small mother used to cook on rotisserie (the tiss' mother used to call it) and the flavours and smells added to the charm. Of course, now mother can no longer walk due to arthritis ( the fright as mother called it).

    So much detail, so many layers of flavor. Superb. I''ve stopped going to restaurants that make the same stuff I can make at home. From brine to charcoal to 16 layers of chicken salt and chicken fat on top of my fatty salty chicken, this is why I go to restaurants.

    That's a great sell for the charcoal. Have to use loads of it and it can't be cheap either. Charcoal lad smashed it

    We should once meet at a market in Brittany to look at how they do rotissery. Almost 90 degrees flipped, so vertical heat amd potatoes under the dripping chicken.

      The potatoes are amazing, but you don’t get the direct heat from below and the smoke in those places in France. So there’s different pros and cons.

    Looks amazing. What’s the make of the rotisserie? I just bought a big old bashed up heavy metal Argentinian style grill that you raise and lower the rack with a chain. I want to add a rotisserie to it. My mechanic neighbour says he can help and we can use an old windscreen wiper motor. It’s a work in progress

    Very involved. Lots of fat and salt layering fair enough, I'd love that with a nice healthy portion of coleslaw, some acid to cut through all the fat.
