    This was delicious! I did use xyanthan gum to thicken and it worked perfectly. The crust is THE BEST keto crust I've ever used. More trouble, but absolutely worth it.
    This lasts a long time and just got better!

    Omg 😯 this looks amazing!! My mom and I do a low carb diet and her favorite desserts are cheesecake and key lime pie. Her birthday is on November 28 so I am going to surprise her with this.

    I made this but used Lemons with Fresh Strawberries i mashed and mixed with some Stevia for sweetening, It is absolutely delicious but it does take a lot of time to make it. That said well worth the effort. Great recipe.

    Instant pot recipe please. Pressure cooking makes a moist creamy cheesecake, and is easier to cook than fussing with oven times and temps. Thanks for an incredible video with great tips. Your cake looks perfect!

    I made this as my first cheesecake and it was excellent! Great instructions only please clarify the amount of juice used and sweetener you added to the filling. It looked like one cup juice and even though you said 3/4 cup erythritol, you added 3 cups! I improvised, used Swerve in the amount suggested for the crust but used 3/4 cup Swerve for the filling with 5 drops Stevia, and one full cup of juice. My cheesecake was delicious! Do make sure to blend all the ingredients for the filling thoroughly though. I ended up with a bite or two more flavorful than others, and a few which tasted more like cream cheese. I thought I had it blended well. It’s difficult to know. Also, I used Xantham gum in place of guar gum for the crust, in the same amount, and although the crust didn’t roll to resemble a cookie dough ball, it still lined the pan beautifully. I set the crust in my refrigerator while I prepared the batter. I am not upset for a beginner after trying this recipe.

      I made this cheesecake a second time and used the juice of 8 limes, the suggested zest. I also used one cup of Swerve for the batter. It was delicious again, to my tastes.

    I’m making it right now and it’s out of the oven cooling for the first round. I saw your recipe this evening and it was a last-minute decision to do it. I know I’m gonna be up for a little while past 12 AM but I think it’s worth having it on the table for Easter Sunday. I substituted lemon 🍋 for lime and Think it will come out great 👍 .       chloe5susan It was so good that my soon to be 88-year-old mother asked for it to be her birthday cake in June. The next one I make I’ll take a picture of it. It was definitely worth the trouble, a labor of love. I also went online to make a meringue buttercream topping. It was the right balance of sweet from the typing and tartness from the cake. Definitely give it a try

    Nice, clear instructions for this keto cheesecake recipe. Although, not too sure about using coconut oil instead of butter 'cos I've never had butter burn when making a crust for my cheesecake. But, it'll be interesting for me to try it next time. TFS!

      That is what I thought! I make a delicious cinnamon raisin muffin in a cup....2 tablespoons flaxmeal, 2 Tablespoons Kerschmer's wheat germ, pinch of salt....1/2 tsp cinnamon....1 tsp of stevia, 1/2 tsp of baking powder, 1tbsp of avocado or melted butter and 1 egg. and heaping tablespoon of raisins ...mix all of it well in a coffee mug and microwave on high for one minute...dump out asap and butter to taste....so good!

    is coconut flour necessary? Can I just add more almond flour instead? I don't like the taste of coconut

      You probably could increase the almond flour if you want to. I would probably increase the pecans also by 1/2 cup too for more depth of flavor.

    If you bake it at a lower heat you don't need all that foil. 325 degrees for 55 minutes.

    Excellent video!! Cool tricks you did with the foil. You had me worried when you said 485 for the oven 😳😂. I’m wondering though do the measurements change if I didn’t want to add the lime? I just want to do a regular cheese cake. So if omit the lime do I need to replace that with another kind of liquid? Like heavy cream or something else or can just skip it and keep everything else the same?

    am I the only one that didn't hear him say how much lime juice and what to do with the separated egg (and i thought he said yolk, but showed it going in with the other 3 eggs so I guess he meant set aside the white, then didn't say what to do with it)...yeah to me these to things were clear as mud

      The lime is in the linked recipe - "1/2 cup + 2 tbsp" (sounds like 3/4 cups, but I'm not a good imperialist). For the egg whites you might have to get creative.

    You say 3/4 cup erythritol but in the video you clearly put 3 cups, or 3 3/4 cups in the cheese mix, it's very hard to tell which it is, even tho your paper recipe says 3/4 cups that seems very low. I'm going to make this right now but I'm definitely putting more than 3/4cup swerve into the cheese mix

    Has anybody tried it with clarified butter instead of coconut oil. I like them both but clarified butter might taste better. I'm just guessing. Clarified has a very high smoke point.

      We tried it with bottled key lime juice and it had a bitter flavor. Fresh is best!

      Valkh Package reads ‘confectioners’ Swerve. You can process granules in your blender or coffee grinder to make powdered sweetner

    Will this form of artificial sugar cause bowel troubles like a lot of sugar free candies do ?

      Eyrthritol (Swerve being a good brand) is not associated with upset digestive tract issues like stuff like maltitol.
      Monk fruit (usually mixed w/ Eyrthritol) is also good.
      Even if they never cause bowel pain, I would avoid maltitol and sorbitol (common is store fake pancake syrup) as they raise blood glucose very similarly to sugar.

      Mike D most put pan if water below rack on lowest rack while baking cheesecakes so they cook evenly and don’t crack. The tenting serves that purpose probably
