In case anyone sees this. Cook the meat as shown, then let it release.
You can remove it or leave it in there after it releases. Add the carrots and cabbage (and baby potatoes or quartered potatoes if you choose) in and cook it 7 minutes. Up to 10 depending on how soft you want them.
If you put thr cabbage and carrots in with the meat and cook it for an hour and a half, it'll be baby food.

@escapetherace1943 yup, I added some onion to cook with the meat for that same flavor and add to the broth. I then later added in carrots and more onions, then a little bit after that added the cabbage. The first set of onions were pretty much mush and had almost disintegrated which is want I wanted. The carrots and second set of onions were soft but still had some texture.
That broth was amazing too. I'm not proud to admit I drank so much of the broth straight because it was that good.

I am a corned beef fanatic! Literally one of the best tasting corned beefs I have ever come across in the past couple years is the one they carry at Aldi. A good tip though is to always put the fat side down and reduce the water amount from 3 cups to only about 2 cups. There's plenty of moisture in the corned beef brisket itself. Also what's the corned beef is done cooking you can remove it from the pot. Pour the leftover juices into a bowl or measuring cup and set aside. Then add your uncooked vegetables into the instant pot with one or two cups water or chicken broth in Steam the vegetables separately either before serving or while they are still in the instant pot you can based the vegetables with the leftover liquid from the corned beef. That way you can marry the flavors between the vegetables and the brisket without everything tasting the same.

Do you brine the brisket for any amount of time? Traditional is 5-7 days, but I’m seeing lots of videos (including this one) that are just adding the spice at the time of cooking. Thanks in advance.

I'm Jewish and grew up in Brooklyn. As a kid, and now, I consider Corned Beef on rye bread as the ultimate meal. Back then, about 70 years ago, there was a Jewish Deli on every block - I'm not kidding. Now we make our own without any new fancy gadgets. We put the store bought corned beef with its seasoning packet (which the butcher gave to us in a paper bag) in a big pot and cooked it for about four hours. We added cabbage and carrots at about the three hour point. The corned beef was kept covered with the gently boiling water when needed. The water was replenished also when needed. That's all there is to it.

Turned out great, thanks for such a quick & easy recipe. Great video also; short, sweet & to the point-made with love. I made a few changes based on what I had and diet requirements: rubbed the bottom of the pot with EVOO because I’m not used to the instant pot power & timing yet so many things stick. I used pork broth from the instant pot sweet Italian sausage and fresh fennel I made recently, the only produce I added was cabbage so it would be low carb/keto (3/4 a head bc it was large), just enough chopped onions for flavor, and added some extra spices to the top of the roast in addition to the spice packet (ground mustard, celery seed, garlic powder). I think an hour and a half was overkill for the meat but it was tender and registered 200 degrees with thermometer, but then 3 minutes didn’t seem long enough for the cabbage even though I cut it in quarters. I pulled the brisket out and let it rest on a plate 5-10min before slicing against the grain. I used the same instant pot. I’ll definitely make it again!

I've experimented with different ingredients at the same cooking time. Carrots, potatoes with the meat. I've only used the "meat" or "soup" buttons but the results were still very good. Average cooking time for good results has been between an hour and a half to two hours. I'm still a rookie. But I think this thing is fun.

Hi Kristan, I absolutely love corned beef and cabbage. I also like potatoes cooked in the broth too. Oh yummy stuff. I am so glad you showed this to everyone, this is the only way to cook corned beef. I have been cooking it like this for many many years, like on the stove with my old stove top pressure cooker. But that is old school now and use my Instant Pot. And I think it is the only way to get it fork tender while keeping it nice and juicy too. Ok, guess I have to go to the store.... Don't know if I'm willing to try your method of releasing the pressure manually. My sister-in-law does that with her pot roasts, and it comes out dry and tougher than a boot. I did one at her house and let it release naturally. My brother wanted to know what I did, and I told him. She hasn't released manually since.

Add 1 - 2 lbs of small potatoes to the remaining liquid, 1 lb of baby carrots, 1 or 2 sliced turnips, and then your sliced cabbage on top. Seal your instant pot and cook on high pressure for about 3 minutes.
