Theluli rihaakuru / spiced Maldivian tuna paste

  • Rihaakuru is a fish based thick sauce which varies in colour from light brown to dark brown. It is a traditional dish of Maldivian cuisine which is consumed almost daily in almost every households in the Maldives.
    Theluli rihaakuru is a simple preparation in which Maldivian tuna paste (plain rihaakuru) is fried with sauted onion and a chilli paste mixture. There are other versions of 'theluli rihaakuru' which includes mango, bilimbi or lime in it. I have never tried the other versions in cooking theluli rihaakuru yet. This is how my mom and I usually make theluli rihaakuru.
    Ingredients for chilli paste mixture:
    1/2 onion diced (medium)
    1 nos. garlic clove
    1 nos. thin ginger slice
    20 nos. curry leaves
    5 nos. dried red chillies
    1/2 tsp chilli powder
    1/4 tsp black pepper seeds
    2/3 nos. scotch bonnet chilli (to your taste)
    2 tbsp water
    Ingredients for cooking:
    2 tbsp cooking oil
    1/2 nos. onion medium (thinly sliced)
    15 nos. curry leaves
    1 1/2 cup plain rihaakuru
    Directions:
    Add the ingredients listed for chilli paste mixture in a grinder and grind it to a fine paste.
    In a pot, add oil, sliced onion and curry leaves. On low heat, stiring occasionally, saute onions till tender and lightly browned. If you want to make it more spicier, you can add fresh chilli while sautaying the onions as well.
    Once onions are tender and lightly browned, add grinded chilli paste mixture and cook on low heat for 3-4 minutes.
    Add plain rihaakuru (Maldivian tuna paste), and cook further 4-5 minutes untill well combined.
    Turn off the heat. Do stir 2-3 times after turning off the heat. Let it cool down before transferring it to jar.
    Enjoy with masbai, plain rice and roshi.

    Hi. I tried it and it was delicious (thank you for the recipe 😊) but it came out too sticky.. almost solid 😬 what can I do to make it more liquid-y?...

      Hi dear. Sorry for the late reply. Thank u for trying the recipe.
      If your rihaakuru mixture is too thick, add 1/4 cups of water to 1 n 1/2 cups rihaakuru and then cook it. Will take 3-4 minutes on medium heat. Do stir.
      When you lift your spoon it should fall off the spoon 3-4 drops and once the spoon is cooled you can check if it is thick enough for your liking or not. If it is too thin there will not be anything remaining on the spoon when you lift your spoon or spatula. If it does not fall and harden immediately when you lift the spoon, then mixture is too thick.
      It will thicken alot as it cools down.
