  • Maldivian food is filled with lots
    of seafood dishes and octopus is something Maldivians love to eat oven grilled, bbq grilled, with spicy chilli pastes, in fried rices, soups etc..
    This recipe is made from Maldivian chilli paste.
    Ingredients for the chilli paste:
    1 nos. small onion (roughly chopped)
    2 nos. garlic cloves
    1 nos ginger slice (thin slice)
    6 nos. dried red chillies
    1/4 cup curry leaves
    3 fresh long green chilli
    1/2 tsp black pepper seeds
    1/4 tsp cumin powder
    1 tsp chilli powder
    6 cubes roasted coconut
    1 tsp salt
    1 tbsp cooking oil
    1 tbsp oyster sauce
    2 nos. bilimbi (billimagu)
    2 tbsp water
    Ingredients for the cooking:
    3 tbsp cooking oil
    1 medium onion (thinly sliced)
    2 garlic cloves (chopped)
    1/4 cup curry leaves
    1 rampa leaf piece (3 inch)
    1/4 nos. scotch bonnet
    1/3 cup tomato paste (70g)
    1 1/4 tsp salt (salt to taste)
    2 cups water
    Directions:
    In a pot add cleaned octopus (I got already cleaned fresh octopus. However, I washed and cleaned the tentacles to remove any soil or dirt left in it. Also removed the innards and the eyes and then cleaned the inside of the head).
    No need to add water as the octopus will release lots of liquid while being cooked. ( if you do want to add water, add very little water 1/4 to 1/2 cup water) .
    Put the lid on and cook it for 15 mins on medium heat. I got 2 small octopuses that weigh total 1 kg so the cooking time is less. If you got 1 big octopus that weigh the same cook it for 20-25 mins.
    Once cooked, let it cool down. Now cut it into small bite size pieces.
    In a clean pot, add sliced onion, chopped garlic, curry leaves, rampa leaf, chilli of your choice and saute till onions are lightly browned.
    Onced onions are tender, add grinded chilli paste mixture, tomato paste and salt. Combine well for 2-3 mins and add 1/2 cup water. Cook on low heat for 10 mins.
    Add the cooked octopus pieces and combine all together.
    Add 1 1/2 cup water. Lid on, cook it on low heat for 15-20 mins, so that all the spices from the chilli paste mixture will be combined well the octopus pieces. Stir in between (1-2 times).
    Now lid off, cook for 2-3 more mins. Serve.
    Enjoy. It goes will with plain rice, vegetable fried rice, roti or Maldivian flat bread, chappati and Naan.

      Bilimbi , locally known as Bilimagu. Its a little sour fruit, similar to star fruit. If it is not available, skip it or substitute it with sour mango / a little bit of lime juice.🙂

    You must have studied English in India. "Grinded" is incorrect. The correct, Queen's English word is "ground". So "Once onions are tender, add grinded chilli paste mixture" would correctly be written, "Once onions are tender, add ground chilli paste mixture". Don't let those Yendians teach you English.
