Wow, just wow! What colors did you use? Did you put them on a palette and then thin it down with water on the canvas? I would love to try to recreate this!
Yes just use water, you can paint in thin transparent layers for an interesting effect or apply thick to canvas and use washes of water.
How would you or do you varish this?
I would use an acrylic spray varnish matte or gloss. Just a couple of light sprays when the work is finished.

What is it you've got for the charcoal parts, is that just a soft charcoal stick ? Is is it a big piece of vine charcoal?

I sometimes use black chalk and vine charcoal in various sizes

Yes I did at least 2-3 coats to achieve a smooth finish, spray with fixative to finish.

Try working on smooth paper or card, always work on heavyweight, at least 200gsm

Yes this is water with acrylic, the finished work is fixed with varnish.

No, I don't think that would work.

Yes I sometimes paint over unfixed charcoal with a little water. Only apply a fixative when the work is finished or if you want to paint over.
