It’s another beautiful day and today I’m going to show you guys how to make fast and easy ENCHILADAS SUIZAS!

‼️400degrees for 10 minutes
Ingredients:
Enchilada sauce:
2 poblano peppers
2 Anaheim peppers
Chile Serrano or jalapeños
1/2 onion
2 lbs tomatillos
4 garlic cloves
Handful of cilantro
1 tsp oregano
1 tsp black pepper
2 tsp Chicken bouillon
Salt to taste
1/2 tsp ground cumin
1 cup media crema
4 oz cream cheese
1 1/2 cup chicken broth
For the chicken:
I used the breast of 2 rotisserie chickens
Seasoning of choice
For the enchiladas
Oil
Corn tortillas
1 serving of love 💕

In my garden this year we have 24 tomatillo plants. We love salsa verde hehehe. Since it's very difficult to get chiles here in Maine, I am growing hatch (numex hatch) Anaheim, jalapeños, seranos, banana peppers, lemon jalapeno, and most important Guajillos Some I will be roasting / drying for use all year. I buy my Chipotle, guajillo, pasilla, etc. online, and it's expensive! Lol. It runs me $25 just for enough guajillo to make 1 big batch of Birria! (6lbs of meat batch) I was so inspired by your recipes that we did only peppers (red, green, poblano) and the chiles listed above along with roma tomatoes and tomatillos! Thank you for the great recipes! It's a good thing my yard is 2 acres, lol. We have over 125 plants going into the ground this weekend! I told my hubby we will name our garden space, Veggies of Claudia!😂😂😂❤❤❤

Her recipes are definitely delicious and easy to follow, no doubt she has creativity and a teaching heart. I have made several of her recipes by following along with her videos

Firstly , thank you for sharing you love for cooking. I’m sure there’s an abuelita or mamma that influenced you. Just a quick question. In the video you mention Crema Mexicana, but in the recipe it’s Media Crema.
The crema mexicana little thicker and tangier the media crema is thinner and sweeter. I’ve always used Crema Mexicana, but I might try the media crema just to see what it would add. Thought I would point it out.

What is the rack you use to roast the peppers? I usually put them directly on the gas burner.

Claudia, I like how you get straight to the point, and explain it all within under 5 minutes. However, would you consider doing a full video from scratch to finish, no cuts. Even though the video is short.....this seems like a 2 hour process minimal! :)
