@@antkant7676olive oil should ideally also not be used in high temperature cooking but it’s better than other vegetable or seed oils. Best fats for cooking are tallow and ghee or coconut oil if you’re vegan. Olive oil is great if used cold but the quality also matters a lot

It might be because the heat is too high. If the heat is too high the outside could be overcooked and the inside would be undercooked so I recommend cooking the pancakes at a smaller temperature.

The eggs help with the browning of the pancakes. You can add some butter to the batter to enhance the browning.
