I'm infatuated with making egg fried rice at home too, when I first left home at 18 in 1988 I lived in a shared house and one of my best friends there was Chinese, we both loved cooking so basically did all the cooking for everyone as no one else in the house could even boil an egg, but how he made egg fried rice fascinated me right from the start, and still does, I absolutely love making it, and after making it at least once a week for about 36 years, I've learnt three things, first the simpler it is the better, second the Wok has to be a proper Chinese carbon steel one which needs seasoning (non stick doesn't work), and lastly the Wok has to be as hot as it's possible to get it, the oil should start to smoke instantly as it's added.
And a GOOD sesame oil 👍👍👍

can you even be allergic to MSG? might be only me but I never heard that before
MSG got a very bad rep in the states, it was basically shot down as being very bad for you, lots of people claiming allergies etc. but it turns out it's not actually bad for you at all really, no more than salt is anyway, it was a mixture of fake news and industrial espionage at the end of the day, but it went on for so long and is so deeply engrained in American culture now that a lot of Americans still won't touch the stuff and still talk about it like it's some kind of toxin.
You can’t be allergic to MSG. People have demonised it for decades now since “Chinese restaurant syndrome” was a thing in the 70s and 80s.
