How To Make Great Pizza with Store-Bought Dough

  • It's tempting to take the shortcut of buying dough from your local grocery store but the pizza doesn't always come out great. Here are some quick tips and tricks for getting the most out of your store-bought pizza dough.

    I make my own dough, but I started out with store bought dough. And yeah, the 1st time was a disaster because I didn't know about the resting period. I actually figured it out by accident lol. I cut the dough in half & rolled each half into balls & covered them with a damp towel to keep them from drying up. While I prepped everything else. Well, to my surprise, it was about an hour later & when I went to stretch it out, it literally melted in my hands & stretched out in less than 5 seconds!! 😄 I then read a book I absolutely recommend by Peter Reinhart, "The Bread Baker's Apprentice" & found out that what I did was how you treat the dough before you stretch it.
    Here's how I then started to do it, works amazing. I like very thin crust, so out of a 16oz dough, I cut it in half & shape the balls like he showed & then i spray the inside of a quart sized ziploc bag with oil and place the ball inside. I squeeze the air out of the bag & seal it. I then let it rest for 2hrs. You will see it rise & almost double in size. I then use scissors to carefully cut open the left & right edges of the bag so that it flap opens exposing the dough. At this point, that dough will stretch out like butter. But here's another little tip, on a plate, put a nice pile of flour. When you open up the bag, sprinkle some flour over the dough & then place that side on your hand and then carefully flop the unfloured side directly onto the pile of flour & pat down the dough intobthe flour, flip it & pat it down again & then pick it up & shake off the excess onto the work surface that you will use to stretch the dough. At this point you will be amazed at how super easy that dough will stretch. RUclips videos on how to stretch out pizza dough Neapolitan style, it will take your crust to a whole new level. ;)

    This video was so helpful thank you so much! I had been fighting store bought dough forever. I have a wooden pizza spatula and a pizza stone, thought that meant you could knock out legit pizzas but I was definitely underestimating the science behind pizza itself. I made the best pizzas last night after watching this. No more fighting with dough!! And I will start to learn how to make it too, please forgive me!! Thanks again

    Your tricks really helped - pulled the dough out if the bag just like you said, no hassle at all! Rolled it into a ball with your instructions and let it sit in room temperature, covered for almost 3.5 hours. The dough rose beautifully, was so soft and full of air bubbles. The only problem I had while I was stretching it, if you could please show how you completely stretch the dough that would be great! Thanks!

    Total accident in found this video looking for pizza ideas...but MAN you have no idea how badly I needed a video like this...it was fate, lol. I love to make dough but space is an issue so I buy these doughs and the bounce back is SOOO annoying lol. Will be using ALL these tips in the future. Thank You 😁

    Thanks for those valuable tips!
    I have been obsessing lately with making pizza on my cast iron cookware outdoors with charcoal to gain experiance for later use when camping. Saving time with the premade dough will help me spend more time on heat management with my iron discata and 16" dutch oven lid.

      The longer the better. U can go up to about 24 hrs.

    I make my own dough and now have a pretty good handle on the process and make a pretty decent pie. But I made every mistake you can make along the way. And I made every mistake you can make with store bought dough too. I know from my own battles, this man speaks the absolute truth.

    I use to buy store bought before I made my own.

    Everything you've said about Trader Joes pizza dough is valid. Once I started making a dough ball immediately out of the package and letting it rest and rise for an hour or two, everything fell in place.

    I don't like cooking at all,i heard that dough stretching is challenging and i researched about it.
    This video is very good and informal,especially with the details.others mentioned about gases,but i could only see dough 😂😂😂

    Wow, let me tell you, as someone who's always bought frozen pizza, homemade pizza is 100% worth the time it takes to make. I got dough from a tube and it was still really good. Dough made from scratch is going to be on another level.

    yeah I just got the dough from the store the other day bc someone got us a pizza maker oven thing..an I took it out of the bag ,with flour on my hands an on the counter an it was pretty hard, like you said, i just kept on pulling an stretching as best I could, finally I got it round enough to fit the 12in pizza pan, an it actually came out GREAT! I'm going to try what you said next time, make it round, leave it out under a bowl for 30min ,see if its easier..but to everyone who only ever gets frozen pizza, you dont no what your missing! never again! dough is only like $1.49 an most stores, try it!

    I bought dough for the first itme last week and my first problem was how to get it out of the bag. lol No one tells you that part. Glad to find that tip here. I would have loved to see you form a dough for a sheet pizza. That's what I was trying to do and I had to use more flour to work it and ended up with a tough crust. Thanks for sharing!

      It wouldn't stretch so he played it off and just used the instructions on the bag dough and it stretched out perfectly.

      Exactly. Looks like making a dough ball isn't really necessary after all if you're just gentle with the dough right out of the bag. He probably didn't want to roll out his dough ball because his entire argument would have been moot.

    Ok so with the second dough, you stretched but didnt rise it first. So, should I make a dough ball just let it rise till finger poke doesnt shrink back too much? Or should I just stretch it from room temp out of the bag? I'm so confused. 🤔

      I believe the premade dough has already techinically resien, the ball forming and then rising again is a second proof to help make a nicer pizza from the store bought dough, though its technically not necessary. oh also im 8 months late on this reply lol, didnt even notice

      Pretty sure the reason why the second one worked was because he hadnt touched it and formed it into the ball. The ball will indeed become super good to stretch after a while. If you have not disturbed the dough at all from the store then it might be good to go. MIGHT

    i cannot, for the life of me, get the pizza dough to look like yours. Tried different brands, etc. The last attempt, the dough was so sticky (yes we used flour etc.). We left the dough out, put a bowl over it for about an hour. The pizza still turned out awesome tho.
    btw your videos kick ass.

    Hi Scott - If you leave the dough ball out like that, do you find that it sticks to the surface you left it on when you come back to get it 30min or so later? If so, what would be an easy way to get it off?
