I don't. I don't think it's difficult to make pizza dough at all. You have to wait 4 to 9 hours to use store bought dough. That takes planning. Why not just plan the day before and make the dough and put it in the fridge?
What I've learned is how to make pizza without a stone. The two-part (bottom and top) method fixes this problem. This video should be renamed: "Make Perfect Pizza in Your Lousy Home Oven."
We're lucky to have a restaurant nearby... They have typical Quebec cuisine things like poutine, fries et al. Thet also do delivery pizza, it's american style pizza with all the usual toppings but you can also just show up there and buy fresh pizza dough take-out. It's on my way from work to home, so it's very convenient for us to just have me a few dough balls from the restaurant and get the toppings ready at home for an easy weeknight meal.

Thank you , My father used to make homemade pizzas every Saturday for us , He loved anchovies, mozzarella, mushrooms,fresh peppers onions, fresh tomatoes and would make me & my grandmother our favorite , mozzarella, fresh tomatoes and fresh basil out of our garden , never alot of sauce , as his good friend when he was in the Vietnam War, taught him real Italian pizza isn't made the way Americans make them . Tastes so much better , I made homemade pizza a lot for my children, and now my 2 granddaughters are ages 11 & and 10, along with learning to garden , cook , sew, etc. We must get our children on the right path , as I see daily so many younger people just let their children and young adults have no learning skills or even open doors for others . Great job Vincenzo! As a Chef, may I kindly give you a suggestion that even World Champion Pizza Chef Johnny Di Francesco and even our friend Vito Iacopelli would concur! When removing pizza's from the oven, it's best to rest the searing hot pizza on a cooling rack for as little as even 30 seconds, this will ensure that the crust will release its steam which will help to keep the crust crunchy! I know many will refute that, but just ask Johnny or Vito and they will agree 100%. Saluti...😎
That also works when you make sausage bread! My upstairs neighbor has a super small oven, so I bake his pizzas for him. He finally caught on I was waiting at least 5-10 mins before I brought his pizza upstairs lol. But the crust was good, and now he knows my " secret" 😂

Easy pizzy, ive been using store bought dough for years except I load my pizza with , sausage, pepperoni, mushrooms, peppers , ham, and if I have leftover meatballs, them also , 1 slice fills me up , I like your lighter version, look anyone can do this, great tip Vincenzo, rome new york
Made it today. Pretty great, even with dough rising only 4 hrs and my gas oven not having bottom and upper separately. Still huge difference than the 30 min of rising, suggested on the dough package.

How come your pizza dough didn't rise? My pizza dough rose right out of the top! I think I cracked open one side and let air in. My wife said the sauce was to dry and thin. We use the same technique mostly, with one difference I learned from you in a previous video. When we parbake the dough, I don't even put the sauce on yet. I just slide the crust only our stone in the over alone. You did this the last time you posted about made pizza in a home over, and it gives you great control. Also, I like to get any liquid I can off the pizza I can before the toppings go on. Every had a pepperoni pizza with a big pool of oil in the middle? It's sad. But if you pre sauté the pepperoni you can avoid that and get the pepperoni as done as you like. Can't do that with fresh mozz, but you you can put it in a towel and squeeze out a lot of the milk. I owe the quality of my pizza to you. Grazie.

I tried previous instructions for making the dough it just need a bit more yeast because I do not have the best flour quality available and could not emulate the conditions to the letter. But a store bought could do when I do not have the time. And a big thank you for the baking instructions!
when i make my pizza dough, i dont have a pizza oven, but sometimes i use a barbecue as it gets really hot like a pizza oven. i also use a normal oven as well sometimes
That's a great idea! Using a barbecue or a regular oven can still yield delicious results. Just make sure to get the oven as hot as possible for that crispy crust. 🍕🔥
Here in France we have doughs for tarts (desert or savory) & pizzas. They roll up. Ok for tarts, not as ok for pizza. It's not as messy of course than dough making. It's still a step up from frozen pizza + added ingredients, or most local pizzar. THIS is another level though.
I love the video. Nice and great. In India where i live it is not so easy to get a store bought pizza as it is generally not preferred. It is much more easy to get pizza from domino's and pizza hut and it is suited to our palettes.
Don't have doughballs in supermarkets here, we can get pizzadough already rolled out.. But most of it really isn't that good at all. So I just make it myself or ask a pizza shop if they would sell some. Love this video, awesome tips and tricks for us that want to make homemade pizza, but don't have a pizza oven. (I do have a pizza stone, would recommend, they're not expensive) Although I am looking to get one, would love a video on how to choose the best one or maybe you rating which are best for home cooks 😁
Here in Germany, we have a few brands selling pizza dough but it always comes already rolled out and it pretty much turns into a cookie. For some time now, though, another brand emerged selling dough balls like yours and it was a game changer. I made it on my pizza stone like I would with my own dough and it turned out amazing. Definitely an alternative if I'm too lazy to make my own dough. I actually have one in my fridge right now for this weekend, I'm gonna give your method letting the dough rest outside a try and see if and how it changes the pizza.

Parcooking has been a game changer. I think this is the advantage of skillet / cast iron pizza, but I'm starting to do it in the oven as well. I'll definitely remember the trick about the mozzarella milk. If you have a stand mixer, I highly recommend trying to make pizza dough using it.

My local supermarket started selling dough balls and “pizza kits”. Thank you for the tip to rest the dough for four hours. I’m guilty of taking the dough out of the fridge and immediately using it! Now I know better.

I made this pizza, very good taste but it didn't come out crunchy and it grew a lot. 🤷🏻♀️ I'll have to try a different dough. Really loved the fresh basil and fresh mozzarella on it.

I tried store bought pizza dough once. Working with it was like a cross between a sci-fi horror and a slapstick comedy! The dough simply crawled back into a ball regardless of what I did to try to stretch it out flat, as if it was annoyed with me for disturbing it! I am surprised that it didn't try to crawl away when my back was turned.

Wow. After working at papa Gino’s as a kid (it’s a New England chain pizza and sub shop for those who haven’t heard of it) I had no idea how well they make their pizzas. It all fine semolina and dough balls just like you used. The sauce is really the only part that was premade with a shelf life. Everything else was very fresh. It’s so sad seeing them closing so many locations.
Don’t know why Cento pizza 🍕 sauce is not the GO TO sauce to use when you don’t have time to make your own!! I actually prefer their canned pizza sauce to some of the best pizza shops!! js
Believe it or not, I buy the fresh pizza dough at Walmart. 1 pound ball for about $1. To make it better, I let it cold proof overnight and then 3 hours out of the fridge.. It can make 4 small, 3 medium or 1 large personal pizza.

Interesting. But since i saw the your video with johnny di francesco i prepare my dough one day before and it is always good pizza. I tried few things with the tomato sauce (always Italien Tomatoes) and tried different mozzarella. But since we got a big grill we make our pizza on the grill the higher temperatures gives the pizza +1 Level :D

I really enjoyed watching your video... I have never made a homemade pizza or homemade pizza dough... Im making 2 pizzas today and im using pizza dough buddy already made pizza doughs...which were frozen when i got them so this morning early I took them out of bag they came in and placed them into a 1 gallon zip lock bag to thaw out for later on this evening... also it was interesting hearing about the mozzarella cheese as I did buy the shredded mozzarella and provolone mixture... 1 pizza is a white pizza im making with a white pizza sauce and ricotta cheese on it and the other is just a regular pepperoni cheese pizza... next time I will have to get the mozzarella cheese ball for sure... and everything i've researched said to use a bread flour or corn meal but no ones said what kind till your video so i'm def going to buy the Semolina double milled flour... also I am very curious to know what kind of Extra Virgin Olive Oil you use? I have tried every brand from store brands to whatever kinda brand was avail...the best available one i've found that I buy all the time is the Carapelli Unfiltered Extra Virgin Olive Oil.... thank you so much for sharing your recipe and for explaining it all step by step it has been a huge help thank you :^) have a blessed day...

The only market near me with prepared pizza dough is an Italian market and it's pretty good. It doesn't come close to the slow rise dough I make but it's convenient and I use it for everything from actual pizzas to fried dough treats to cold cut sandwich rolls. I've even greased it up with extra olive oil and made unsatisfying focaccia. Hey, good dough takes time and sometimes, it's better to get it done. But unless you have a good pizza restaurant that delivers, you're better off with the prepared dough and making it at home.

I do this technique too, made hundreds of pizzas and were developing technique step by step..what I do I cook it in big cast iron pan, first (the bottom) on stove on max induction, and then uder broiler with sauce only, and then I add toppings. basil I put in sauce and mozzarella cheese I let to "piss" on paper towel to get rid of the "milk water"...result is: Crunchy yet soft dough with not burned toppings and puffed edges like crazy. I do love topping classsic (mozzarella only) or nduja or with tagiasche olives or lean pancetta thinly sliced with artichokes (my favorite). btw pizza dough I do myself using world's pizza master flour (le stagioni) amd I proove it in basement where is like 14° C, this way the proove is great overnight. The time that went into this was uncountable ale the cost but result is something that makes me happy all the time, and the most precious feeling that I get is thru food and satisfied tongue and belly. Greetings from Czech, many Italians are here and I always have to get to know them thru work (hotel) and talk about food, we learn together from each other. Italians teach me about your cusine wich I master in compare to other czechs and I teach them how to drink beer :D hehe love you! I used to do pizza kits on my work. They're rolled out dough on baking paper with a small bottle of passata. The dough was square, which is great in terms of space, and every kid could choose which toppings they would like, even pineapple (they went through a rough patch). But having said that, the dough was alway way too fresh/young and therefor very yeasty and sticky. Hence I prefer to make my own dough. Oké it takes a resting day but that's not really something to consider because it doesn't require you to stay and watch it. I put it on a pizza stone in my closed barbecue which is nothing fancy, I payed 80 Guilders for it 30 years ago and it has been out there in my garden ever since. Ordered a screw in top thermometer recently. What's your view on all those different outdoor pizza ovens?

Dear Vincenzo, I have two questions. What is the difference between the tomato sauce you are using and passata (could one use passata directly or does it need to be cooked?). Do you have any recommendations for white pizza - what kind of sauce do I put on it?
He is using crushed peeled tomatoes. That gives you not only a richier taste but also a more chunky sauce. You do not want your sauce to be too watery and thin or you will lose flavour and make the dough too wet.
Funny story Mr Vincenzo. I was making my pizza dough like the preppy kitchen video that you and Johnny Di Francesco reacted to because i didnt know any better 😂😂😂. That was the only way i knew how to make it. I always wondered why i couldnt get my dough crispy lol. Now i know i was doing everything so wrong.
you actually don't need a recipe for Panino, you just need to choose a great bread roll and then buy all you favourite ingredients to make the best Panino eveer!

Yes. Put a stone on the bottom rack. Make sure the oven is preheated and the stone is hot before adding your pizza. On the rack above the stone.

How come your pizza dough didn't rise? My pizza dough rose right out of the top! I think I cracked open one side and let air in. My wife said the sauce was to dry and thin. So, when I pulled the pizza pie out, I added more sauce and then the toppings! NAILED IT!!!! Thank you Vincenzo! I am posting this on LinkedIn!
We use the same technique mostly, with one difference I learned from you in a previous video.
When we parbake the dough, I don't even put the sauce on yet. I just slide the crust only our stone in the over alone. You did this the last time you posted about made pizza in a home over, and it gives you great control.
Also, I like to get any liquid I can off the pizza I can before the toppings go on. Every had a pepperoni pizza with a big pool of oil in the middle? It's sad. But if you pre sauté the pepperoni you can avoid that and get the pepperoni as done as you like. Can't do that with fresh mozz, but you you can put it in a towel and squeeze out a lot of the milk.

I tried previous instructions for making the dough it just need a bit more yeast because I do not have the best flour quality available and could not emulate the conditions to the letter. But a store bought could do when I do not have the time. And a big thank you for the baking instructions!

when i make my pizza dough, i dont have a pizza oven, but sometimes i use a barbecue as it gets really hot like a pizza oven. i also use a normal oven as well sometimes
That's a great idea! Using a barbecue or a regular oven can still yield delicious results. Just make sure to get the oven as hot as possible for that crispy crust. 🍕🔥
Here in France we have doughs for tarts (desert or savory) & pizzas. They roll up. Ok for tarts, not as ok for pizza. It's not as messy of course than dough making. It's still a step up from frozen pizza + added ingredients, or most local pizzar. THIS is another level though.

I love the video. Nice and great. In India where i live it is not so easy to get a store bought pizza as it is generally not preferred. It is much more easy to get pizza from domino's and pizza hut and it is suited to our palettes.

Don't have doughballs in supermarkets here, we can get pizzadough already rolled out.. But most of it really isn't that good at all. So I just make it myself or ask a pizza shop if they would sell some. Love this video, awesome tips and tricks for us that want to make homemade pizza, but don't have a pizza oven. Here in Germany, we have a few brands selling pizza dough but it always comes already rolled out and it pretty much turns into a cookie. For some time now, though, another brand emerged selling dough balls like yours and it was a game changer. I made it on my pizza stone like I would with my own dough and it turned out amazing. Definitely an alternative if I'm too lazy to make my own dough. I actually have one in my fridge right now for this weekend, I'm gonna give your method letting the dough rest outside a try and see if and how it changes the pizza.

Parcooking has been a game changer. I think this is the advantage of skillet / cast iron pizza, but I'm starting to do it in the oven as well. I'll definitely remember the trick about the mozzarella milk.
If you have a stand mixer, I highly recommend trying to make pizza dough using it.

My local supermarket started selling dough balls and “pizza kits”. Thank you for the tip to rest the dough for four hours. I’m guilty of taking the dough out of the fridge and immediately using it! Now I know better.

I made this pizza, very good taste but it didn't come out crunchy and it grew a lot. 🤷🏻♀️ I'll have to try a different dough. Really loved the fresh basil and fresh mozzarella on it.

I tried store bought pizza dough once. Working with it was like a cross between a sci-fi horror and a slapstick comedy! The dough simply crawled back into a ball regardless of what I did to try to stretch it out flat, as if it was annoyed with me for disturbing it! I am surprised that it didn't try to crawl away when my back was turned.
😂 Store-bought pizza dough can be a bit tricky sometimes! It's like it has a mind of its own. Homemade dough might be more cooperative for your pizza adventures. 🍕👨🍳😅🤣

Wow. After working at papa Gino’s as a kid (it’s a New England chain pizza and sub shop for those who haven’t heard of it) I had no idea how well they make their pizzas. It all fine semolina and dough balls just like you used. The sauce is really the only part that was premade with a shelf life. Everything else was very fresh. It’s so sad seeing them closing so many locations.

Believe it or not, I buy the fresh pizza dough at Walmart. 1 pound ball for about $1. To make it better, I let it cold proof overnight and then 3 hours out of the fridge.. It can make 4 small, 3 medium or 1 large personal pizza.

Interesting. But since i saw the your video with johnny di francesco i prepare my dough one day before and it is always good pizza. I tried few things with the tomato sauce (always Italien Tomatoes) and tried different mozzarella. But since we got a big grill we make our pizza on the grill the higher temperatures gives the pizza +1 Level :D

I really enjoyed watching your video... I have never made a homemade pizza or homemade pizza dough... Im making 2 pizzas today and im using pizza dough buddy already made pizza doughs...which were frozen when i got them so this morning early I took them out of bag they came in and placed them into a 1 gallon zip lock bag to thaw out for later on this evening... also it was interesting hearing about the mozzarella cheese as I did buy the shredded mozzarella and provolone mixture... 1 pizza is a white pizza im making with a white pizza sauce and ricotta cheese on it and the other is just a regular pepperoni cheese pizza... next time I will have to get the mozzarella cheese ball for sure... and everything i've researched said to use a bread flour or corn meal but no ones said what kind till your video so i'm def going to buy the Semolina double milled flour... also I am very curious to know what kind of Extra Virgin Olive Oil you use? I have tried every brand from store brands to whatever kinda brand was avail...the best available one i've found that I buy all the time is the Carapelli Unfiltered Extra Virgin Olive Oil.... thank you so much for sharing your recipe and for explaining it all step by step it has been a huge help thank you :^) have a blessed day...

The only market near me with prepared pizza dough is an Italian market and it's pretty good. It doesn't come close to the slow rise dough I make but it's convenient and I use it for everything from actual pizzas to fried dough treats to cold cut sandwich rolls. I've even greased it up with extra olive oil and made unsatisfying focaccia. Hey, good dough takes time and sometimes, it's better to get it done. But unless you have a good pizza restaurant that delivers, you're better off with the prepared dough and making it at home.

Great video. If you where making several pizzas could you part cook them one at a time in a batch and then broil / grill them afterwards to serve? Or would that spoil the texture? Thanks
I do this technique too, made hundreds of pizzas and were developing technique step by step..what I do I cook it in big cast iron pan, first (the bottom) on stove on max induction, and then uder broiler with sauce only, and then I add toppings. basil I put in sauce and mozzarella cheese I let to "piss" on paper towel to get rid of the "milk water"...result is: Crunchy yet soft dough with not burned toppings and puffed edges like crazy. I do love topping classsic (mozzarella only) or nduja or with tagiasche olives or lean pancetta thinly sliced with artichokes (my favorite). btw pizza dough I do myself using world's pizza master flour (le stagioni) amd I proove it in basement where is like 14° C, this way the proove is great overnight. The time that went into this was uncountable ale the cost but result is something that makes me happy all the time, and the most precious feeling that I get is thru food and satisfied tongue and belly. Greetings from Czech, many Italians are here and I always have to get to know them thru work (hotel) and talk about food, we learn together from each other. Italians teach me about your cusine wich I master in compare to other czechs and I teach them how to drink beer :D hehe love you! No broiler, no problem! To mimic broiling effects, place dish on the top rack. Crank the heat, watch closely 🔥👀. Achieve that golden finish!
I used to do pizza kits on my work. They're rolled out dough on baking paper with a small bottle of passata. The dough was square, which is great in terms of space, and every kid could choose which toppings they would like, even pineapple (they went through a rough patch). But having said that, the dough was alway way too fresh/young and therefor very yeasty and sticky.
Hence I prefer to make my own dough. Oké it takes a resting day but that's not really something to consider because it doesn't require you to stay and watch it.
I put it on a pizza stone in my closed barbecue which is nothing fancy, I payed 80 Guilders for it 30 years ago and it has been out there in my garden ever since. Ordered a screw in top thermometer recently.

You must cut the mozzarella the day befor, put it in a strainer let in run in to a bowl in the fridge. Then you have perfekt mozzarella for a pizza.

Dear Vincenzo, I have two questions. What is the difference between the tomato sauce you are using and passata (could one use passata directly or does it need to be cooked?). Do you have any recommendations for white pizza - what kind of sauce do I put on it?
He is using crushed peeled tomatoes. That gives you not only a richier taste but also a more chunky sauce. You do not want your sauce to be too watery and thin or you will lose flavour and make the dough too wet.

Funny story Mr Vincenzo. I was making my pizza dough like the preppy kitchen video that you and Johnny Di Francesco reacted to because i didnt know any better 😂😂😂.
