  • Salted duck eggs are best served as a side dish with Congee or rice porridge. The rich yolks are often used in Moon cakes. It can be used to cook with vegetables, seafood, or meat. It's rather easy to make salted the eggs at home, and they taste great too.

    Miri Y. You can use any Chinese cooking wine. I used Shaoxing rice wine in this recipe.

      +Flavours Of Asia hey how do you get a dry texture for hard boiled ones? some of these eggs i buy at the supermarket are shiny, soft and wet after boiling. but in restaurants they're dry and hard. how do i achieve a dry and hard texture?

    Love them, so good every single time. Just a question, where can we buy the actual unsalted duck eggs. I know where to by the salted ones but not the unsalted ones.

      Thanks for the comment. As for the duck eggs, over here in Vancouver, usually above the chicken eggs..either Wholefoods or Asian grocers.

      In rural areas you often buy them from wherever you see a cardboard sign at the side of the road saying 'duck eggs'. =P
      Often a good way to get cheap and really nice ones, at least.

    I've tried the wide jar with salted water inside and closed lid procedure and it works well with chicken eggs.

      Sorry for the late reply. Store in the fridge once you're satisfy with the saltiness. Can keep a long time, but I usually used them in 2 months. Hope it turn out well for you. :-)

      Alil Daning you can use plain water with salt in a big open wide jar then place the eggs inside. Close the lid and keep up to 3 weeks same result 😄

      Carina Tus I've done a little experiment a few weeks ago and it turned out ok. I submerged the eggs in water in a container barely covering the eggs and put tons of sea salt in it :D

      No, store in a dark and cool place..like basement, underneath stairs, etc

    Hi. Thanks for the recipe. I noticed from your video the salted eggs are wet after 3 weeks. How do we store them if we are not using all of them at once?

      Margaret Wong If you continue to leave them in the bag, then they will become saltier by the day. Once you have your desired saltiness of the egg, rinsed off the salt and store them in the fridge.

      1. No, at room temp, somewhere dark. 2. Yes, you can use chicken eggs.

      Any wine will do. The point is to use acid in the wine (you can also use vinegar instead) to thinner the shell so salt can get into the egg easily.

    first time boutht chine salted duck egg. wanted to fry ( like regular chicken eggs.) not work out...went to the garbage.. tryed to boil...after cuted and tried to eat they very salty........ what is that eggs for?

      Salted egg is very salty...if hard-boiled have it with rice congee, as a side dish..use the yolk for making Chinese pastry, add to minced meat for steaming etc.

      I hard boil, chop the egg up and mix with tomatoes. Great side dish with deep fried fish

      Mix it with diced tomatoes and some sliced onions. Eat it with rice, that's how we do it in the Philippines :)

      Salted egg usually made with duck eggs. So, I'm not sure how good they taste with chicken egg. I think it should work but maybe the yolk is not as rich as compare to the former. Thanks.

      Megan Smith Yes, 3 weeks is perfect. I've tried 2 1/2 weeks, the egg white is salty but not the yolk.

      Megan Smith I would recommend you to boil an egg, & taste yr preferred saltiness level. The eggs might be too salty if you keep them longer than 3 weeks.

    I just tried your recipe and unfortunately most of the eggs were not salty enough. One of it tasted fine. Perhaps there were not enough salt used. I did leave the duck eggs in the container for a month. Unfortunately I boiled all the eggs before cooking one to check. Not smart.

    I tried this and it didn't work.
    In fact, I tried it multiple times in a year and it didn't salt the eggs.
    The old way is just putting them in salt water.
    I wish you tried this before actually posting this on RUclips.........

      Thanks for the feedback. Sorry, it didn't turned out well for you. Btw, I do make them a few times in a year and they turned out perfect every time.I'm not sure what happened to yours..just make sure to coat the eggs with moist salt and keep in dark place at room temperature. Thanks.

      If you want to eat as it is...make your own, just brine it for 2 to 3 weeks, boiled, and taste slightly salty.

    I wonder who invented this.. Probably some drunk Chinese guy a few hundred years ago, knocked over his wine near eggs. The eggs rolled onto some salt and he forgot about them. A month later, when he got hungry and discovered a salted, egg, he boiled it and the rest is his story.

    The most costly homemade salted eggs tutorial I saw on RUclips so far. I think I stick with the saturated salt brine (using water & salt) for the eggs instead of this method. The waiting time & end result will the same anyway.

      No, the cost of the eggs aside, what I meant was that this recipe uses wine & salt, instead of WATER & salt (salt brine method),so it definitely be more costly than the regular salt brine method of making salted eggs i.e. wine v.s. water, which costs more, I don't think I need to elaborate. I've seen several tutorials use the salt brine method & the waiting time is the same.

      Avalon+ Ok, I got it! (IMHO, I think it's totally worth it, the cooking wine is
      inexpensive, a bottle ard CAD1.80 to 2.40. You'll need less than 1/3
      cup, which cost ard 30 cents here.) If you don't use cooking wine in your cooking, perhaps the water & salt brine works better for you. It'll be a waste of $$$)

      Yes, the actual amount of cooking wine necessary for the recipe is minuscule. - costs virtually nothing and tastes a lot better than brine - nice recipe, thanks

      You are incorrect with your comment on how this method, using cooking wine, is too expensive. Obviously you have not been in a Asian supermarket recently. This comment to you, check your facts first before commenting so in the future you don't have people correcting you and you feel foolish. It's cooking wine not some vintage wine!!!!
