- Salted duck eggs are best served as a side dish with Congee or rice porridge. The rich yolks are often used in Moon cakes. It can be used to cook with vegetables, seafood, or meat. It's rather easy to make salted the eggs at home, and they taste great too.

I’m learning to make these cause my mom and I love them and she grew up eating them in the Philippines. She’ll be very happy ones we master it
I really fell bad for some people who dont know how to eat Salted eggs. They are fuckin heaven on earth. So freakin GOOD.
I made some 3 weeks ago and my son loved it! It's not salty like the brined ones. I'm making another dozen now. Thank you for this video.
That is awesome!
my grandma used to make these, we would share one as a side dish with steamed rice and veggies
Miri Y. You can use any Chinese cooking wine. I used Shaoxing rice wine in this recipe.
+Flavours Of Asia hey how do you get a dry texture for hard boiled ones? some of these eggs i buy at the supermarket are shiny, soft and wet after boiling. but in restaurants they're dry and hard. how do i achieve a dry and hard texture?
My dad once did a fried egg out of a salted duck egg... so good.
Oh, I must try that. Thanks for the info :-)
Very interesting. Can this technique be used with chicken eggs?
EZGlutenFree Duck egg works well but not too sure about chicken eggs though.
no problems at all,i love this egg ,very famous in china
Love them, so good every single time. Just a question, where can we buy the actual unsalted duck eggs. I know where to by the salted ones but not the unsalted ones.
Thanks,
Gabriel!
Thanks for the comment. As for the duck eggs, over here in Vancouver, usually above the chicken eggs..either Wholefoods or Asian grocers.
I thou duck egg is common egg
I was wrong there
In rural areas you often buy them from wherever you see a cardboard sign at the side of the road saying 'duck eggs'. =P
Often a good way to get cheap and really nice ones, at least.
I.I.I WANT TO EAT TRUNG MOUI/SALTED EGG RIGHT NOW!
Hi. May I know if table salt or iodised salt is okay for this? Thank you.
rabbit98961 Yes, you can use either fine table or iodized salt.
Thank you for this video! What track did you use for the background music?
Reclamation by Silent Partner (free RUclips music)
@@Seasaltwithfood Thank you so much for your response!
Hi! Love your video on this...my question is should the eggs be in room temp before I start the process or does it matter?
Thanks. Yes, preferably room temperature.
Thanks! Will try it this weekend!
Ok lng ba na nilagay sa ref ang salted egg.
Thank you so much.
Hi, how do you store your eggs after 3 weeks? Do you need to rinse them before storing?
In the fridge, as it is.
I've tried the wide jar with salted water inside and closed lid procedure and it works well with chicken eggs.
Thanks for the info :-)
How should they be stored? How long can i keep them? Thanks for the great video! I made them a few weeks ago, and am boiling them right now :-D
Sorry for the late reply. Store in the fridge once you're satisfy with the saltiness. Can keep a long time, but I usually used them in 2 months. Hope it turn out well for you. :-)
Thank you! I tried one, and it tastes perfect!
Wonderful!
Instead using wine can i use water ?
Yes
I like how you cut the boiled egg. My grandmother tought me that's proper way to eat a boiled salted egg.
Thanks for the compliments :-)
what kinda wine? the shaoxing?
Yes!
Instead of the plastic container, can you keep the salted eggs in a pot ?
Yes, any container, glass, or even pot.
What is Chinese cooking wine?

Can we make this with chicken eggs instead? Thanks!
Hi, since I don't consume wine/alcohol, can I use something else, like Apple vinegar or something? I've no idea...Thanks in advance.
+Reviewer Line Just use water instead of wine.
ok. thanks again ^____^
Can i substitute the wine with others? Maybe vinegar or lemon juice
Desirdead No, any cooking wine will do.
i cant use or consume alcohol..can i just dip the eggs in plain water?
Alil Daning I supposed so. If not the salt won't adhere to the egg.
Alil Daning you can use plain water with salt in a big open wide jar then place the eggs inside. Close the lid and keep up to 3 weeks same result 😄
Carina Tus I've done a little experiment a few weeks ago and it turned out ok. I submerged the eggs in water in a container barely covering the eggs and put tons of sea salt in it :D
Alil Daning 👍😊 also I do to the eggs after long period of waiting (hahaha) boiled it then when its done cooled it for a while and colored it by food color! 😄😄
Pork grind than
Do you leave it for 3 weeks at room temp or the fridge? Or does it matter 🤔
cool dark place and room temp
My favorite! 😋
The eggs are cooked deliciously.❤👍
Thank you 😋
Hi... Instead of using the zip lock plastic bag to put the eggs, is there anything else can be used which is not made from plastic? 🤔
Do they marinate in the refrigerator for the 3 to 4 weeks?
No, store in a dark and cool place..like basement, underneath stairs, etc
I don’t want to use wine what can I use instead please
The alcohol is to clean the egg, idk if you can use something else
Thank you❤
Would using kosher salt work?
+Wendi Zhang I'm sure it's okay to use kosher salt.
Thank you! Will report back in 3-4 weeks how it went :)
@@WendiZhangx I think you may have left them in the salt for too long. ;)
Hi. Thanks for the recipe. I noticed from your video the salted eggs are wet after 3 weeks. How do we store them if we are not using all of them at once?
Margaret Wong If you continue to leave them in the bag, then they will become saltier by the day. Once you have your desired saltiness of the egg, rinsed off the salt and store them in the fridge.
Thank you!
I have 2 questions,
Are the eggs left for 3 weeks in a fridge?
Also can this be done with chicken eggs?
1. No, at room temp, somewhere dark. 2. Yes, you can use chicken eggs.
Don't put in freg just stay in room temperaturely . Chicken it's ok
Tks for the method. Can I use coarse salt instead?
+Jen Tan Not to coarse, it won't adhere to the eggs.
I love salt and I love eggs💜
I love salted duck egg as part of my home cosine. It costs A$1.50 each in Sydney. Often, what I bought was disappointing. Thanks for your video
You're most welcome. Hope they turn out well for you.
Thank you. I am developing an entrepreneur program for non-English speaking and illiterate rural farmers and petty traders to get out from the vicious cycle of poverty. May I ask if you have any video on how to 1. 2.Preserve vegetables, hatch fish eggs into fish fries and 3. canning. No obligation. But appreciate if you could help on free will basis. Cheers
That's a good course & programs, unfortunately I don't have any of those videos you mentioned..Well, if I come across a good video, I'll share with you. Thanks.
You forgot to say at the beginning of the video, if the Egg is raw or cooked?
Can I pour in the remaining salt into the bag? Dont want to waste it. Will that work?
As long the salt are damp. Thanks.
Flavours Of Asia, as long as salt not damp or damp? Thank you so much for actually replying me.
damp.
I keep the remaining salt, for future use, like rubbing salt to chicken or other meat to remove the smell..,etc.
yung iba naka babad sa tubig na may asin yung iba may putik... ano mas OK may putik or wala?
Hi, what kind of wine is the cooking wine supposed to be? Rice wine? Or something else? Thank you!
Any wine will do. The point is to use acid in the wine (you can also use vinegar instead) to thinner the shell so salt can get into the egg easily.
AMAZIN
Awesome recipe
What is the replacement for the chinese wine? I don't keep any liquor in my house.tq.
Megat Entombed Just use water instead of cooking wine.
+Megat Entombed You can use most any vinegar( Apple cider, balsamic or rice vinegar)
do you boil the eggs? your ingredients just list duck eggs
I have learn more here, thks for the video
Maelynda De Jesus You're welcome.
first time boutht chine salted duck egg. wanted to fry ( like regular chicken eggs.) not work out...went to the garbage.. tryed to boil...after cuted and tried to eat they very salty........ what is that eggs for?
Salted egg is very salty...if hard-boiled have it with rice congee, as a side dish..use the yolk for making Chinese pastry, add to minced meat for steaming etc.
mooncakes
I hard boil, chop the egg up and mix with tomatoes. Great side dish with deep fried fish
Mix it with diced tomatoes and some sliced onions. Eat it with rice, that's how we do it in the Philippines :)
Wow this is look good
Danupa Chairat Thanks.
WoW.......awesome magic trick, cover with lid then..tadaaaa...turn into salty egg, cool.. :) :P shouldn't be too hard to learn :)
Must it be duck eggs? Is it as good if done with chicken eggs?
Salted egg usually made with duck eggs. So, I'm not sure how good they taste with chicken egg. I think it should work but maybe the yolk is not as rich as compare to the former. Thanks.

How long can I preserved the eggs, does it has to be three weeks?
Megan Smith Yes, 3 weeks is perfect. I've tried 2 1/2 weeks, the egg white is salty but not the yolk.
Ok TY! can I leave it longer then three weeks?
Megan Smith I would recommend you to boil an egg, & taste yr preferred saltiness level. The eggs might be too salty if you keep them longer than 3 weeks.
I just tried your recipe and unfortunately most of the eggs were not salty enough. One of it tasted fine. Perhaps there were not enough salt used. I did leave the duck eggs in the container for a month. Unfortunately I boiled all the eggs before cooking one to check. Not smart.
I really like the music
I tried the salt curing yolks method and it's a pain. This looks way easier
Can you use normal chicken eggs?
+Danny Phan You can try, some people have good result with the chicken eggs.
I tried, & it taste good too😋
I don't have chinese cooking wine at home, is it OK to use Vodka? what is the % alcohol volume in Chinese cooking wine? thanks.
I read that you can use whiskey as an alternative
I tried this and it didn't work.
In fact, I tried it multiple times in a year and it didn't salt the eggs.
The old way is just putting them in salt water.
I wish you tried this before actually posting this on RUclips.........
Thanks for the feedback. Sorry, it didn't turned out well for you. Btw, I do make them a few times in a year and they turned out perfect every time.I'm not sure what happened to yours..just make sure to coat the eggs with moist salt and keep in dark place at room temperature. Thanks.
yeah, this is a way to make salted duck eggs, but not my grandma's flavor, nobody can make it.
thank you.
Thanks.
Suan Lin Yong You're most welcome.
can we use table salt instead of sea salt?
can you help please. I don't know what to do eith them how to cook and how to eat.
If you want to eat as it is...make your own, just brine it for 2 to 3 weeks, boiled, and taste slightly salty.
Flavours Of Asia paano mag precerve asolted egg, sample isang three
Awesome
Thanks.
You rock
I wonder who invented this.. Probably some drunk Chinese guy a few hundred years ago, knocked over his wine near eggs. The eggs rolled onto some salt and he forgot about them. A month later, when he got hungry and discovered a salted, egg, he boiled it and the rest is his story.
thanks
You're welcome.
No chicken eggs?
i don't know what to do with them...Will go to the garbade..
Kalo gw bikin telor asin bebek pake abu gosok
The most costly homemade salted eggs tutorial I saw on RUclips so far. I think I stick with the saturated salt brine (using water & salt) for the eggs instead of this method. The waiting time & end result will the same anyway.
Avalon+ Really? It must be the duck eggs. Otherwise, cooking wine and salt does not cost much. Anyway, thanks for the comment.
No, the cost of the eggs aside, what I meant was that this recipe uses wine & salt, instead of WATER & salt (salt brine method),so it definitely be more costly than the regular salt brine method of making salted eggs i.e. wine v.s. water, which costs more, I don't think I need to elaborate. I've seen several tutorials use the salt brine method & the waiting time is the same.
Avalon+ Ok, I got it! (IMHO, I think it's totally worth it, the cooking wine is
inexpensive, a bottle ard CAD1.80 to 2.40. You'll need less than 1/3
cup, which cost ard 30 cents here.) If you don't use cooking wine in your cooking, perhaps the water & salt brine works better for you. It'll be a waste of $$$)
Yes, the actual amount of cooking wine necessary for the recipe is minuscule. - costs virtually nothing and tastes a lot better than brine - nice recipe, thanks
You are incorrect with your comment on how this method, using cooking wine, is too expensive. Obviously you have not been in a Asian supermarket recently. This comment to you, check your facts first before commenting so in the future you don't have people correcting you and you feel foolish. It's cooking wine not some vintage wine!!!!
i would just crack the eggs into glass and drink it,no need for coocking and destroying food!!
Dumbo.
Then eat all your food raw dont cooked as it destroyed the food as u said. Wat an idiot
soo good
Thanks.
