1.5lbs ground beef . 85-15 (lean) or 75-25 to taste .5 lbs ground lamb 2 yellow onions ground 1 tsp salt 1 tsp pepper 1/8 tsp garlic powder 1 tsp sumak 1. grind onion and drain all onion water 2. combine beef and lamb and onion in a bowl 3. add salt and pepper and garlic powder 4. add sumac into the mix 5. mix throughly 6. wet your hand in warm water and grab meat and place on skewer
How long do you mix it for? I heard that if you don't mix it long enough, it will also not stick to the skewer. Lastly how long do you drain the water out of the onion?
@@sadjaz a few minutes of mixing is enough as long as all the parts are sticking together nicely when you make it into a ball...for the onion, just push down the onion with the back of your hand a few times to get any remaining water out of it, you don't have to wait. I just set it aside in a drainer until I'm ready to mix it in.
@@sadjaz I just made it this week, and I mixed it for a few minutes, however I did double the ingredients since we wanted leftovers. The onion didn't drain as well as I would have liked, and I may leave it out over night next time. If i worked the meat well on the skewer is stuck pretty well. But it did break apart on a few. However they were all delicious!!!! Thanks for the recipe.
Hello from Russia! Thank you for video. We in Russia adding 150 gramms chiken breast for 1kg to beef. It makes your grounded beef more steaky like a glue. And chiken prevents beef from shrinking, this is why it never falling from squwers.
My husband of 28 years taught me to make delicious Persian food. Lost him to a heart attack in 2012. I enjoyed watching your video. I always made them in the oven under the broiler. Thank you for tips, going to try it on grill.
Aloha Yousef, Greetings from Maui, Hawai'i. My husband is Persian from Iran and we both loved watching your show. His dad had a Persian restaurant in Hollywood, CA from 1974-1978 named Dinah's and he misses Persian food. Unfortunately there aren't any Persian restaurants here on Maui. Thank you for doing your show. We loved it and will be watching for you.
I made this for a family get-together last night, after practicing a few times at home. Everyone loved it! Thanks for helping me look like I know what I'm doing!
just subscribed. can't wait to see the future of this channel!! i grew up in a muslim neighborhood, just next to a mosque, and now that i moved away i've been wanting to cook all the food i was used to eating around there. great stuff!
I am very excited to try this recipe, and to continue watching as you put out new videos. Keep up the good work, your passion for cooking and love of Persian cuisine really shows.
Yousef: Thanks so much for this video! I made a 4 lb batch of koobideh kabobs for friends tonight and your approach really helped. I ended up with 2 lbs of beef (15%) and 2 lbs of lamb along with the two ground yellow onions, sumac, garlic powder, salt, pepper and I added a little cinnamon and onion powder. I've tried koobideh in the past and have always had trouble with the meat falling off the skewers (I also have the 1" wide ones), but your trick of dipping your hand in warm water after putting the ball of meat onto the skewer made all the difference. It seemed to cause the meat to act as more of an emulsion and after building up 8 skewers, I put them into a chest freezer to rest before throwing on the grill. They turned out really tender and juicy and were a big hit.
I lived in Iran in the 70s. My wife is Baluchi. I lived in the rest of the Middle East most of my life. I cook food from everywhere but love to cook Iranian food and especially eat Iranian food. We cook everything making various types of nan and mast from scratch. Of course we grow all of our own herbs to make the food real. Now if we can just get meat from Iran we would be very happy. Thank you for your videos we love them.
Have just discovered you. I am from Australia and my wife is Persian. I cant wait to surprise her with all of your wonderful dishes when i cook for her following your amazing methods. Merci!
Love this video & subscribed. I love how you go straight to the point in clear details!! I hate when other RUclips cooking have annoying intros or music, it’s very annoying. This is the best video!!! Thank you so much. We love you & your new channel. Excited to see more
My dad was Iranian, and I grew up on fan duty for the coal barbacue. He used to make the best kebab, and watching your video has brought back so many good memories. Thank you. ps. Its delicious
Thank you for sharing your story. Very impressive at 12 years old to learn how to cook for your dad. These days, children don’t know how to put their dirty dishes in the dishwasher. I love Persian foods and beef or chicken kabob koobideh are my most favorite. I love many different dishes from your country, i love the hard rice with my kabob. Thank you for sharing your love of cooking. Your kabob looks so yummy. Others show you have to chill the meat before and fussing about meat falling off. Yours looks so good without any fuss
Thank you so much. Finally someone really really helped me with a detailed recipe. I am of Croatian decent and we make cevapi which is similar! Again thank you and may God bless you and your family!🙏 I just liked and subscribed.
Looks so good, I will attempt to cook it myself. I love middle eastern food it is so delicious, shot out to my good friend Abdullah aka BIG KRIT for introducing me to this food!
JUST like home. My dad used to make koobideh with rice and onion all the time. Used to put the kabob directly onto the lavash as it came off the grill. The bread would get soaked in the meat juices and it would taste so good!! I'm gonna have to try making this at home for my wife and kids. Never could get the meat to stay on the skewers though. I will try this method and hopefully it will work. Thanks for posting this!
Great recipe!!!! I love this kind of rice and NEVER have the opportunity to learn how to cook it, thank you for sharing. I subscribed to your channel already
The little tips you add such as turning the kabob frequently when you first place it on the grill to prevent the meat from dropping is invaluable. Wouldn’t have known that!
Thank you very much for this video, I have been trying to make koobideh for a long time and I always had issues keeping it on the skewers, your advice was perfect, merci
I've been looking for a good recipe for koobideh kabobs and I think this is the one I'm going to try. Your care while making your food and the presentation at the end are so nice. Thank you for sharing!
It looks delicious. I enjoy it here in LA where we have Persian restaurants. Basmati rice cooked and steamed is truly remarkable. Very pleasant and helpful video. I no longer cook the meal now that I can buy it in the mall. Very, very delicious food.
Yes i really enjoyed your style of cooking very simple and understandable, actually i will follow your recipe to cook rice, we have best basmati rice in our country but i will boil rice with your style. As far as recipe of Kabab is concerned i will add 20% fat anf green chillies, fresh ginger and garlic.
Tried this delicious recipe with Chicken mince. And it turned out so delicious 😋 next time will try with lamb and beef InshaAllah. Thanks for this amazing recipe. My husband and me loves Irani dishes, coz it is not at all spicy.
You’re blend is great, meat is great. It would be restaurant quality with the same ingredients, process but a bigger flat top charcoal grill for the skewers and 1” wide skewers for the Adana kebab. Also maybe cook them just a tad bit longer too. Your final plating was amazing. Very balanced and done well. I don’t usually sub to channels this small but I’d love to watch more abi. Afiyet olsun!
I've always failed to make Kebab because I didn't know that I've to drain the onion's juice. Thank you for teaching me how to make this wonderful Persian Kebab. I'll make it for my family. Please pray for me! 😂 Thanks chief Yusef, you're a life saver, and speaking English. ❤😎
Love that kind of kebab with authentic rice. My friends in Teheran are cooking the rice a bit different. They put bread underneeth the rice when steeming and put a towel between the ot and the cover. Btw, fellow readers, you can get sumac at most mid eastern groceries. It is sold as a red coarse powder. It is tasty tart/lemony accompaniment on rice.
Hi Robert, thank you for the kind words. I will move Bagali Polo up the list, appreciate the request.
