    Ingredients:
    2 bunches of fresh amaranth greens (chaulai)
    2 tablespoons cooking oil (such as mustard oil or vegetable oil)
    1 teaspoon cumin seeds
    2-3 green chilies, finely chopped (adjust to taste)
    1 medium onion, finely chopped
    2-3 garlic cloves, minced
    1-inch piece of ginger, finely chopped
    1 teaspoon turmeric powder
    1 teaspoon coriander powder
    Salt to taste
    Freshly ground black pepper (optional)
    Lemon wedges for serving (optional)
    Instructions:
    Preparation:
    Wash the amaranth greens thoroughly under running water to remove any dirt or impurities. Drain and chop the greens, separating the leaves from the tender stems.
    Cooking the Sabji:
    Heat oil in a large pan or kadhai over medium heat.
    Add cumin seeds and allow them to splutter.
    Add finely chopped green chilies, minced garlic, and chopped ginger. Sauté for a minute until fragrant.
    Add finely chopped onion and sauté until the onion turns translucent and golden brown.
    Adding Spices:
    Reduce the heat to low and add turmeric powder and coriander powder. Mix well to coat the onions with the spices.
    Cooking Amaranth Greens:
    Add the chopped amaranth greens to the pan. Mix everything together.
    Increase the heat to medium and stir-fry the greens for 4-5 minutes or until they wilt down and cook.
    Season with salt to taste and a pinch of freshly ground black pepper if desired. Mix well.
    Final Touch:
    Continue cooking for another 2-3 minutes, stirring occasionally, until the amaranth greens are cooked to your desired consistency.
    Taste and adjust seasoning if needed.
    Serving:
    Remove the pan from the heat. Transfer the chaulai ka sabji to a serving dish.
    Serve hot with roti or steamed rice.
    Squeeze fresh lemon juice over the sabji just before serving for a tangy kick (optional).
    Tips:
    You can add other vegetables like chopped tomatoes or potatoes to this dish for variation.
    Adjust the quantity of green chilies according to your spice preference.
