    Ingredients:
    1 cup all-purpose flour (maida)
    1/4 cup semolina (sooji)
    1/2 cup sugar
    1 ripe banana, mashed
    1 cup milk
    A pinch of saffron strands (optional)
    1/4 teaspoon cardamom powder
    Chopped nuts (cashews, almonds, pistachios) for garnish
    Ghee or oil for frying
    Instructions:
    In a mixing bowl, combine all-purpose flour, semolina, and sugar. Mix well.
    Add mashed banana to the dry ingredients. Mash it thoroughly until well combined.
    Slowly pour in milk while whisking continuously to form a smooth batter. Make sure there are no lumps.
    If using saffron, soak a pinch of saffron strands in 1 tablespoon of warm milk for a few minutes. Then add it to the batter along with cardamom powder. Mix well.
    Let the batter rest for about 15-20 minutes. This allows the semolina to swell up and the flavors to meld together.
    Heat ghee or oil in a shallow frying pan over medium heat.
    Once the ghee/oil is hot, pour a ladleful of batter into the pan to form small pancakes. You can adjust the size according to your preference.
    Fry the malpuas until they turn golden brown and crispy on both sides. Make sure to cook them on medium heat to ensure they cook through without burning.
    Once done, remove the malpuas from the pan and drain excess oil/ghee by placing them on a paper towel.
    Garnish the malpuas with chopped nuts while they're still warm.
    Serve the delicious malpuas hot or at room temperature. They can be enjoyed on their own or with a drizzle of warm syrup, rabri (thickened sweetened milk), or even a dollop of ice cream.
