    Ingredients:
    1 cup mixed lentils (such as masoor dal, moong dal, and chana dal)
    1 onion, finely chopped
    2-3 green chilies, finely chopped
    1 inch piece of ginger, grated
    1/2 cup fresh coriander leaves, chopped
    1 teaspoon cumin seeds
    1/2 teaspoon turmeric powder
    1 teaspoon red chili powder (adjust to taste)
    Salt to taste
    Oil for deep frying
    Instructions:
    Preparation of Lentils:
    Rinse the mixed lentils thoroughly and soak them in water for about 4-6 hours or overnight.
    After soaking, drain the water and grind the lentils into a coarse paste without adding too much water. The texture should be slightly grainy.
    Mixing the Pakoda Batter:
    In a large mixing bowl, combine the ground lentils with chopped onion, green chilies, grated ginger, fresh coriander leaves, cumin seeds, turmeric powder, red chili powder, and salt.
    Mix everything together well until evenly combined. The mixture should be thick enough to hold its shape when dropped into hot oil.
    Frying the Pakodas:
    Heat oil in a deep frying pan or kadhai over medium-high heat.
    Once the oil is hot, take small portions of the lentil mixture and carefully drop them into the hot oil using a spoon or your hands.
    Fry the pakodas in batches, making sure not to overcrowd the pan. Fry until they turn golden brown and crispy on all sides, turning occasionally for even cooking.
    Remove the pakodas from the oil using a slotted spoon and place them on a plate lined with paper towels to absorb excess oil.
    Serve and Enjoy:
    Your Mixed Lentil Pakodas are now ready to be served hot and crispy! They pair perfectly with mint chutney, tamarind chutney, or a cup of hot masala chai.
    Garnish with additional fresh coriander leaves and serve them as a delightful appetizer or snack.
