    In the Army my buddy who was Korean had his family send him Kimchi from home. He would cook it and without exaggerating, it smelled the whole barracks up, all three floors smelled like Kimchi every weekend. It was hilarious. And then we ate it. Now this Indiana farm boy has been eating it for 20 years. Also, I am eating it for lunch at this moment, though it does not pair well with my other half of lunch, Mexican food.

    I love kimchi. I’ve discovered what fresh kimchi tastes like and I cannot go back to old kimchi. Lol I like to cook the old kimchi but the fresh kimchi is so good with rice

    I’m Hispanic. A friend took me to a Korean restaurant in Houston. We did not go to a nice restaurant. We went to a restaurant in a old shopping center. I ordered my plate. Then the waitress came out with all the side dishes. The waitress could barely speak English. I was the only non Asian person their. I loved their side dishes. The kimchi was so good and spicy. But they had some pickled cucumbers that I fell in love with. Now it’s one of my favorite restaurants. The bad part. I don’t tell anyone about it. Because it’s a old school restaurant for the local Koreans. I’m sure they would want it to stay mostly Korean customers. Now they know me and they like me cause I eat a lot. The owners enjoy watching me eat all the food I order.

      Do you remember where in houston? I live here in houston and the only korean restaurant i go to is in Austin TX

      루루시퍼 it’s on Bissonnet before you get to Hillcroft. Carefull it’s easy to miss. It’s across the street from the park. It’s an old shopping center. Their on the corner.

      Anni C yes you can. Some Koreans use that style cabbage if they can’t get the Asian style cabbage. Just don’t use the the core. But if you go to a Korean mart. They have everything you will need.

    I'm an Australian bloke but I love kimchi! I first tasted it at a Korean restaurant where I had kimchi and paper thin cut porkbelly marinated in bulgogi and then fried and from there I was addicted. I don't eat it everyday like most Koreans however if I don't have it I start building up a craving for it and when I think about it my mouth starts to water and drool so I have to have it then after I have it I am satisfied for a month then it starts building again. Some people just hate it, they hate the smell, the look, the taste, personally I think they don't know what they are talking about it's delicious !!!!

    Kimchi is so full of probiotics that it truly does keep Koreans in such good health. I can’t think of a time my parents were sick when we were kids. I also rarely got sick until I left for college and had to eat American meals instead. I really need to eat kimchi daily!

      yes it's very very healthy for you. please eat kimchi at every meal if you can. it will help your digestion and absorption of nutrients into your blood.

    i love kimchi healthy and fit nice..Kimchi, as pickled vegetables, has a similar effect but is much more common in Korean culture. ... In that way, it's "addictive." This is because kimchi does a great job making foods that are too greasy, flavorless, or otherwise unappetizing bearable to eat

    Served a year in Korea 193-1954. Seoul was just a battered town with streets torn up still by the fighting. I spent one day off in the Capitol but there were no food shops open so we just boarded the truck and went back to our camp. We did go to many villages where they had Kimchi but I never had or even tasted it. My buds convinced me it was fermented and not good to eat. I have since learned what I missed. Oh the opportunities we pass up when we are too young to think for ourselves....

    First tried (old style) kimchi in 1958 in South Korea while in the Marine Corps. Have loved it since. Here is one of my breakfast dishes using kimchi.
    -3 patties or links of good sausage browned
    -2 eggs fully cooked
    -Preferred quantity of kimchi slightly browned in skillet
    Lay sausage on plate
    Lay eggs over sausage
    Lay kimchi on top
    Dash of Tabasco sauce
    Enjoy!

    WOW! That field of napa cabbage is enormous! And the way it looks when the lady cuts the cabbage in half is so delicious! It's amazing that the restaurant has mini space for customers.

    This is precisely why I love the many nations, we all bring something to the table or LIFE. I tried Kimchi about 10 years ago & hadnt given any thought to making it until I saw the price of a pre-made Kimchi loaded in chemicals & thought to myself, this is ridiculous, so I went on a venture to learn how to make it. I recently made a batch I am proud of & the cost was way way less than a small jar of prepared Kimchi. When I figured the math adding in value & nutrition & mass amount, I chose to never buy Kimchi again & make my own now. The best part of this are the many variations of this ferment. The heat part of it I had to learn from trial & error & finally came to a nice balance of sweet tangy & heat. I dont think I am going to be too traditional in this, I found adding what is in season that I like alot makes a HUGE different in the sour & heat. I use standard rutabaga in mine & adding some fruit like a Pear or apple can really change the taste dramatically while adding further layers of fragrance & flavor so for me this is bonus but at the same time can be what destroys the original idea so its a toss up between Traditional vs new age Kimchi. I prefer a non meat version or Vegetarian because i can add this to any meat dish instead. I wonder how bitter melon would be in Kimchi. I like bitter melon a lot & am considering doing a very small portion to find out. Thank you for this video, it was most informative & entertaining :) Oh & I just ate a bowl of Ramen with a heaping amount if Kimchi. It was Exquisite :)

      Gizle Giswa no doubt it is available in every Korean grocery store, but every Asian grocery store in my city has it.
      Even in the Vietnamese & Japanese grocery stores.

    I'm in a raw diet and I include kinchi in my diet, I fall in love of the flavor of
    the kinchi that I do mine own Kimchi. Inclusive I went to korian store and bought the onggi crock to fermented.l became so addicted to the taste that I incorpotated in my diet.

    My best friend is Korean and she invites me to come over to their house and eat sometimes. This is their spread of food and more. It's delicious! That's where I've started eating spicy foods.

    I'm new to Korean foods however I just can't get enough Kimchi . On rice , In any soup , Pair with rice noodles ,Even just a snack by it's self : ) If your new to Kimchi I highly recommend it , Also I found some brands to have more spice which I like .

    Help. There was a disease (?) that swept Asia within the last 25 years...South Korea avoided much of the impact because -- as chemists and scientists claimed -- of the healthy ingredients of kimchi. My first introduction to one of my all-time favorite foods was when I was attached to the ROK Tiger Div. in the Vietnam War. Korean soldiers actually had kimchi C-rations and if we could get some sticky rice flown in on a resupply chopper, it was quite the exotic jungle dining. I will swear to another power of kimchi: the best insect repellent, far better than military issue. The spicy character of the kimchi kept the ants and mosquitos away as we sweated which meant, of course, I kept a constant flow of kimchi in my system...which was no problem for this kimchi fan.

    I like how they talk to the white lady in their language. Today this Chinese lady was speaking to me in her language. And then when she realize I don’t get what she says, she picked up a bread and showed me the expiry date. Then she expressed with her hand as if we say now. So I got what she wanted to know and told her the date. She just wanted to know what was the date. I told her with my finger. I’m surprised she knows how to count. So humble so beautiful, bless her heart she also went on to speaking to me as if I understood what she was saying. I just made her happy and listen to her and nodded

    I would love to try kimchi, but I have a severe allergy to shell fish, like shrimp and oysters. I also have digestive issues. I can't have any foods that are the least bit spicy. I can't have salt, or pepper in my food. Any ideas on how I could make kimchi and actually get to eat it?

    Wow Kimchi tastes so good, it's AWESOME DELICIOUS! Growing up as I did with sauerkraut, it brings to mind that dish but with tangy spices included! There are all different kinds and spice/heat levels. It is actually tangy AND spicy. The main place I get it is a Korean Market. They make It right there, and have several varieties right there in a fridge. But if I can't get there during their business hours, some of the larger groceries also carry larger brands. KEEP THE LID LOOSE when you put it in the refrigerator.

    Im filipino . I never thought that I would fall in love with another dish, other than my mom's humba recipe! Kimchi is something new to me, but it's a big influence to my overall diet. it's a 360° turn from a fatty, unhealthy ME!

    I love kimchi....kamsahamida korean people
