Nothing like field dressing a deer when it is 20 degrees! That was last night in Southern Ohio. I shot a big doe at last light on my daughters farm. She and I did the process in 10-15 minutes. I am 74, been doing this all my life. This is a great video for learning.
The coldest one I’ve ever had was -34, it was a 245 lb field dressed 10 pointer i shot tracking on snow after catching up to him with three does. Im in the northernmost part of Maine and it gets pretty brutal here in November, especially towards the end of the month. Needless to say, putting my hands in that warm chest cavity felt good 😂
Did one 20 plus years ago. Since Ive certified myself in the automotive world via RUclips why not recertify myself with dressing a deer. You my friend I was happy to find. For some, this may be simple as you you grew in this fantastic environment. But I never hunted and never dress my kill. This was an awesome simple method. Very instructive and calm demeanor. I learned a lot. I wanted to see the cutting too to see how you cut the nice tenderloins and parts. Thank you for this and keep it up.
I got nervous for your fingers with the hatchet on the sternum part but you're a pro! And when I noticed the sticks holding the legs open through the ligaments.....Mind Blown!! Never thougt of that in all my life of field dressing deer! Thanks for the awesome video.
Nicely done video! I loved the sticks through the tendons was a very effective way of keeping the deer's legs fixed. But the axe work would have been better with a saw, which you did mention could be used.

Wonderful video! Precise and to-the-point! That's always been the hardest part of butchering deer for us in my family is the cursed butt and bladder gear for bucks. The way I always saw it done was a hack saw to split the pelvoce and pray you didn't hit the colin. Then through sharp bones you gotta get a hold of it and carefully scrape around until it comes out. I got my dad a Butt-Out tool for Christmas one year and it was a game changer! This video is a complete overhaul and I am super grateful! Greetings from Saskatchewan! 😁
Great video! The only thing I do different is I don’t split the pelvis, which helps keep the cavity clean while dragging through the woods and limits the amount of waste from the hind quarters. I split every one with a hatchet or saw for about 20 years, but stopped doing it about 8-10 years ago and never looked back.
Can always learn something new. Use a butt-out myself, with a zip tie, but opening the sternum with a bone saw has saved me much time and headache. Definitely will add the stick trick to my routine! Helps save the lower back.

I do everything pretty much the same except the pelvis. I don’t cut around the butt at all. I use a bone saw on the pelvis and pull the guts south through the channel between the hams then pull the and the colon peels out
Excellent instructional video. i always tell a young hunter when dressed properly this process should not look like a blood bath massacre. You had maybe less than a pint of blood in the cavity when finished. I use a bone saw for sternum and pelvis. Thanks

May I ask, is there a reason why we can't free up the Colon right before pulling everything out? Seems less sanitary to work around the butt at the beginning. Could be a dumb question, so I'm sorry if this is common knowledge.

This beats Steve Rinella's tutorial. Choppin that sternum is a bold move when you've got the guts right there but opening the chest cavity like that seems great to access the diaphragm rather than reaching in deep the way I've been doing it!

They usually fall into the canal and then I will pick them out or they will fall out when I pick the deer up to drain it. Never had an issue with them getting into the meat though.
Not much difference, as long as you free the colon the bladder will come out without issues. If the colon isn’t free the risk of it bursting is way higher.
Apparently you're better off starting the upper incision just where the ribs start as opposed to the sternum to preserve the brisket as much as possible. Aside from that great video especially loved how you put emphasis on completely detaching the colon, something people neglect a lot and it complicates things later.
It’s weather dependent but if it’s above 70 you got about 2 hours before it starts to turn. It it’s hot where you hunt I recommend getting game bags and quartering it in the woods/field. That will cool it down a lot faster.
Very well done man , now im gonna admit ive never gutted a deer without using a pair of " gutting gloves " it just keeps the mess down saves yoir sleeves alot of times if your in the woods and not near water you dont have a place to clean up your hands so definitely a pair of long rubber kitchen gloves really help
I would have cut the pelvic bone allowing for easy pass through and the meat to cool faster. Love the stick through the Achilles - Definitely using that idea
I always cut it at the end because I’m afraid to cut the rectum, but your right gotta cool the meat as quickly as possible. The sticks make things a lot easier, hope it works for you!
We quarter a lot of deer because we hunt deep on public land. We have drug some out that got a little bit on the hams before. Usually temperature control is more important to us because we are in the south.

Only question I have is how are you getting the vaginal track out. When you pulled everything out at the end was that one of the things you had to cut loose? Or were you hatching at it at the end?
Most of the time the deer release their bladders when they pass. On occasion, I have seen a full one and had to be careful taking it out. As for the genitalia, never had any issues just cutting it away. A bone saw works well for the pelvis and chest bone. Never tried pruners but I imagine they would work just fine.
Now the big question which organs can you save to eat? I'm assuming heart liver kidneys. Also can you use the intestines as sausage casing? How would I go about cleaning the stomach to idk, make a bag? Can I use the lungs to make venison haggis? These are all legit questions I'd like answers to when your able

Thanks for the feedback! I think the best thing to do is start small. Go hunt some rabbits and squirrels, clean em up and eat em. Then work your way up to the bigger stuff, that’s what I did. A lot of does will have milk left over from “fawning” the spring before, it’s fairly common. I did not see any other deer with her on this hunt.

Really interesting fact about does, didn't know they still had some milk after being done with their fawns. I need to learn more about this stuff. Could you recommend some books on hunting and processing the kills? Videos are great but I would like to also have a written material with pictures ideally that I can revisit since I won't be having access to the internet once I move and it's good to have it just in case anyway.
Another way to open the chest up just in case you forget a saw or axe is with your knife cutting right next to the sternum not recommended though because it does dull your knife
Freeing the colon is my biggest issue. I dont free it enough and struggle once the guts are laying out the poop shoot is still connected and causes all kinds of problems especially in the dark lol

You could do that cut first, yes! I just wouldn’t attempt to pull anything out until the vent is freed up.

You’re welcome! When I was younger I did not, but I also always had to go back and cut out the meat that the droppings touched.
Great video btw. Just curious do you get bone shards in the meat by using the Hatchet?

So when you start the anus just cut 360 degrees and then just let it go or pull it out right away
Just let it go, it will all come out when you pull the guts. As long as you cut all the way around it prior.

Not as long as you free the colon. If you don’t free the colon, you run the risk of a leak or burst when you pull out the guts.
In removing the genitalia you sever the urethra. That doesn’t risk a urine leakage?

So how do you skin it now since it's lighter and hollow, wouldn't it be more difficult to remove its coat now?
I have a video on that too, we always gut before we skin them. This way we don’t have to be as careful when skinning.

30-30 Hollow point, shot placement was upper neck.

Yes, I like to remove those first. They are called tarsal glands and I should have a video on how to do that here in a couple weeks.

We always eat the heart and I’m sure you can eat the liver. Past that I’m really not sure.

Could you recommend some books on hunting and processing the kills? Videos are great but I would like to also have a written material with pictures ideally that I can revisit since I won't be having access to the internet once I move and it's good to have it just in case anyway.

She was slightly bloated but It’s not unusual.
Another way to open the chest up just in case you forget a saw or axe is with your knife cutting right next to the sternum not recommended though because it does dull your knife

Why don’t you use a gut hook? That way you don’t get into the guts. I have used one for many years. Were the blood? Folding Bone saw works great.
Just never used one before. Try to keep my pack minimal.

Usually do it in the woods where I don’t have access to a truck or 4wheeler. We almost exclusively hunt public land.
Freeing the colon is my biggest issue. I dont free it enough and struggle once the guts are laying out the poop shoot is still connected and causes all kinds of problems especially in the dark lol

Like the sticks for the legs , A nice bone saw would be better and safer for the Pelvic and sternum, recommend the butt puller and wear gloves
