- Bigoli are a very particular pasta, the dough involves the use of wine and different eggs, although it is a fresh, this kind of pasta are made by extrusion, thanks to the use of a specific press (bipolaro). The original ones from Venice are served with sardines, while in Vicenza tradition calls for duck sauce. Andrea Accordi, executive chef of the Four Seasons in Bangkok, presents his version made of contamination, technical skills and great respect for his Venetian origins.

Agreed, I feel like the duck flavor should be the star of the show... parmigiano flavor can be overpowering
You know nothing about Italian ingredients. Parmigiano is not the one you find in the supermarket bags in your Country but it’s something different.
I think they know. I know too. But they're right. The dish will taste like "something with parmesan". The overcomplicated technique gets lost on this plate, I'd say. And the "crispy" skin??@@lusontr

I raised duck as a child, in 4-H. We kept them mostly for eggs.
My mom tried to cook duck a few times, but it always came out too greasy.
I wonder if I could be more successful, with this recipe?
Duck has a lot of fat, if you want it to not be as greasy youd have to cook it skin side down on a medium low heat for a long time to let the fat render out and then pour out the excess and save it for something like roasted potatoes
why start with ice in the broth?
1) thermal shock: make the broth absorbs more taste
2) makes the broth cleaner (less impurities) but only if you start it with ice, not if you add it while it's already warm

Per qualche motivo lo shock termico migliora l’estrazione dei liquidi
Da quel che so, partendo da una temperatura più bassa, si aumenta il tempo in cui vengono estratti i sapori dalla carne, quindi é per ottenere un sapore più intenso, é lo stesso principio per cui quando aggiungiamo l'acqua al brodo, deve essere sempre fredda

Buono, ma da Veneto che mangia spesso da Lovise a costabissara trovo alcune differenze, mancano le interiora che danno quel sapore particolare e sicuramente non c’è il miele ne il guanciale che non appartiene alla nostra tradizione

@@Bassfully per lavoro e per troppi anni ho girato mezza Italia, partivo da Bolzano e arrivavo in Umbria ed ero stanco di cambiare, però da Veneto amente della cucina il sapore delle interiora, specialmente dei fegatini non possono mancare

Madonna ma quando capirete che sti piatti vengono in un menù di molte portate e che alla fine esci a 4 zampe dai ristoranti stellati? Non puoi mangiarti 150g di pasta se tieni amouse buche, antipasto, primi, Secondi, pre Dessert, dessert......
Chi segue Italia Squisita dovrebbe a prescindere capire questa cosa!! La quantità è relativa... Qui c'è Arte!!! Italia Squisita ci fa entrare in cucine che normalmente non vedremo!

Why does it have the head? Do you flap the bill and talk in a funny voice in a macabre ventriloquist act? Just cut it off and have a correct presentation.
Because without head the entire duck would not be sealed any more during the preparation.
