One Pot Rice, Peas, Chicken & Meat | Savory Recipe using simple fresh ingredients

I am so excited to share this childhood favorite meal of mine. It’s a one pot rice and peas meal with protein of choice and I love lamb and chicken. You can just use one type of meat. This dish is packed with punches of flavors all cooked within one pot. That’s way less dishes for you, lol.
Main Ingredients
4 cups Jasmine rice (uncooked)
1 lb (2 1/3) cups Seasoning Black eye peas
1 cup Canola/ vegetable oil
4 Chicken thighs/ 1 Cornish hen
1 1/2 lb Beef/lamb cuts
Other ingredients
Seasoning (garlic, bell peppers, black pepper, spring onions, salt)
Bay leaves
Spring onions
1 Yellow onion (1/2 blended)
2 bulbs of tomatoes /1/2 cup diced tomatoes
Fresh Garlic
Green bell peppers
Ground Black pepper
Fresh chili pepper/ habanero to taste
Bullion
Salt to taste
Dark Soy sauce
Veggies (Optional)
1/2 cabbage cut into 2
Carrots

I'm confused.. chicken IS meat so why do you say chicken and meat? Lamb, beef, fowl, mutton and fish are all meat.
