Today I am making a classic Southern dish and one of my childhood favorites, Grits! We love it for Breakfast, Lunch, Dinner, even for a snack! This recipe is so smooth, creamy, full of flavor, and it just melts in your mouth! This will be the best Grits you ever put in your mouth; this will be your go to recipe and everyone will love and enjoy this!

2 cups water
1 1/4 cups evaporated milk
1 teaspoon salt
1 cup quick cooking grits
4 tablespoons (1/2 stick) unsalted butter, plus more for the top
In a medium saucepan over high heat, add the water and evaporated milk and bring to a boil. Then add in the salt and slowly whisk in the grits into the liquid so it won’t get lumpy, continue whisking until well combined. Bring the grits back to a boil, cover the pot and reduce the heat to low and cook for 30 minutes; stirring occasionally and add more water or milk if necessary. Turn off the heat and add in the butter and stir until well incorporated and the butter melts. Serve with more butter on top and feel free to add in some salt, pepper, sugar, or your favorite seasoning and enjoy!

I usually use regular milk but last time I made some I didn't have any so I ended up using evaporated milk.
I do grits in the microwave. I use just enough milk for the grits to soak in and the rest water. Set the timer for 20 minutes, stir frequently and add more water as needed.
I've been doing them in the microwave for years but just recently started using the milk. It takes the grits to another level and gives them a nice creamy texture. I like mine with butter, cheese, salt, pepper and parsley.

I've been eating grits since a young child (early 60's) born/raised in Mississippi. My Grand always cooked her's without measuring into boiling water in a heavy/thick pot and salt, on low heat to get them 'cooked down' until all water had cooked out. Then she'd add about half a can of evaporated milk and mix all together, put the lid back on with low heat for about 30 minutes. I cook mine the same way she did and it's a staple in my home to this day. I've been known to add raw eggs after the grits were done .... those eggs cooked within 2-3 minutes while I stirred them into the hot grits. I do this every now and then for a twist in taste. My kids and I like ours with bacon/eggs, salt and butter only, no sugar. Thanks for showing your way of cooking this fabulous southern meal a different way. YUMMY! Everyone has their own flavors/twist to their grits, the main thing is we all enjoy them in our special way. Eat em up America...they're good!!

Hey Ellen!! I love love grits!!! Here in California people don’t eat them🤷🏼♀️🤷🏼♀️. It’s crazy. Most people I know have never tried them! Yours looked super creamy and delicious with that melted butter!! Never thought to use evaporated milk!!

Those grits look great! The process is so similar to polenta. I like how you "rained in" the grits while stirring. I do that with polenta!
And yes, it wouldn't be an Ellen recipe without either evaporated milk or some sort of extract lol
