Soul Food Hog Maws & Chitterlings Recipe:
Boil Hog Maws in a pot of water for 25-30 mins
Once they cool off, remove fat as shown in video, and slice into small thin pieces.
Pull slimy clear fat from chitterlings, starting from the tip of the chitterlings. Afterwards, cut the chitterlings into small pieces (don't leave them big and long).
Chop up 1/2 green pepper, 1/2 red pepper, 1/2 white onion, 2 stalks of celery into small pieces
Place Hog Maws and Chitterlings into a big pot
Add chopped vegetables and 2-3 tsps of minced garlic.
Add 1/4 to 1/2 cup of apple cider vinegar and a small amount of black pepper
Fill pot with water 2 inches from the top
Cover with a top leaving a small crack on the side
Cook on high heat for 4 hours
Once Hog Maws & Chitterlings are tender add a small amount of Crushed red peppers, Hot sauce and salt to taste
It’s always interesting to me that when I go to videos of Asian people cooking and eating chitlins and EVERY part of animals, there are no hate comments against it, but anytime black people cook and eat it it’s suddenly “disgusting”, “slave food”, and “unclean”.
👏🏻👏🏻👏🏻👏🏻👏🏻👏🏻🤩
Naw asians get absolutely fried alive in the comments for eating literally anything that exists. Black folk get fried for the stuff we consider beneath than. Our forefathers had to eat this stuff to survive, not the case in today's time so when we see people catching "nostalgia" taste buds from generations past, you're getting called out on it everytime. 🤢
Everybody cooks chitterlings differently, however the most important part is that they are seriously clean. Looks good 😋
Bo. Im from North Carolina and I joined the navy bout 12years ago. This video reminds me of home. Its bout time I made me some chitlins! TY!
Phillyboy I had to search through many of your videos just to tell you this because a lot of your videos comments are disabled. But you recipe for green beans and potatoes is so damn good. I couldn't believe how good they are. I'm not a good cook but when I taste my green beans I called my family and told them they can't touch me today because my green beans are on point. Thankyou Phillyboy 😙😙😙😙
I'll take well-cleaned chitterlings (et al) over fast food restaurants any day!
OMG...this video is makin' my mouth water!!!
OMG...with a side of turnips greens, candied yams, coleslaw, and hot-water bread...and red-Koolaid (in a plastic Tupperware cup)...OMG!!!
Idk about the red koolaid for me... but definitely sweet tea with lemon!!!! Everything else is a go!! Yessss!!!!!!!!
A1 plate you talking about! 👊🏾💯
YEP! Make you wanna slap yo mama!
I was with you until the red koolaid lol 😂🙅♂️
I been using this recipe for years!! I wouldn’t have it no other way ❤ Thanks Philly Boy J.. ❤
Hey just some 411,the part you are calling fat is really the membrane, and that is the part that the waste travels and touches.
looks good but one thing to remember when cooking them is to reduce some of the fat by draining some of that fat juice off that collects at the top or you'll have a bowl full of grease.
OR... you could use a strainer spoon, so you still get the flavor and juice from the veggies :) Rice also would help cut the fat I imagine.
Excellent point- I always drain the fat that collects after boiling them for about 5 minutes. I hate a mouth full of grease.
I add the seasoning after boiling and draining them twice. It makes a huge difference in the grease factor.
Very true
@@brianamichelle9024 rice and red franks and tad a vinegar like my grandma taught me!!!
Years later.... I still watch him.... you've taught me alot... so I'm cold too!!!
I cooked these chittlins and they came out great. I tried to fix them once before like my mother use to, growing up but i messed them up. After I followed the way you cooked them. I am very impressed.
Cooked this last night, minus the hog maws. (Unable to find them in my area.). First time cooking and cleaning them. I did add potatoes to them, because that is how I’m use to eating them. Was a HUGE hit. I thank you so much. I will be cooking more of your recipes.
Eat with cornbread , greens, &sweet potatoes thats how Texans eat this with hot sauce on top, after they are done, thicker gravy. Lots of LUV from Houston Texas.
DEE R. Don’t forget the black eyed peas 😋
Yes lawd
Yes thats how we do it. H town in the house
@@aelyles1 🤮🦨💩
Mac n cheese, slaw are also good sides! I add jalapeños as a seasoning too.
Hey bruh, I like what you are doing here on your channel. Keep doing you. XOXO
+I Heart Recipes thank u beautiful
+I Heart Recipes I love the love you showed to PhillyBoyJay. I really enjoy the both of your channels
+brwn16eyes Me too! They're my top youtubers for recipes
I only seen his one RUclips channel. I haven't been on RUclips in a very long time & i just started getting back on RUclips recently & i bumped into this channel on accident.
I'm so DAMN proud of him. I hope youtube is hitting him with some nice checks & i hope he becomes even more successful. He should think about writing a cook book & selling it.
Excellent! Pbj Bomb!!!!!!!!!!!😍😍😍💜
“I used about 3 tablespoons of black pepper..”
*proceeds to pour in about a cup and a half of black pepper*
Lmao
A very nice video. I'm enjoying your channel especially because you're a man who's not afraid of the kitchen. Don't worry about the haters commenting about you not being thorough enough. Just too petty. It's clear that you and the lady cleaned them thoroughly. If they needed specifics they should just ask for another video. Some people have too much time on their hands to criticize without being paid.
Your recipes are an inspiration. Have cooked chitlins over the years - never have had hog maws. Seeing the way you prepared these, I think I need to try them if I can find them.
Great video! Growing up, my family made these for Christmas, Thanksgiving, New Years, you name it lol. I'm making them by myself for my roommates and needed some help. Thanks!
Brought me back to my great grandmother's cooking. Love your channel!
Used to come home from college and the house would be funky and I knew what time it was 😂 .....love me some chitlins and hawg malls 👍🏿
Making these are def a labor of love. I remember helping my mom clean chits, and it took HOURS! But the payoff is worth it. I don't remember my parents boiling the maws first before cleaning. That's a new one on me...
He cleaned everything before cutting and cooking.
its amazing how blks can take anything and ALWAYS MAKE SOMETHING FAB
That's WHAT WE DO....🤗
@2300 Slatt white folks eat them also, me and my baby girl love them.
@Trench Made This is Southern cooking. Yes its steeped in Black culture but its evolved into an inheritantly Southern cuisine, meaning just about ALL, black and white, from the South eat this type of food.
Us border brothers love of us some " Tacos de Tripas" which are basically fried chitlin' tacos. We also throw that in our soup called Menudo. If it's good it's good !
Thank you for doing this video, I know it was a lot of work, but so worth it! I love chitterlings. I think people sometimes forget that we all cook differently. For those of you that think this is slave food, If the slaves didn't have this food to eat, they would have starved. They made do with what they had to eat and did a great job in doing so.
+Tammy Brown You better school em Tammy!
😒 that's just an excuse to eat this unclean animal ass
Disgusting and unhealthy. And you people wonder why you're the highest with heart diseases and obesity
M Angel Exactly!!! They come into my doctor office damn near on deaths door and when I tell them to lay off the white salt, seafood and pork they get angry with me
layah2sexc Right, at least some people are starting to realize how unclean pork is. I didn't even know people still cook this junk. This is slave food, if slaves had a choice I'm pretty sure they wouldn't be eating this death trap.
Omg!! Thank you for showing us how to prepare and cook these. I will share your channel with friends. Thank you
I'm making some this week because of this video!
I ate some SHITLINGS today
+Jade Steele How were they? Who made them?
I'm in love... No one in my household eats chitterlings but me so, I never attempted to make them but now it's on and cracking. Thanks for the detailed video it's much appreciated. P. S. Miss. Tina, come by more often "J" used a real plate... Lol
Multiple chitterling eaters in one house is no good. One pot-one person.
No butter in mine, way too much fat already. They have much flavor with the onion, green pepper, garlic, and ESP. the chitterlings and the spices! They look delicious.
How long do you cook them
Celery adds great flavor
@@shenailedit5097 3 1/2 to 4 hours.
Pour some of the fat off in the beginning.
It ain’t soul food if the smoke detector ain’t beeping
😂😂😂😂😂😂😂
U already know gotta keep the door wide open for hours😂
Better yet, cook it outside !!
Dr Relish I actually went around checking my detectors, they got me on that one.
This is the best cooking channel on youtube!!
Delicious, I wash mines 3-4 times using baking soda, salt and vinegar scrubbing them. Just want extra clean
Sonya Schroeder yeah and washing with that kills the odor people say put a potato in it to kill the smell why would one want to eat it then respect
Saved and sanctified one love
Baking soda is a no no bad on your intestines and not worth it, rem this intestinal track is similar to ours! Also the chance of evaporating from over cooking for beginners is a issue. Wouldn’t recommend
If you clean them properly no odor odor means not clean! Stainless steel soap helps with hand issue of smell and also lemon works awesome
@@copout510 yep my aunt washed her's with baking soda and ended up with a pot of juice smh
Awesome video, I do mines a little different but some steps never change when you doing them right! You just showed so many ppl how to do chittlins right. My husband started eating them after I perfected them, it's been like 14 years ago lol ando now I'm cooking chittlins throughout the year! 😂 Even our kids eat them now lol
Perfected?
That looks absolutely DELICIOUS!!! When I eat chitterlings, I don't want a little teenie, tiny plate. I want a generous or very LARGE portion. I even love the smell. When I smell chitterlings, I know i'm getting ready to eat real good!
James Robinson Nigga u need super jesus

Wtf
Me too James. Them smelling good while cooking is in the cleaning. If they cleaned thoroughly they will smell like pork chops cooking. Good eating it is.
I have not had any in about 4-5 yrs, and I want some soooo bad
I love Chitlins after I cook them the next day I batter them and fry them, I made a batter with flour eggs vinegar and milk I also season the batter with a little season salt dip the Chitlins in the batter and fry in hot oil like chicken. It is so good
I love me some Chitlins over rice with extra hot sauce
Wouldn't it be more flavorful to saute the green peppers, garlic, onions, and celery in the butter first, then add that in with the other ingredients to simmer??
I want to try them so badly...they look really good. Tender and flavorful. My mama never made them so I don't have any clue on how to start, because I'm so scared that as a total beginner I'd screw them up! This looks like a great recipe/tutorial so maybe I'll try to do it some day soon.
I really enjoyed the recipe I'm a new subscriber now after watching this one video. You have the most detailed information on how to properly clean and cook these items very impressive. And as a good old southern boy from South Alabama I love me some hog maws and chitlins.
This looks good. I am going to try those ingredients and see how it comes out. I can't wait. Yummy!
LaWD!! i'M GOING TO THE STORE NOW!!
Y'all, I am making my first batch tonight for thanksgiving. I'm nervous as hell because no one makes them better than my momma and granny. Pray for me 😭😭
Renataa Holcomb so am I !!! Good luck🙌🏼
@@kialane8261 I made them!! They were soo tender. I used my small slow cooker but boiled them first. Make sure you season them after they boil down a little bit to avoid them getting tough. I only made half a bag and it still took around 5 hours but they came out sooo good. I also didn't use vinegar because my momma doesn't either. Good luck baby! I believe our ancestors will guide your hands well 😂😙💛
I’ve been using your recipe for a good 7 or 8 years now. I’m getting ready to prepare some now and just thought I’d drop by to say thank you and happy holidays!
you are the best, i can tell you really care about cooking. u teach me alot
when I stayed in Memphis I worked in a restaurant called mama N Em I saw how all this was done. it was a gospel singers family's restaurant.
I'm on a different level of hungry right now! This looks great!
Best recipe for chitterlings I have seen. Thanks for sharing. eat in moderation
I'm making these tomorrow for Sunday dinner & will be using your recipe. Thank for the share
That looks FIRE!
I bring my chitlins to boil and rinse and drain the dross off of 'em
I do as well
thekidsmomshortie me too.
Yes, I boil them three times pour that water off then four boil I add ingredients to get the grease/ fat off!
man this is the best thank you for your time and effort and knowledge.
Awesome. That makes me crazy-hungry, thank you, Philly!
You must have bought the red bucket. .
I was just thinking the same thing.
Cause them the only ones these days are FILTHY like that!!!!
Lol he used the red bucket to add water to the pot
Man, u can cook! I made your pig feet....man everyone was jealous. Always thought I had to depend on my mom!!!! Nope ... I'm grown
That's next for eme. Pig feet.
Thank you for sharing because I’ve been wanting some so bad so I think this year I’m going to make it happen. Thank you.
i could smell your kitchen through the screen when you were cleaning the chitterlings. smells like thanksgiving growing with my mom. She would clean them overnight with my sis and the house would reek, but to me i knew what was coming so it smelled good. lol
I am going to try this. It looks so good😊
if you think thats nasty.. if you eat at fast food joints. i promise you they are 100 times nastier than chitterlins people sneezing on your foot people pickin their nose coughing dropping your foot on the floor and picking it back up you think they care.... I PROMISE YOU youve ate some pretty nasty junk....
Hate when people sneeze on my feet
Use restroom and don't wash their hands... properly
Paul McDonagh exactly!
I hate it when they drop your foot on the floor when it's already on there.
I dont know where you're eating buddy .. Board of Health charges people to
Love ingredients u added they look so good!! I gave up pork 5years ago sadly.
I like your techniques. I have to try this when it gets colder.
You need to make some cook books too. Wow I tried the greens you made, me and my family have a new dish. Thanks!!
I have never tasted hog maws even though I was born in the deep south in Mississippi. I'm cooking chitlins next week for Thanksgiving, and I'm thinking about going to buy some hog maws. If not next week then I will try them with my chitlins that I cook next month for Christmas.
The best channel this far I love your talents!!!!
Making it for THANKSGIVING 2020
Me too 😁 my hogmaws are defrosting in the sink rn awaiting my 2020 thanksgiving table!! Happy Holidays to you and your family 💗
Damn this looks amazing. I have been craving chitlins for the last 2 weeks. I've only cooked them myself one time last Christmas, but they were amazing. My mother used to cooked them for Thanksgiving or Christmas every year. It's only May 6th, but I'm sitting her thinking I'm gonna cook me some chitlins either this Sunday for my 42th birthday or next week since I'll be on vacation. Actually I'm craving an entire holiday meal, and I think I'm going to treat myself to chitlins, with either turkey and gravy, cornish hens, lamb chops, or rack of lamb, mixed greens with either ham hocks or ham, and potato salad. That's all I need.
Yum!
These look really good. I have never eaten or made chitterlings. I've wanted to try them, but everyone says they make your house stink, and I'm afraid of not really knowing how to clean them properly. And from the videos I have seen, it's a lot of work if they aren't good!
Glad u actually show a different way of seasoning them unlike other videos I've seen.
....ahhhhhh YES YESS... I clean, prep and cook mine the same way as yall do!! hummm Ive never used celery or butter though.. Imma try that for my Christmas batch! GREAT VIDEO!!
I've never tried chitlins but this looks delicious!
Good job, I don't eat them but your video was good. I do eat pork, just not chitterlings and hog maws
Everything You cook is amazeballs...Great recipe
Mighty fine! Mighty fine! I did it and can't wait to dig in. Thank you bro and Tammy!
have u tried mexican menudo :) its the same but diffrent spices. and its sooo good. I love how your prepared yours it looks really good
oh my that looks delicious!!!!!!!!!
nichole hernandez yesssss!!!! 🙌
I love Menudo and this
Love um.
Is that true? I never realized menudo was the same as chitterlings? I've been curious about it.
I don't add water because chitlins already has moisture and will add its own juice.
So what liquids do you use
You can't cook, at least not chittlins then! Gotta add water, just drain some of the juice fat after cooked
Im making some today
@@ygk_supreme2135I use to cook the rice in my parents from South Carolina Georgia we use
the broth off the chitlin to cook the rice
Yes look so good 😍🥰 I’m making these for thanksgiving god bless
This looks absolutely amazing I'm gonna try this recipe
Your recipe looks good and I'm pretty sure they are delicious as well. I like Chitterlings but not with all the liquid. After my dad cleans them, my mom cooks the chitlins in water with onions, celery, vinegar. Afterwards, she takes the chitlins out of the liquid and chops them up. She will put them in a cast iron skillet with fresh onions and seasonings and sautee' them. That's the ONLY way I will eat them and they are delicious.
So they are fried?
Hog maws, rice, greens and a boat load of hot sauce💪🏾👈🏾
You are the best I love your cooking I will follow your recipe. Love you God bless.
BEST EVER!!!!!!!!!! & I thought I had it locked!!! The butter though!!! #GAMECHANGER!!! ❤❤❤
so someone said use chicken broth. that'll make the too salty? my Granny used Bay leaf and accent as well.

Looks good...gonna try for myself. Really enjoying your cookin'.

So happy u finally made a chitlins video I was starting to think u didn't eat chitlins! Lol thanks made my night
I have never heard u promote this channel. Im so glad I found it. I'm making your curry chicken recipe tonight. You are so detailed and I love it
my husband made that curry chicken recipe 4 nights ago and IT WAS THE BOMB.COM!!!! I had no idea my hubby watched this channel until I tasted the dish and heard phillyboyjay's voice. i said, "is that phillyboyJay?" the hubby said, "YEP!" we love it
That looks so good! Have to try that recipe
Sir you did that looks great thanks for posting!!!
You're measurements got me dying laughing 😂🤣. Thanks for the video. Following this recipe for Thanksgiving. Happy Thanksgiving
I’ve never ever had chitlins in my whole life, but I’ve been dying to try them!!!
I’ve had tripe! But I wanna try this!!! I’m just afraid to make them by myself lol
Just find that one distant Southern country cousin.
I HAVE to cook this for my Mother :-) You go Philly Boy Jay!

My dads family makes chitlins and I never had or wanted to but I won't lie this recipe looks good!
I made it last year and it was the bomb!! I'm going to make it this year and it's going to be the bomb!! because you make the best chitlins!!
Thank you! I've long been a fan of hog mass, but never had the chitterlins, that I recall. I was wondering about using your method, but in a crock pot. You know, low n slow, say over several hours. Oh, and have you used those "Hot Mama" pickle n a bags in your cuisine? The juice is stellar, and you just slice the pickle up for soups and stews. Mmm!!!
Maws, not Mass, Damndroid!
Crockpot works also
I mix them
its January 2016 I was raised on this stuff...love it until my Dr. tells me different😛
Why wait until your doctor tells you to stop eating pork after you've had a stroke or high cholesterol. You should put a ✋ stop to it now and save yourself.
