If there's one thing I've learned from Gordon Is that, frozen food is trash, microwaved food is trash, and that you're trash if you can't tell the difference between raw and cooked.
Manufactured food is also trash, Gordon says it all.
well, if you're a restaurant, people know that you're serving fresh food and not frozen/microwaved shit. if they serve that to you, might as well just eat at home
It's not trash and he knows that. It's there to be eaten without much effort, thinking or money.
But you pay top dollar for fresh dishes when you visit a restaurant, so you cannot just serve frozen food that you can get at fuckin tesco for a quarter of the price.
It's trash for restaurants, but unless you plan on cooking yourself a 5 star meal for breakfast, lunch and dinner everyday, then you eat trash and have to deal with that.

He's a chef who owns multiple restaraunts with michelin stars, the highest being rated three starts (out of three). You don't get that for no reason, in fact it's one of the highest prestige's a restaurant can get.
He may be an "asshole", but he is an extremely successful business owner and chef, if he's telling you something it's for a reason.
