She actually did an Extreme Budget challenge video that was all centred around a huge bag of potatoes that she bought for I think $9.95 from memory, and so many meals during that week were potato based, so you could go back and find that. :)

Potato hack: after you chop up red and Yukon potatoes, drizzle them with some olive oil and seasoning in a microwave safe bowl, cover in plastic wrap, cut a small hole, and let it go! Stir it around and poke the potatoes and cook until they're done. So much easier than roasting if you're on a time crunch!

Had left over chicken and some corn, added a can of black beans, onion, garlic, bay leaves, seasoning, gumbo file and left over red cabbage slaw we had a week ago on smoked rib sandwiches. FYI, you can make your own never ending vanilla for baking. Just pick a base (vodka or rum) and buy vanilla beans (they are a little pricey but you only need 3-4 and they last FOREVER). Use a knife to slice the vanilla beans once longways. Add everything to a glass jar. Now use it and continue to add either vodka or rum as needed. Easy and cheap. Now I will say that vodka is clear so if you are making white cakes, it wont tint the batter, but otherwise you can use either for the vanilla. Enjoy!

We just tried your cheesy potatoes last week, I had to make some adjustments because I didnt have all the ingredients, but they came out sooooo goood. I made some shredded chicken breast and we ate that 3 times without complaint. It's only my kid and I plus our dog so we always have food left over and have to eat leftovers. I either have to freeze some of it or we finish it in a few days. My kid looooved the potatoes she raved about them each time she ate them lol. I hope to make your bread and banana bread sometime soon. That rice bowl like something we want to try as well. Thanks for the good recipes Christine! Video Liked!

Onion hack: I was watching Tawra from Living on a Dime to Grow Rich and she said she hasn't cried in 25 years of onion cutting since she learned about storing onions in the fridge. Can't vouch for effectiveness but immediately thought about you. Hope it you try it and it works.

When I bake my bacon I put some of the fat into my fridge. Then I roast the potatoes in the same pan.

I love banana bread, but one day I had everything mixed and ready to go, went to get the bananas only to discover my family had pinched them and taken them to work and school in their lunch boxes. So I improvised, I grated 2 medium sized apples with the skin on, got a good handful of sultanas which I warmed in apple juice in the microwave for a little bit till they had plumped up then added the apples, sultanas, some of the apple juice till it was the right consistency then added a little bit of cinnamon. I cooked them for the same time and temp as the banana bread and waited till the family got home. The verdict was unanimous, EVEN BETTER THAN BANANA BREAD. Yea even my 14 year old son who hates dried fruit loved it. I hope you give it a try and see what you all think. By the way I have told many family and friends about this and those that have tried nearly all love it as much or more than the banana version.
Happy new year ( if a little late ).
Much love and respect from South East England. xxxxxx

I love seeing how the mixer works; I have a Bosch compact on order. Will be using it for sourdough bread mainly, but it will be handy for any other baking I do for the two of us. Fun video!
