I started watching your videos right before your big move. I cannot stop making macarons! You are a great ambassador for the growing macaron community. I find your teaching method to be informative, honest and encouraging. I’m retired and I make macarons to hand out to friends and relatives for just about any occasion…especially Christmas…everyone went crazy over them! Thank you for bringing us along on your passionate ride to macaron nirvana!

I have been watching your videos for a while and finally did a live...best ever!! I wish I was able to make the macaron class but hoping to do the next one. Just served my shamrock macarons after our traditional St. Patricks dinner for my daughter who was born on St. Patricks Day. Thanks for all you do and share with all of us. I’m so excited for your bicolor croissant class! I have a batch of your croissant dough in the fridge right now. Your recipe is my favorite of all the croissant recipes I’ve tried. No dough sheeter yet, but as soon as I can make my goal of a year of hand lamination, I’m buying one. I’d love to see more hand laminated recipes like danish and my personal favorite. Kouign Amann,
Patty! I’m so excited for the class too! I think that is such an awesome goal. It’s so important to feel comfortable with laminating by hand in case equipment fails us or just personally to know we made that honeycomb structure all by ourselves!! I love that! And then getting to use the sheeter is an absolute treat 🤣. I love these ideas!!

Can you please also walk us through the exact thickness of the dough in all phases of lamination in your next videos? Because I literally fell in love with how amazingly you had your laminated dough equally distributed into exact layers of butter and dough. That was a sexy dough! 😂

I’m originally from Boston, but live and work in Orlando Fl now. I’m an anesthesia provider, but love to bake. I just started doing the farmers markets with my macarons. I have been going back through all your videos and your tips have helped me so much. It took me about a year to find the perfect formula for my macarons. Can you do more videos on fillings in the future? Florida is not an easy place for any kind of filling! Looking foward to anything you post! -Colleen
