Those are all VM display issues. Change the virtual display adapter in your Hypervisor, not from within the virtual machine itself. In VirtualBox set it to "VMSVGA" (and increase the allocated vram), though I'm not sure on your specific case. None of this would be an issue on a real bare metal install. Also note the Kdenlive, OBS, Discord, complaints that people make lately, usually boil down to Flatpaks. Install real system packages (.deb, etc.) when possible.
Did you also run "grub-mkconfig -o " after making changes to the default grub configuration? That could've have fixed it but I don't use Hyper-V so I'm not sure if that would've worked in the first place. Also in KVM (a Linux Hypervisor) sshing into a Linux or FreeBSD vm via NAT works out of the box.
The most unexpected thing is that you are using Hyper-V. I have never been able to obtain satisfactory results. Of course, I don't even expect it to perform as well as KVM, but anything acceptable like VirtualBox.
