Marinated pork loin, butterflied open. Sautéed onions, garlic, green & red peppers, cheddar & pepper jack cheeses with a scoop of horseradish sauce, all spread over the loin then rolled up & double wrapped with bacon. Baked for an hour at 375 or till meat hits 145° then let set 10 minutes or so till temp comes up to delicious doneness...
