I just made one and found this video. I pouned out some loin to make a roulade. Put my homemade pecan mushroom dressing in it i had stashed in the freezer. I make these things all the time. Excellent video my lady.

So. I find your content relaxing to watch. I usually wait until the end of the day when I’m winding down to watch. I mean, sure, you are not at all difficult to look at,🙃, but you also have a pleasant speaking voice, your speaking tempo is fairly slow and you articulate things very well. I’m not sure where you are from but I know where you are not from. NY, NJ, etc. Today I’m actually making this dish. So I end up listening to it many times as I get to different parts of the recipe so I play it at 1.5x. 😂 It totally transforms you! You sound like everyone I grew up with in NY! Good Day Chef , Excellent flavor combos. I would love to try that cooked on an open flame rotisserie. Think I may have my butcher make that in a pork sausage for me. Then Pam my wife, makes a bacon weave that covers the loin. Then we tie it with butcher twine. It’s a work of art and it’s delicious. Of course, we are serving southern Cajun folks. When I Google pork loin at my local grocery store, it pops up with pork loin chops, so is the pork loin a roast since it’s a big piece of meat. Is there a fancy term if we want the fat cap on the pork loin? I have done this with pork belly but looking for a much healthier option. (Although the crispy skin can be a game changer.) so is there a fancier word to ask for this pork loin with fat cap?

Hi! I haven't tried freezing the loin before. However, you can stuff and roll the pork up to 2 days in advance and keep it well covered and refrigerated. Hope you love the dish!

Any idea for the substitute of pork instead? I don’t eat pork.
You could try this with turkey breast, too. The filling would probably work for 2 to 3 large turkey breasts. Make sure to adjust the timing, too.
