I love stuffing pork loin or tenderloin, chorizo and cheese is a great one! The bacon wrap is definitely a good idea too. Pork does have that magic sweet spot, but sometimes you miss 140. Hope you have a great week Jeff!

Very important this is mexican chorizo. Spanish chorizo will not work. We cook this dish in Mexico often. We don't use barbaque spices, we use other spices like axiote
A potato masher works very well for breaking up Sausage and other ground meats while cooking
