    A potato masher works very well for breaking up Sausage and other ground meats while cooking

    Can't wait to try it, the loin you made with the hatch green chilles was amazing. Hopefully this is just as good.

      They are both good, but I'm partial to hatch chilies. Maybe combine them!

    I love stuffing pork loin or tenderloin, chorizo and cheese is a great one! The bacon wrap is definitely a good idea too. Pork does have that magic sweet spot, but sometimes you miss 140. Hope you have a great week Jeff!

    Coincidentally, I have exactly 1 pork tenderloin in my freezer. That looks like a winner to me. Have you been out fishing yet this year? I've wanted to, but I'm either working, or it's cold and maybe even snowing.

    Very important this is mexican chorizo. Spanish chorizo will not work. We cook this dish in Mexico often. We don't use barbaque spices, we use other spices like axiote
