i have just tried this trick with the oven and the upside down baking pan and it works just fine. 4-5 minutes of baking and all done. i put some butter or oil with spices right out of the oven so the upper thin layer stays soft longer, and i also add a bit of pepper and red pepper in the dough to add some flavor. cool recipe!!

Im so excited that I found your video!! Ive been making bread and using my mothers recipe that she shared with me may years ago and this is the first one that uses the exact same ingredients! Everything is pretty much done the same way with the exception of resting times. I let the dough raise for the 2 hrs but this is where I think I like your way better ! (sorry Mum!) After I roll into balls she had the resting time (covered again) 1hr 45 minutes (sometimes 2 hrs), then after rolling with the rolling pin, cover and raise for another 2 hrs.. Needless to say your way is soo much quicker! (however when my kids were younger and I needed to pick them up from school, or run errands, I had time in between raising time! So, today I am waiting for the first raising and will try it your way. Wish me luck.. Also, when I look up recipes for Syrian bread (which is what my mother is) they only have the flat pita which she never made! Thanks so much for sharing!

My husband is Israeli and has watched and learned from Max's videos in Hebrew for a long time. He translated the pita instructions from the Hebrew language RUclips for me, we made them and couldn't believe how good they were--the best pita we've had outside of Israel.
I was delighted to find this video in English so I could share with friends in the U.S. One difference between the English and Hebrew language videos is the size of them - the Hebrew version recommends 150g and this one says 200g. We prefer the 150g size.
    Thank you!

Now, being raised in the country, where there is farms and nothing else for miles, had helped us in not being too reliant on government and such, but, I think this is a very valuable lesson and wake up call from GOD, and we must pay attention!!!! this result gives a very thick bottom and very thin crusty top. i prefer a more balanced pita, no sugar, no baking powder. i use 72% hydration, only a tiny pinch of yeast and long, cool fermentation (12-16hrs depending on temp). in a home oven it's better to use a heavy steel or baking stone. thumbs up for doing your own thing

Max thank you for the recipe I am definitely going to try to make it. But I don’t like to use my hands which gets sticky with the dough so I will use my kenwood chef with the dough hook & I will get my husband to roll roll it out. As at the moment we are in lockdown & it’s hard being stuck at home with no visitors.
