    I found Make It Make a few weeks ago and binged watched all her videos. I feel awful that people are giving her such a hard time. She does a great job explaining its not an “approved” method and give the warning & disclaimers. If you don’t like what she says or does move on.I hope this community shows her some love so she will continue making videos.

    I watch her as well. I am from the south and my great grandmother never had a pressure canner, so she preserved with boiling the jars for hours. As for my kitchen I do what I feel is right for what I am preserving. I am glad someone is speaking up for her with all of the canning bulling going on. I wish we could just be kind to one another and allow folks to make their own informed decisions.

    I watched her What's happening video and felt empathy for her. I recently opened and ate a pint of home smoked ham that I WATER BATH canned in 2012. Yes, 10 years ago. It tasted like it did the day I canned it as I recall. I'm still here. My kitchen, my rules. Maw never pressure canned anything. Always water bathed. Taught me how. Sometimes I do, sometimes I don't. I don't share the food I water bath, so I'm not endangering anyone. Love the Make it Make channel.

      Is water bath no safe…whats the story behind that if I may ask? I see a lot of channels do that and I’ve heard of it throughout the years but didn’t know there was a difference other than one is faster in doing than the other? Probably too much to share in a message IF it’s possible im curious Thanks in advance

      LOL...about 6 months ago, my neighbor gave me a pint jar of chicken that she had canned 6 1/2 years ago. I drained it and made chicken salad to use in a salad or sandwich for my Hubby. Now, keep in mind I make the same with fresh chicken and have been satisfied and so had my Hubby. He will remark sometime about food I prepare and sometime he doesn't. On this chicken salad, he said...I don't know what you did, but that is some of the best chicken salad you have made in a long time...go figure. So, having said that, do what you do and don't let others sway you with what you do. God Bless.

      @@floraledet6973 In general, it is the type of food that is the difference. Certain food is safe to water bath while other types are safer to pressure can. It has to do with the acidity levels.

      @@floraledet6973 Water bath is not considered safe for canning low acid foods like meats and vegetables. Those are typically pressure canned because the botulism toxin grows in an oxygen-free environment. Botulism toxin can kill you. High acid foods like most fruits and pickles can be safely water bath canned.

    Rachel, I have been watching her too. Love her series on Amish Water-bath canning. I am too new to canning to water bath everything lol. So far I have done Ugly Chicken pressure canned and Bourbon Maple Pecan Pie filling that was water bath canned. Watching you and others helped me take the leap into canning. Took me 1.5 years to get here though. I bought everything needed and it sat in my closet until I said enough is enough and got busy. So, hot here so I am following your example of canning outside and that helps

    Love MakeItMake. She cans vegetables the way I was taught by my mother. She never had a pressure canner and we canned everything in a water bath. We never added citric acid nor lemon juice to any of the veggies and no one ever got sick. If waterbath canning worked for 100 years before the USDA got involved why won't it work now?.

    Hollar Homestead had a really neat tool they used w a drill and it worked FAST!!! She used her '"scrapings" for creamed corn as you mentioned.

    You, also, are one of my go-to gals for common sense food preservation ideas & recipes, as is Heather over at The Kneady Homesteader, Becky at Acre Homestead, Patara at Appalachia’s Homestead… hmmm… Homestead Heart ❤️☺️…Stacy at Off Grid with Doug and Stacy… Outdoors and Country Living… a few others also. I also just really enjoy hanging out with you all and watching, hearing what you are up to in your kitchens and on your homesteads.😁 It feels like we are part of a community of likeminded cooks and farmers.

    I have followed her for a while. She is awesome!! That poor girl got so much flack from doing the Amish vids. It was heartbreaking because she worked so hard to gather as much info as possible from her neighbor/amish friend so she could share the knowledge. One of her latest video she explained how much the negatively hurt her and she was no longer going to do amish canning videos. I hope everyone will support her because she is an amazing human being. Btw, love all your videos😍

    Hi Rachel, I've been listening to for a while and I love her straight forward info. I myself learned a lot from the Amish growing up near them in Lancaster back in the late 60's. I would love to go back in time and live like we did back then. So simple and God fearing people. But do watch that channel you will learn a lot.

    Yes!! I found her channel a couple of weeks ago! I consider myself still newish to canning, but find myself asking why I can buy canned squash, and canned pasta in the stores, but not an approved method for home use. That's never made sense to me, so I'm really enjoying watching people who are knowledgeable and explain why it's not that serious to go against the grain sometimes!

    I can't do the apple cider vinegar. In anything. I have learned over the years that any recipe that calls for ACV can be substituted with regular white vinegar.

    I have watched her before, and found her interesting. For some reason I don't remember my Mother having a preasure cooker when I was a kid. I still have the water bath canner of hers. I since bought a waterbath steamer canner and love it! Great for those that have a hard time lifting the old one, so I had to bail the water out when done. Will be interested to see what you do with her recipes and processing them.

    Found her earlier this summer. I love her Amish series and I commented on her video where she said she was pausing on them. I may not can using those methods, but I still appreciate the information. I really hope she continues them.

    She is great. I found her a while back and can't afford a pressure canner right now and was so happy to see there are other ways to do meats, etc. I haven't tried it yet, but they had to be doing water bath canning before the pressure canner was invented.

      They did water bath before pressure canners but they used cold storage and root cellars. I think that is where people go wrong. You should never water bath can low/no acid foods and then put it in a room temperature pantry. Just my two cents.

      @@bluegirl777 Why would that matter? Botulism grows in an oxygen-free environment, no matter if you store it at room temperature or in a root cellar.

      I follow some channels of home canners in other countries. They all water bath. I'm interested in learning about that. For my purposes, I'll continue pressure canning because it's faster. Botulism shouldn't be much of a concern for anyone who's read the CDC's statistics on food-borne botulism in the US. There were 18 cases of food-borne botulism in the US in 2018 (that's in a population of 330 million people). Some of those 18 cases were lab proven, some were assumed. We have no information about whether any of the cases are thought to have come from home canning. None of those 18 cases resulted in death. I've recited the 2018, statistics so often, I have them memorized. 😆

      @@marilyncausey9348 those CDC statistics are a fascinating read though over the years. So much beaver, 'stink eggs', seal flipper, stinkhead, fish heads, and fish in general. That tricky tricky asparagus. Not to mention the prison made alcohol. The year of the fuzzy frozen purchased chili in TX. Plenty of what looks like commercial products. What interests me is the home canned things that don't look like snacks/single serve, but only a single person reported.
      From my notes on their statistics: Home canning cases are rare. Even with wild jarring methods like inverted, dishwasher and oven. In total only 79 known cases over the last 18 years. At the rate of zero to 7 a year, with one famous 27 case potato outlier.
      2001 had exactly 2 known cases, perhaps 3 (listed as unknown) in the ENTIRE year of home canning. None connected, and thin details other than one was asparagus.
      2002 - 6 cases, 1 unknown .
      2003 - 1 case, 3 unknowns.
      2004 - 5 cases, 1 unknown (more asparagus, guess that one can be tricky).
      2005 - 2 cases suspected, 5 unknown.
      2006 - 2 cases, 1 possible in Poland (most of that year's cases were all commercially canned products).
      2007 - 2 cases, 3 suspected.
      2008 - 6 cases, 1 suspected, 1 unknown.
      2009 - 4 cases (known asparagus again), 7 suspected.
      2010 - 2 cases, 1 suspected, 2 unknown.
      2011 - 2 cases.
      2012 - 7 cases (Two were PASTA in meat sauce. Wow, considering the printed meat sauce recipe in at least one ball book isn't long enough, as it is!), 1 suspected.
      2013 - 1 suspected, 2 unknown.
      2014 - 5 cases, 2 suspected.
      2015 - 30 cases(27 from water bathed potatoes, then potlucked potato salad), 4 unknown.
      2016 - 4 suspected, 2 unknown.
      2017 - zero.
      2018 - 2 cases.

    I love your perspective on canning. I understand why you might mention feeling like a pariah in this video, but for me it's like a breath of fresh air to come over to your channel and not have to deal with those factions. I've been watching Make it Make too and love the content. I'm not sure if I'm ready to can in some of those ways, but it sure is nice to learn about.

    Rachel, my grandma had eleven children, preserved a huge farm garden, and never got any of her family and friends sick… she passed her knowledge to her daughters. I just wish I would have paid more attention to her. So, I totally learn from my favs on RUclips. And you are totally at the top of my faves!

    Yes! I just recently subscribed to her channel too (Make it Make). She did a great video on Amish canning methods and did an excellent job explaining. She was also extremely respectful in how she went about the video. It was so interesting how the Amish person wasn’t even aware of the USDA guidelines at all. I subscribed after that first video, and have watched several since.

    I'm super excited about this video. Years ago , when I was in my 20's I was down in Kentucky and I had dinner with an old lady she made ham n beans, cornbread , fried potatoes and corn relish it was soooooo good! Her's was not spicey more sweet n tangy, but that would be an easy fix from this. I've never had the chance to get a recipe or see anyone actually make it (that's how i learn) :) Thanks so much. Love it , it looks yummy.

    I love Make-it-Make too! She’s wonderful and I’m leading so much from her. As a new canner, I really appreciate the common sense approach you and her use when canning. There’s so much hysteria created by some in the Canning community about what “approved and not approved” that it can turn a new person off or scare them into paranoia. I think Leilani, like yourself, are the blessing and the balance we all need in the Canning community. I love you both.

    I just recently found Make It Make and started watching her. I love the Amish inspired videos and “Rebel” canning. I have encouraged her since some are slamming her for doing these videos that aren’t government approved. Traditional, tried and true, years of proof mean more to me. I know she will LOVE your shout out.

    Rachel, your experience is good enough for me. I know this as my own moms, grandmothers and aunts used many of your exact techniques. Those were the days when people weren't so scared to live and learn. For those who want and need that sort of thing there is plenty of info out there for them to find just like they found you. After all life is but a learning experience. Of course, no one should do anything they are not comfortable with within their own experience. As time goes by they will learn what is best for them.
    So take heart, you and your friend both. There are plenty enough people out here watching and loving your shows. Besides, I'm smart enough to approve what I do all by myself.

    I've been watching Make it Make and you're right, it's a really good channel. I love her spunk and her enthusiasm, she's also very genuine. It was upsetting to me that she got some flack for showing "non-approved" methods of canning ..she talks about traditional methods and those used by other cultures, which seems to be offensive or threatening to people. I appreciate her information, especially Amish food preservation traditions and recipes. Glad you mentioned her channel to your viewers.

    And I was just thinking today about canning cowboy caviar. One batch makes so much, it would be amazing to can it up and open it a reasonable serving at a time. I just can't find a cowboy caviar canning recipe. Makes sense to treat it like a relish!

    I'll check that channel out. I take a bunt pan & put point of ear in the center, then cut with electric knife. Soooo slick & can get close to cob for less waste on cob.

    Good afternoon 😃. Love your corn relish. I love it on everything. I do have a very easy way of getting the seeds out of peppers, if you can fine a grapefruit spoon or knife it works great. It works great for tiny peppers all the way up to large ones. I hope this will help you. 🦩🦩🦩🦩🦩

    I also love Make it Make! She's gotten SO MUCH flack lately for her Amish Canning series. Other channels have attacked her and her comments have been ridiculous. She actually stopped the series for a while because she can't handle it emotionally. Thank you for the shout out to her...I know it will make a difference!

      I haven't watched her channel yet but I do know that Pam at RoseRed Homestead extrapolated out how it could be done for time vs altitude. She was very respectful. Pam has caught her own share of flack over one experimental video. Funny thing is, some of the biggest "rebel " canners were the loudest.

    Yes corn relish is a big fave in this household...FYI...keep your corn silks too...either freeze or dehydrate, they make the most smoothes tea, many healing properties for women..

    We moved to our home on about 1.5acres about a year ago- this gave us the opportunity to start growing our own food on a much larger scale. We are a family of 5 and this brings us such joy. I started watching your channel in the winter and now I look forward to all of your videos. I even save them for when I have time for a cup of coffee and chill. You guys just feel like home.     How ironic. I found her just before i started watching your videos. I love her stuff as well. I was always so worried about canning the "right" way. I knew in my heart that you could wb a lot of stuff because my mother wb everything. Unfortunatly my mother passed away in January and she hadnt canned in years.     My pressure canner doesn’t work as I have an induction stove. So waterbathing is the only way to can for me at the moment. I’m in the uk and waterbath canning is the norm for people who do it it’s the same over Europe too. I really enjoyed her videos too so when we ordered a replacement fridge freezer yesterday I’m this morning waterbath canning all my frozen veg in a very responsible way ( I really really love my family) I enjoyed the statement “open the jars sniff them and if it isn’t good throw it away” easy strightforward logic. In other news your channel is just incredible and such a wonderful privilege to watch. Your preserved coulslaw is incredible xxx

    She gave her name once during a live stream. Her channel is amazing! I found her when I was looking for a video on water bath canning. Her Amish canning videos were the first ones I watched. It was such a good series.

    Love watching Make It Make too. I find the Amish preservation practices very interesting. The living historical practices that they have passed down are amazing to me. I have unfortunately seen her be attacked for sharing this information with us which is a shame as we all want to do our best by our families. We have the right to make our own choices in our own kitchen and the more information/understanding we have, the better our choices will be in achieving this goal.

    I'm pretty happy to see that I'm not so different when it comes to culinary idea. Pre Covid, I had been working in the culinary field working closely with a chef. My background knowledge had been traditional recipes, grow your own, and make your own, all with a healthy food perspective.
    It was suggested that I put together a RUclips channel sharing what it is I know and do, and your sharing is making me feel that I should follow that path.
    My past little while had me busy harvesting, and canning in the old traditional method. Also using other creative methods by using what you have and making by replacing the things you don't have..... Blackcurrant jam, bumbleberry jam, pink lemonade marmalade and just some of the many things that I've done..... also just finished making a spicy corn relish before viewing this, and will be looking at making spicy pickled green beans tomorrow.
    Continue on being inspired and keep on inspiring :D

    This relish looks so good and colorful! You can also make homemade ice cream using the sweet corn cobs. At first it sounded weird until I tasted it. Absolutely delicious! Love your style.

    I watch her channel as well and share it. I love what she does and nothing better than learning from the Amish in my opinion it’s the best. They are keepers of the old ways and I love that. I left her a comment when she done the video on stopping the Amish canning series. I say just block the haters. Apparently they can’t be civil and scroll on by no they have to attack from behind a Key Board. May God bless you Rachael.

    I was having that mandalyn flash back from serious cut... One tip. when your working with those type of cutters. go ahead and put a rubber glove on. the corn can be juicy and slick, plus the rubber glove is a small amount of protection.

    I’ve been watching her too. Personally I wouldn’t can meats in a water bath process, even for 3 hours. At least until I read from enough reliable resources that this method has been proven free of botulism cultures. I have an immune deficiency so I have to be extra careful. I can’t even eat at most restaurants because their food makes me sick. I do watch her videos in order to keep an open mind because I try to find value in both sides of an issue. I’m glad you are supporting her videos. My rebel move is that I don’t remove the rings after processing. I do loosen the rings some but keep them on because I think it helps to protect the top edges of the jars from getting damaged. The corn relish looks amazing!

      Agree. Rose Red Homestead did a great video scientifically testing of the 3 hour meat water bathing meat process. She found that unfortunately it isn't safe at 3 hours (temps didn't get high enough long enough to 100% guarantee no botulism) and increasing it to 4 hours would be much safer.
      I hope if people insist on water bath canning meat and low acid foods, they at least learn from her studies and increase their processing time up to 4 hours vs 3.

    Your the reason why I began pressure canning. I had always water bathed. But never pressure canned.I was intimidated by the normal pressure canner so I purchased the 12qt. Electric pressure canner. I love it. I shocked my husband he didn’t think I would ever do that. But with the current affairs of the US we need to put up and stock up what we can.

    Make it make,. YES I watch her too & binge watching yes again. My son in law taught my daughter who taught me canning grn beans & carrots, his grandfather taught him, gardening sapping, canning, all kinds of things so I listen right up & pay attention to generations of knowledge.
