  • Friends, no joke this stuff is amazing, the flavors are so vibrant and fresh. This was my first time using zucchini in a salsa recipe and I am so glad I gave it a try. What a fantastic way to stretch your tomato harvest. I still have plenty of tomatoes coming in and now I don't have to put those to salsa and can make other fun things!

    NOTE:
    I added about 7 jalapenos to the recipe and replaced honey with brown sugar. I also doubled-ish this recipe and got 22 pints of salsa. Enjoy!

    I know this is from a year ago but thought I would share something with you. I was using tomato paste to keep me from have to cook it down as well. I started dehydrating my tomatoes with seasoning on them. Now if I need to thicken my tomatoes I simply chop or crumble the dehydrated ones. As they reconstitute whatever I’m making thickens and I’m using my own produce.

    I made the salsa recipe with my mountain of yellow cherry tomatoes and zucchini! A great recipe! Backed off the heat a bit, it’s delicious! It will be a go to from now on.

      I have a roaster that I pretty much only use for Thanksgiving and Christmas, I def need to pull it out and use more often..but smh where do I put it?? It’s So big!

    Holy Cannoli!!! I made this today and used regular tomatoes not cherry. However...I did not have sweet paprika, only smoked. I shrugged my shoulders and threw it in. It is AMAZING!!!! I have tried for years to find a great salsa recipe and I believe I just stumbled upon it.

    I too love Fire King. I was blessed to get some that was my mother-in-law's. It sure made them extra special. I had to laugh I have some Pyrex mixing bowls that I have had since 1977 and when we were "antiquing " one weekend I saw the exact set for $65. Tomd my husband I had told in the cabinets at home. LOL Still use them because they are my favorites. Blessing to you all at the 1870's Homestead.

    I made this recipe and at fist I was nervous it was too tangy. However, after letting the jars sit omg this is hands down the best salsa so tasty. I definitely regret not making more. We did not have a good tomato season here in the north east.

    Wow, you are just a canning tornado! I have the same chopper and it's perfect for just me. I only planted one zucchini plant and was graced with more fruit than I could use. Love all your recipes and the thumbnails of you are always so cute/funny!

      Exactly it's been the only food processor we've ever used for the past 4 yrs of canning, I've definitely put it to the test. If it ain't broke don't fix it!

    Dang this is spicy😂We used it over rice and it is amazing. Making another batch today without all of the red pepper flakes. My husband didn’t even realize there was zucchini in it which is another win because he doesn’t like most veggies

    I just made this! It's the best salsa I've ever made! I didn't change anything. I have a Victorio Food Strainer. I used the salsa screen. The texture is perfect!

I got into making this and discovered that my 18 month old granddaughter had "removed" my zucchini somewhere only she knows at the moment so I went ahead without and the salsa is wonderful and all ready for winter time!     I just love watching your videos. I watch this one and your Tomatillo Verde video lots every year making sure I put everything in the salsa. I add 3 chipotles to the TVerde recipe. How do you keep your tomato seeds from being bitter after you have cooked this down? I roasted mine first. Maybe this is why mine taste bitter? I hate to food mill it. Thanks so much Rachel.❤

    Hands down my favorite way to dry out zucchini is in a bowl in the fridge up to 2 days but overnight is good too. Then I can be lazy and just shred and out in fridge and forget about it. I will try this recipe. Thanks.

    We always use roasted cherry tomatoes for our salsa now I will have to try it with zucchini. Looks great.

      @@kimberleyb4002 yes we roast them in the oven at 350 for about 30 to 40 min it deepens the flavor and I find I don't need to add tomato paste.

    Oh My this looks fantastic. If I can get my hands on some zucchini, I'll be making some. The only thing I am uncomfortable with is the processing type and times. So, for me in my kitchen, I will be keeping some fresh in the fridge and dehydrate some (to use in dips and such) and the rest will go into the freezer. Looking forward to trying it.

      Hey Kathy. I'm pretty new to canning and safety. Can I ask you if you're saying that this is not a safe recipe to water bath? Or even pressure can? I want to make sure I'm doing it safely. Thank you if you have time to get back to me :)

      @@ingerhaugland6763 I have not seen an approved recipe like this for water bath canning. I do believe it would be safe to pressure can though. Have an approved recipe and it is almost identical to this one. Here is the link to it. www.sbcanning.com/2010/09/double-canning-night-fig-jam-and.html About the only differences is this one I linked has a couple cups less zucchini and the peppers and onions have cup measures as well and number of each. That will be the changes I'll be making. Can't wait to make some and can it up, think I will still dehydrate some for making dips with that sounded pretty yummy.

    I just made a big batch and ran through the food processor at the end definitely stretches 2 cases of salsa done and 2 monster zucchini left to chop and dehydrate for gretan in the winter .

    I started making zucchini and squash salsa for years. It's awesome. I add smoked paprika in mine and instead of the jalapenos, I add my son's hot sauce thats bottled commercially called Twisted Thrasher Sweet Heat. It's made with ghost chilies. I will have to give yours a try next time I make salsa. Hope you enjoy yours as much as I do mine!

    What kind of cherry tomatoes are those? They are huge! This is timely because I am just coming on my zuchinni harvest and several cherry tomato plants are full and just starting to get ripe.     I noticed that you did not follow the directions on the recipe to add the garlic, onion and peppers to the zucchini and salt overnight. So im assuming it does not make a difference? Also did you add vinegar?

      No because for my sauce I want my opinions and peppers sauteed, which cooks out alot if the moisture naturally. Vinegar just used for wiping jar rims and added to canner water

    Hello, I tried this today. I did t see what headspace you used or time for water bath? Does anyone know. Now I’m worried I did t do it long enough. I did quarts for 30 minutes.

    Looking forward to making this salsa. Would it be ok to use cherry tomatoes that I froze when I was getting a glut of them earlier in the season? I have a few gallon bags of them that I couldn't eat fast enough & hubby doesn't like tomatoes. I know, I know....I still keep him around tho! 😂

      Yes absolutely. We often freeze our tomatoes, and then can with them later in the season when I have more time.

      Well, I did it. I added some peaches & mangoes to the tomato/zucchini mix & it turned out fantastic!
      I got a hair over 14 pints. I'm thinking about pouring a jar of it in my chili when I make a batch, since we're coming up on chili season.

    I never heard oh adding tomato paste to the recipe .I can I make it without it or will it be too runny. My family and I usually stay away from can products. Plus instead of cooking it can yu just throw it into the jars just raw. Again my family and I go raw. What do yu think?
