I had no idea you could freeze tomatoes and save them for canning. This is a game changer for someone who doesn’t have a garden but, wants to accumulate items to can from the farmers market. Thank you.
I love how you kept it real with getting up the next morning and start canning before you even have time to get dressed! Go girl! I would keep the tomatoes the same because it seems like you can have one or two year where there are bumper crops and then the next year you get practically nothing. At least that is my experience and I have been canning for over 40 years.I love your channel.

If you score the bottom of the tomato and core them before you chuck in the freezer, you can let them thaw and the skins fall right off whenever you have time to can later.
I didn't realize that I could freeze the tomato's before canning them!!! Thank you!!! When tomato's are ripe its busy at work and I have a busy house hold with kids and now a grandson! This is an amazing tip that I will be using this year Thank you so much 💖
I guess you could leave the frozen tomatoes out overnight to thaw first. I was able to get a 22 quart roaster from my sister-in-law who only used it once for a Thanksgiving event. She had it ready for a garage sale!!! Lucky me. I had looked at them at second hand stores. I have way too many tomatoes this year. I may freeze them when I get enough to can. The way you do things makes projects look easier! Thanks
Not sure if you get messages on old videos, I don’t know how it all works. But in case you do, I was finally ready to can my own tomato sauce and I remembered you had a video so I went back to it. You’re THAT AWESOME!
I do this too, it takes the stress off of fall canning. I blend my tomatoes too, I recall pealing tomatoes for my grandma while canning. Blenders are so much better now than they were then.
You look so beautiful with your hair down like that!!! And, just for the record, I do my tomatoes just like that but have never added water. They do just fine. If you are worried, just cut a few in half on the bottom.

Love the idea of freezing the tomatoes until you're ready to can. Never would have thought of that. If they're frozen, you might have better luck putting fewer tomatoes in the pot at a time and using the lid to keep heat from escaping.

@@sknap2728 It can create a false seal. The jar looks sealed but it was really just the ring keeping the seal on and air can get inside the food and bad things can happen.
@@rosed9665 Yup. But, you can just check them and then put the rings back on. My mom used to do this when she would can two things that look identical, like pickled and plain beets. We always knew that the ones with the rings on were the pickled ones and the others were plain. Worked like a charm, especially since sometimes the sharpie on the lid would wear off by the time we got to using them.
@@danielleeaston578 they use it as food storage and throughout the winter. In Becky’s case she only cans enough for about a year sometimes 2. It’s smart and being prepared for when stuff happens like covid and the stores were running out of everything. Also it makes your life easier in the long run
This is my first year canning, I am 72. I did it with a friend with fresh tomatoes. Now, I am going to tackle from frozen. I have a hane blender, so it should be easy. Thanks for your instructions.

I’m doing this today. My frozen tomatoes were quartered and cored and frozen in zip lock backs. I have them in a large roaster like you put in the oven. I did not add water and with the oven at 200, they are thawing out fast. I have more yet in the freezer to deal with. Like you, I am planting only a few tomato plants this year, slicers and cherry.
I never peel tomatoes. My wife like me to mix’s chili powder in with the sauce when I am cooking the tomatoes down and then mix the onions and peppers in with prior to canning or freezing. Then just mix with beans and meat for chili. Then the peppers and onions are out of the freezer and pantry also.
I have switched almost all my jars to Wide Mouth, this spring after struggling last year finding lids I bought 30 dozen when I saw they were online at Canadian Tire , I used almost all of them .
I cut an X on the bottom and remove the core before I freeze. Then the skins slip right off, then I dehydrate the skins and make a powder. It’s lovely for soups or chili as a flavor or light thickener.
Woo Hoo, can't wait to have our own canned tomatoes again. Didn't get to plant a garden last year and probably not this year, due to living in an apartment....but next year, Lord willing, we will have plenty!
I don't use lemon juice when canning tomato sauce---'cause my mother never did and I don't like the taste! However, I do use a pH dipstick to check the acidity level and I have never found the acidity is not at the recommended level. But I also don't add vegetables to my sauce; it is just tomatoes. I add any vegetables to my sauce when I open the jar to use the sauce.
You can put the tomatoes in plastic totes, with towels under them to absorb sweating. As they thaw the water comes to the top, skim it off,, and thus will majorly lessen your cook time.
Wow I'm amazed at all the work you put into prepping for whatever.... I don't know many young people who would do that. My mom did many things from jams, konfyt, canning etc. I try to do certain of them that I'm comfortable with. I have great admiration for you my dear..... Keep up the excellent work. I freeze my tomatoes every year and can them in Fall. I just leave the bags out on a table (in bowls in case of leaks) and let them thaw overnight. The tomatoes lose a lot of their water that way (the tomato water is delicious) and don't take so long to cook down.
Another idea would be to harvest, blanch in boiling water until skins crack, remove skins (they come off super easy this way) and then freeze if you want to get a jump ahead and don’t like peels I’m thinking. Would just need to package them in the freezer 🤔

I don't peel mine either but once I've roasted mine I do put them through a food mill. The mill removes the skins and the seeds n the sauce is amazing.

Oh my goodness you can do it! I was so sacred too. This is by far the easily method I have found. I pressure canned for the fist time this year and I was so scared of that too but I’m loving it now. I have only done potatoes and broth but I want to do many more things.
Here is another way you can preserve tomatoes: Tomato jam 2 kg tomatoes 1 kg sugar 1 cinnamon stick 6 cloves Peel the tomatoes (some people take the seeds out but we never did) and cut them into quarters. Put them in a pot with the sugar and spices and cook until it gets a jam consistency. Can as you would other jam. Tips for eating: slice of toasted artisanal bread, spread large curd cottage cheese and top with this jam.
I've been enjoying you videos as of late. With you working, and homesteading (and ALL that that intails), your drive truely is impressive! As for canning in winter, it's the best time! I love making chili, spaghetti, and many other things when it's not so freaking hot out! It's good on you that you think about putting up so much food that you've grown yourselves, and making sure it doesn't go to waste. Too bad you're so busy that you couldn't sell some of your harvest at a local farmer's market or food co-op. There is only one complaint that I have, and that is your sound quality. I have given up trying to hear you talk now, and use subtitles instead, since other "background" sounds wind up being MUCH louder than your voice. I don't mind reading subtitles, but for those that don't, or find it frustrating, you may want to consider getting a mic. Thank you for putting out the great content that you do, and I hope that your channel grows even BIGGER! :)

Planted seeds in does for the first time. They’re actually growing but I have no idea when to switch them to bigger pots. I live in an apartment so I’m growing them in pots on my terrace.
I have had a garden for a couple of years. This year I had a huge harvest of tomatoes. More than my husband and I can eat, But I was told to not give them away. It was brought to my attention that I could have a year where my tomatoes may do bad and then I will be thankful for having a year where I had an abundance. I am not experienced, so don't know how often this happens. I did find that the extra allowed me to try new recipes, like ketchup, enchilada sauce and pizza sauce.
I know this video is older now, but can you/someone tell me what temperature you'd have your oven on for this? I have a ton of frozen tomatoes I'd like to make into sauce but don't know what temp 😊

Leaving the skin on the tomatoe adds more nutrients to the tomato juice, so no need to peel and core each tomato when you are short on time.

A little tip when canning is to put a rubber band around each jar so they don't hit each other in the canner and break.
Does the glass on the Mason jar not break when frozen?
@@ye2low as long as you don't overfill the jar it will be fine (leave room for expansion and don't put hot things directly into the freezer)

If you peel the tomatoes, the skins can be dehydrated and powdered and used as a powdered tomato paste :)

I would keep your tomato plantings the same. Yields vary year to year!

Yep. Frozen tomatoes. I think mines destined to be spicy ketchup.😊 only reason I'm peeling them is my girls will love the cores and peels.

I love making chili, spaghetti, and many other things when it's not so freaking hot out! It's good on you that you think about putting up so much food that you've grown yourselves, and making sure it doesn't go to waste. Too bad you're so busy that you couldn't sell some of your harvest at a local farmer's market or food co-op.
There is only one complaint that I have, and that is your sound quality. I have given up trying to hear you talk now, and use subtitles instead, since other "background" sounds wind up being MUCH louder than your voice. I don't mind reading subtitles, but for those that don't, or find it frustrating, you may want to consider getting a mic. Thank you for putting out the great content that you do, and I hope that your channel grows even BIGGER! :)

You could sell some or give some away to family and friends when you have a overload. I so wish I had your garden etc I know looking at it makes you so happy as well as proud

Planted seeds in does for the first time. They’re actually growing but I have no idea when to switch them to bigger pots. I live in an apartment so I’m growing them in pots on my terrace.

There are a lot of groups on FB but books and videos as well. Sometimes a coop or garden center have class information and sign ups.
I know in one of her pantry tours she pointed out a "ball" canning book that she said she really likes
I have had a garden for a couple of years. This year I had a huge harvest of tomatoes. More than my husband and I can eat, But I was told to not give them away. It was brought to my attention that I could have a year where my tomatoes may do bad and then I will be thankful for having a year where I had an abundance. I am not experienced, so don't know how often this happens. I did find that the extra allowed me to try new recipes, like ketchup, enchilada sauce and pizza sauce.
