Hey, I hope India is treating you well. If you are still in Goa, there are some awesome food places for you to enjoy. North Goa is more of a party place with all the hustle bustle and adventure activities whereas south Goa is more peaceful and quite with amazing beaches (sunset at Agonda beach is to die for, if you're there then try Dunhill for food). Also, if you do plan to spend on a fancy meal, upbeat music and an amazing sunset then try Thalassa in North Goa.
So, which one more developed you think? Southeast Asia (Philippines, Vietnam , Thailand, Laos) or India? i suggest you to visit Indonesia (Bali, Jakarta or Lombok and Yogyakarta). Singapore, Malaysia, Indonesia and Thailand infrastructure is cool, don't forget to visit Malaysia and Singapore for more developed Southeast Asia. Indonesia and Thailand come on 3rd and 4th position as best Southeast Asian nation :)
Its a tricky one, we ask around and watch what others pay. Generally if you go behind a local and watch what they pay, youll get the same price. But we definetly do get upcharged here and there and theres not much you can do about it unless you know the specific price. In nice restaurants though you will get a menu with prices on it. Cant argue with that :)
Hey Noah!!! I am writing this comment as I am waiting for my plane out of India to Sri Lanka. A few things : thali is more of a northern India thing, try it there. Food up North is way better in general. Also, avoid chicken - I’ve heard so many horror stories about undercooked chicken and meat. Oh! And always, always talk down prices at least 80%. As tourists we always pay more but compared to SE Asia where they double things up in India it’s ten times higher. Otherwise enjoy! We have had great time here and already looking forward to our next trip!

Talk with locals preferably young folks and ask about best restaurants or check in Instagram about few food blovgers who can help you out or collaborate .
OMG... you have just combined 3 very interesting words about India (in general) into 1 sentence which made me almost fell off the chair laughing. You used - India, Less Hactic and Less Chaotic into one sentence. In case nobody has told you, those 3 words CAN & WILL NEVER go together in 1 sentence when you talk about India. Hahaha... This is the reality of India and it's fact which could never be changed. The sad part of India which you've really noticed is the GAP between the Rich and Poor is so vast that it's almost a joke. There's no way someone from the poorer class could ever rise to be rich coz there's no possibility. It's just sad that the rich will always become richer and the poor become poorer. Another thing which I totally agree with you is Sensory Overload. That's something which happened to me too when I first visited India. It's just so unbelievable. Too many things going on at once. Too much input... like the computer spitting out a reply of "Bad Command or File Name" (old DOS). As for food there are a few reason why you see so much vegetarian food around. It's cheap and easily available for the mass people. However all you need to do is just look a bit harder and you'll find a lot of meat stuff as well. Don't expect to easily find BEEF as cows are considered sacred in India. So please don't turn yourself and become a vege-guy. LOL. BTW, the stuff you ate is something like a bread with curry. That's it... just make sure they are prepared more hygienically and don't get it from a dingy stall. You might regret if you do. If you're still in Goa, then please do grab their fruits over there. It's something I really enjoy and like when I visited that place. They have really nice fruits and a wide variety too. Try something called "Chiku" or "Sapodilla". It''s sandy and sweet at the same time (no bad smell), quite nice and it could only be found in Asia.
