- Dhall Puri is the most popular street food in Mauritius, typically served with savoury dishes like Rougaille , Cari Gros Pois, Achard de légumes. During Indian wedding ceremonies, Dhall puri is served with sweet Kheer and also Mauritian Chicken or Fish curry.

Ingredients:
The Filling
250g Gram dal (channa)
1 TSP Turmeric Powder
1.5 L water
1 TSP Cumin Powder
Salt
The Dough
500g All Purpose Flour
355 ml lukewarm dal water (a little more or less maybe needed)
5 TBSP of oil
Salt
1 cup of flour (to flour the surface when rolling the dough)
Oil for brushing

I made it last night and it turned our perfectly, I am from Guyana and there are lots of methods in making dhal puri. Found this one to be most successful.

I tried this recipe today and this is the first time I'm making dholl puris. Honestly I was pleasantly surprised since the dholl puris turned out to be nearly perfect ! Only thing sometimes the dholl was not evenly spread out but across the borders only but this is a matter of technique. The taste was so good and texture amazing. Thank you so much for this recipe ! 😄

I'm originally from Mauritius but have worked in over 20 countries including Trinidad and Guyana- your dhal puri recipes are more sophisticated than the Mauritian version, with many tricks to soften the dough using less oil for the dough ! The buss up shuts too are better

I've tried dholl puri a few times but it was always a failure. Came across this video and i was tempted to attempt it. Just wanna say a big merci for this detailed video ! Every step went smoothly. For the 1st time my dal wasn't soggy! The dough was so soft! Not gonna lie i was skeptical when you said to keep the size of the dough same as the size of the dholl ball but i understood why u said so when i rolled it out! It was perfect! And none of my dal puri broke while rolling! Can't wait to try more of your recipes ❤

Dhall Puri originates from Bihar. Indentured labourers went to different countries ruled by the British i.e Mauritius, south Africa, Fiji, Trinidad and Tobago, Guyana and most of the islands in the west indies. In all these places they cook dhall Puri . Also in all these places Bihari with all its different spelling is a common name. Bihari in Hindi means someone from Bihar.
I’m from Guyana and this is the best recipe I’ve used to make dhal puri. To add that extra kick to the dhal mixture, when boiling it, add some cloves of garlic and a pepper and you’ll tell me back. Thank you for sharing

It's not dholl puri... It's dal puri.... I am from uttar pradesh bihar border in India. My mom makes this recipe on every occasion. People of Mauritius are our distant relatives. But it's called dal puri.. Dal means lentils. And puri means Indian fries bread.

This is so similar to "Daal Puri" that is so widely loved in our city of Kolkata, India, we usually deep fry the flattened dough and serve it with a semi gravy potato curry or sweet chutney.
I'm yet to figure out the history between this particular Bengali & Mauritian food.
The majority of our ancestors came from India so Indian cuisine has had a lot of influence on Mauritian food! Of course throughout the years,the recipes had to be adapted to our ancestors’ own ways of living. Being indentured labourers, I doubt that oil was easily accessed so they had to find other alternatives to cook the Puri, thus they probably cooked it on wooden stoves and on tawas.

In west indies the dhall Puri's are about 3 times the size they are in Mauritius. Once read an article by a dhall Puri seller in Mauritius saying that his grand father started making the dhall Puri smaller as it was more convenient to sell them from his bicycle. I love Trini cooking and have many Trini friends. Very similar to Mauritian food but tend to be a lot spicier. Trinidad grows some some of the hottest chillies in the world.😅

I give u the secrets... When u mix flour with daal water must be hot and when the paste was ready its also hot cover the paste with lot of oil let the paste rest for 45 minits or one hour then u try to make yur dhaal puri
That's what we did bit with warm water instead. The temperature should be enough to make steam when cover 😊. For the oil, we add it in second, and knead again for it to incorporate in the dough. This process is done to get a soft dough that will stay soft for a longer period. Even you freeze the cooked dhall puri, it will stay soft when heated. Thanks a lot for sharing. No baking powder when making the dough?
Hello, no need for baking powder.. The dough needs to be very soft and when you roll, ensure that it is done evenly so that the dhal is spread evenly. If there is no holes after rolling, the hot air inside will make the dhall puri to rise. Also, if the dhal has chunks (not well crushed), it will stick to the dough when you roll and will make holes in the dhall puri.

Bonjour, plusieurs raisons peuvent en être la cause. Peut-être que la pâte n'était pas assez molle ou que le dal avait des morceaux (quand vous remplissez la pâte avec le dal puis l’aplatir, les morceaux de dal pas bien écrasés feront que le la pâte se fissure)
Nous aussi nous avons pratiqué plusieurs fois avant de réussir cette recette 😊 lâchez pas ✌️✊🏼

@whiteroz le dhal doit être finement broyé (pas de morceaux). La meilleure façon d'obtenir cette consistance est d'utiliser un moulin à aliments. Cependant, si vous utilisez un robot culinaire pour broyer le dhal, vous devez tamiser pour enlever les morceaux. De plus, la pâte doit être très molle. Lorsque vous roulez la pâte, appliquez suffisamment de farine pour que la pâte ne colle pas à la surface et ne casse pas non plus.
