Candied walnuts are so addicting I couldn't stop eating them! They are amazing. If you have a sweet tooth you are going to find these irresistible.
The nice thing is, they don't take but a mere 5 to 7 minutes to make and they store nicely for future use.
    Ingredients:
    1 cup walnuts
    1/3 cup sugar
1/2 to 1 tsp. ground cinnamon
    pinch of salt
    Directions:
Combine the sugar and cinnamon in a bowl. Have a baking sheet lined with parchment paper set aside for when you need it.
Preheat a 10 inch frying pan over medium high heat. Add the walnuts, the sugar, and a pinch of salt.
Stir the mixture until the sugar starts to melt. Keep stirring the mixture until all the sugar dissolves. Turn the heat down a bit as you go.
Keep stirring frequently so the nuts get well coated and don't burn.
Once the sugar is completely dissolved and the nuts are well coated you can pour the nuts into your baking pan.
Spread the walnuts out with a couple of forks. Let cool and serve.

Tip for everyone, after making these you can put water in your pan and boil it, the caramel will come out.

Just wanted to say that I have made these three times now. It turns out great. I do find with my cooktop it to be a bit easier if I put the nuts in the pan and let them heat up and start toasting before I put the sugar in. I find that easier to get a consistent outcome of the sugar melting evenly and easier to judge if it's about to burn as the sugar melting happens very quickly.

I just tried this recipe. I was hesitant to put the temperature at medium high because I was afraid to burn the nuts, but as long as you have the cooling pan and forks ready it does take the medium high heat to finally melt the sugar… I added another light dash of salt to the cooling mixture. And yes it’s best to store right away because they’re hard to stop eating especially when still warm.

I decided to try it with Stevia and Erythritol/Monk Fruit, using the remainder of the Pecans from Costco. And OMG, it was delicious.
I placed 1 TBL of Monk Fruit, a pinch of salt and a quarter tsp of Stevia in the pan with the Pecans, and added 1 tsp of butter because the sweetners didn't caramelize, l also put 3 drops of vanilla into the pan and stirred until everything looked combimed.
I left it in the pan to cool, and kept picking out the small pieces to taste.
I don't think there will be any left to put away for later!!
Now l can eat it without guilt, or worried about raising my blood sugar !!!

If you wanted to make crushed walnuts in heavy syrup like you used to get as ice cream topping years ago, would you just add a little water to this recipe, or would you use some Karo syrup? I have looked everywhere to buy the nuts in syrup, but can’t find them anywhere. We were in Gulf Port, AL a few years ago at a little ice cream shop and our banana split had the old fashioned nut on it. I asked the owner where she found them and she told me that she never could and had to make her own.
