You can brine with just kosher salt- called a dry brine. And you can cut your chicken breasts in half , putting your hand on top of the breast and slice halfway thru, like a bagel, so it thins the chicken breast like if you had pounded it!
I brine all the time, chicken and pork. I add fresh garlic, fresh thyme, fresh sage, black pepper corns etc. Everything comes out so flavorful and moist.

I have brined my chicken and it makes it WAY TOO SALTY for me!!! I have to be careful of my sodium or I retain fluids so I won't brine but I found that I LOVE smoked paprika flavor.... a new spice for me! I also do the same as you when cutting the chicken breasts up I just snip them in half and then skip the step of pounding them out..... works fine.... the secret to great chicken in the air fryer is spraying it with enough oil and removing it before it overcooks. Never brined. First time tonight……done in the WW airfryer with suggested spices minus the additional salt after having brined the chicken……….wow!! I will ALWAYS brine the chicken from now on.
Brine! I’ve made this exact recipe but in my oven instead because I make a lot at once. I freeze some breasts whole and some sliced and packaged in individual servings to use in salads, wraps etc. It’s so good that even after the chicken is defrosted and reheated it’s still juicy! The only thing I would suggest is that you dissolve the salt in the water before you add the chicken.
I just bought an air fryer and I tried making boneless chicken breast but I bought the Purdue ones that come in the individually wrapped ones so they're thinner and I cooked them in the air fryer like it told me in the little packet when I bought the air fryer it tells you the temperature and the times and it was like dry dry hockey puck and it completely overcooked it
Never brined! A couple of comments that might help down the road. Move the Air Fryer away from the wall. Spritz oil in the fryer basket (lightly oil) your chicken won't stick. Also use parchment paper on the bottom (easy clean up) Amazon prime has packs of a hundred to fit the bottom of your basket.Last season and spritz both sides of your food It will taste better. I use Chosen Foods Avocado oil (higher smoke point) comes in a spray.
I noticed you did not season both sides of the chicken before you put it in the air fryer.... So you cooked it at 380 for a total time of what? 10 minutes for side so 20 minutes total??
It was delicious!!! I cooked for 8 minutes. Flipped and cooked for 5 more. The best way is to check the internal temperature is 165 degrees..... Hope that helps !

See it all the time then when I go to use it it disappears.) it a plot to have me go buy a new item(s)or to drive me crazy looking for the item(s).

Also they omitted the salt in the rub. I hardly ever use any salt and am concerned about my salt intake so I’m sure it would taste salty to me too so I’m going to try doing this.

Don't brine it too long and if it's table salt, use less

yes, I have brined often I like water, cider vinegar and a little soy sauce for a chicken brine. before I barbq it.
