I found your spelt bread recipe on your website, so will definitely try it next time. The one I made today uses 415ml of water per 508g of flour, which was a sticky mess. So I added an extra cup and half flour to get the texture just ok. Thanks.

Yes you can leave the egg out but add a tablespoon of oil. I haven’t used a flax egg in this recipe. The whole packet of yeast will be fine. I have done this before ä.

Hi there. I’ve never used a bread machine. If it’s crumbly then you need more water and a dash of oil. Like olive oil. I find that you need a sticky dough to ensure a soft bread. It is trickier to handle but worth it. How to Make Spelt Bread - ruclips.net/video/9d9ZcXfgR3o/видео.html. If you’re using 100% wholegrain flour that’s hard to achieve the right texture. Also what I’ve discovered is don’t over knead. Good luck, let me know if it works.
For this original recipe with white spelt flour 1 ts seemed enough. Many of my other recipes use a packet especially if there's no egg and with wholegrain flour. If you're unsure add the packet it won't affect the buns.

The reason i prefer using the scales is that you get far more accurate results. As well cups and spoon sizes vary all over the world. Eg UK and Australia are different from the USA. I hope this helps. I would highly recommend investing in scales if you want consistent results.

Hi Esstremni thank you for trying my recipe and reaching out to clarify. In a very brief answer, white spelt is similar to white regular flour but it is healthier. Spelt wholegrain is also called , wholemeal or integral in some brands and countries it is similar to wholegrain regular flour, less processed that they white spelt flour and more grainy bits. But the texture will vary from brand to brand. Even though it is not 100% gluten-free, the grain is more water-soluble than wheat, therefore the body is able to digest spelt flour better than regular flour. I find I don't get the same side effects I do from eating regular white all purpose flour. tsuemareep.com/what-is-spelt-flour/. The moisture content when making dough will vary depending on the brand of flour and the temperature of your room or climate where you live. With practise you become more confident in handling a sticky dough. if you find it far too sticky add a little more flour during the dividing process. I hope that answers your questions. These are what we have for hamburger buns. Sorry for not cutting them open. I often use what I film for dinner and that day I needed to keep them uncut.
I don’t think it matters. It just means it might be more hydrated and you need to crack another egg to glaze the tops. I hope that they still tasted good!

Yes the mixer does the kneading also when baking with spelt flour it doesn’t require as much kneading as wheat flour.
