lorraine gartrell - Using spelt for banana bread and pumpkin bread is one of my favorites.. this kind of bread recipe works well using other flours. Even using spelt in sourdough can work but you can only add a certain percentage to still maintain a decent rise and open crumb but they are still delicious. Clean eating is important to me, its when I feel the best. I didn't know much about spelt, and was looking into it before diving into a sourdough discard recipes that call for it. I see it a lot in discard recipes, and now that I make bread for my whole family to be healthier I have a lot of discard, and discard recipes have become life because I am just not a wasteful person! It is great to combine both of those things because the naturally fermented sourdough eats or pre-digests the gluten and makes our digestion so much easier and using Spelt also makes our digestion easier hence, less inflammation. I made a sourdough bread using One Degree 300 grams of Spelt and 200 grams of bread flour. I also added black sesame seeds. It was delicious and very sour which is the way I like it. It didn't rise as much as it would without spelt but it was healthier. That is the trade off. I may try 400 grams spelt and 100 grams bread flour. I did do a 500 grams spelt flour and it didn't rise much. I added hemp seeds, sesame seeds, ground flax seeds and pumpkin seeds. It was a very dense loaf but not as sour. I may need to add more water next time. But it was delicious and even better when toasted!

Victoria Johnson- I don't use coconut flour much these days so that one I am not sure about but there are some good coconut flour cookbooks that may guide you. First of all don't attempt to use either coconut or almond flour in recipes that need gluten like breads. If you are using it to make cookies or breads like a banana bread then it would work. Gluten-free baking is tricky as you need usually to add some kind of gum and that is why many of the pre-mixed gluten free flours are popular as all that is figured out. When I use almond flour in my crust recipes it comes out a bit more like a cookie crust due to the lack of gluten but it is still delicious. Sharon Brown - I am sure you can mix Spelt & Wheat flours although I have not done it so much. The Whole wheat flour will be a bit stronger in texture and flavor, but sometimes you want that in a recipe. Give it a try and let me know how you like it. Seagull Livingstone- So you mean when you made bread with spelt your dough was too wet and you had to add more flour? That is strange because usually whole grain flours need more water added since they seem to soak it up easier. Or do you mean once the dough was made you needed more flour on the bench as it was stickier? Please describe your issue... I am curious... Spelt bread would be similar to whole wheat ...and harder to rise into a big ball due to the gluten getting cut by the sharp bits of the covering of the grain. Thanks for watching and commenting. Jenkjenk- Yes I used my spelt flour for breading my oyster mushrooms and it worked great. It will taste different but if you like the whole grain flour flavor then go for it. If you are not sure then the first time you try it do a 50/50 mix with All Purpose flour and then see how you like that before you do a batch with 100% spelt. I bet you will like it though! A little surprised you don't mill your own flour, buy the wheat berries and mill your own it is soooo much better than any you can buy already milled. A little table top mill is about $350 and you just mill as you need, takes about 45 seconds to mill a pound of flour
FYI. I have used spelt for banana bread and pumpkin bread recipes and they were delicious 😋 Also used for pound cake.

I have to say I make beautiful light fluffy bread with just Spelt flour but use fresh yeast I actived first, and that's in a machine
