I’ve tried sourdough with with just white bread flour and I was not successful at all, but after watching you using rye grain and grinding it yourself, you’ve given me the courage to try it your way. I’d love to know where you get your aprons from. I’m just in love with the one you are wearing in this video with the beautiful birds on it. Mary, I tried this starter recipe and by day 3 I thought, hmmm not sure about this one but I persisted and by day 5 it was more than doubling and passed the float test - I’m sorry I ever doubted you! I love how calm and thorough you are in all your videos. I have never saw a better cooking teacher in my 41 years. My grandmother always expected me to catch on by "eyeballing"..and wouldn't give me the opportunity to write down recipes that meant so much to me to learn and pass on to my children. Hello Mary, this is Debbie, Bob's better half 😀. I am on my second starter. My first one failed because the flour was old. (I didn't look at the expiration date as it was just purchased.) Got fresh flour. It's really cold here and my starter just wasn't working well. On day 5 I fed the starter and turned on my oven light. Wow what a difference. Made the sponge and popped it back into the warm oven. Woke up to success! It's taken 7 days and I didn't give up. Thank you for "holding my hand"
If you have a microwave or toaster oven, you can set it in there too and it should work too because it keeps it from any drafts. Just make sure not to put it in a recently used microwave, it’ll be too warm/hot. Another good spot is on top of the fridge because higher=warmer. These are my tried and true. A really sweet gal from overseas also gave me some recommendations a while back. Her house gets unbearably cold…like unlivable cold because the cost of fuel is astronomical over there and so she plugged in a seed-starting mat, stuck it in her cold oven and placed her starter/dough above that.
Mary, you are such a blessing to all of us trying to learn the traditional ways of cooking that have been preserved for generations. You also have such a sweet soul and pleasant manner of teaching. I followed your instructions & I now have a no discard sourdough rye starter! 😍 It took me 4 1/2 days to see lots of tiny bubbles, but I did a 5th day, just to be on the safe side. Now, I’ll prepare my sponge! Then I’ll follow your no knead bread recipe! Thank you so much! ♥️
I can’t tell you in words Mary but so happy and grateful I found you! Your recipes and videos are very helpful and easy to understand. After months thinking how I will do sourdough bread and all the confusion in other videos scales and a bunch of stuff too much for a busy mom like m until I found you. After this recipe I began my starter and after 5 days uffff I made my bread and I wish I can put pictures of. It was beautiful and delicious. The starter my aunt gave me is made with instant potato flakes and beer. Feed it once a week with water, potato flakes, sugar. I use it to make sour dough bread with bread flour.
I have that exact Vita-Mix and it’s still going strong! I’ve used it to grind my own wheat and love that. I don’t care for rye bread, so I’m glad to learn you can make other breads using the rye starter. I’ve made bread many times before, but am just starting on a sourdough journey. This worked great! Thank you so much! By DAY 3 my starter was bubbling like crazy!! I used Arrowhead Mills Organic Rye Flour and Spring water. I’m so excited. I usually use whole wheat flour in my starter but it has never had this much activity! Than you💞
I've never seen a Vitamix like yours! I have one, but it's about 10 years old. What I love about your channel is that you use what you have. No matter how long you have had it, you use it. I feel like some RUclipsrs will just buy updated products (or maybe their gifted by manufacturer) just to push a product. I love that you will go out of your way to tell us how to make things without having to buy anything and using what we have. Don't get me wrong, I am a gadget lover, but I also appreciate having options for when I just don't want to buy another gadget. Thank you for your well-explained, in-depth, and educational videos. Yes, I feel so strongly that I never want the lack of kitchen equipment or the lack of ingredients to stand in the way of people being able to make traditional foods. That is why I like to show different ways to make things and how to substitute ingredients. And I am also very frugal. I always use what I have - and when I buy something, I usually go to a kitchen outlet or clearance store. I don’t mind if something has a little ding in it! Yay! I am finally ready to graduate to the next video for the next step!! I have watched this video or parts of it at least a dozen times as I have prepared my first starter and about to make my first loaf of sourdough bread! I already successfully made the No Knead Sandwich Bread which I was so incredibly proud of, & at the end of the that video Mary said it is time for this one. Hi again..the easiest way to make a starter,is to brake into little pieces a piece of sourdough rye bread,add 4 cups of warm water ,3 cups of rye flour (preferably freshly ground),cover with a cloth,put in a warm place,stir firmly every once in awhile,when it forms bubbles, in about 12 - 14 hrs, its ready for use! Take half a cup aside ,put in the refrigerator or freezer (you may add flour into it),,when you want to make bread again,defreeze it, add warm water and flour, to form a runny porridge(,take half a cup aside for next time),add flour to bake a bread, and on and on it goes...easy....love your videos!!! My husband loves sour dough rye loaves and I have tried 3 times to make a starter using other instructions that make a huge batch, has to be fed weighed flour daily etc. They failed spectacularly. We have lived for the past 2 years in our RV but now we have decided to buy a house and have a "home base", I'm so ready for it! OhMiGosh Mary! I began a sourdough starter of my own, following your instructions in this video (I think. I'm pretty sure...) Using Bob's Red Mill Dark Rye Flour and filtered water, I had bubbles starting to form at the end of the first 48 hours! I had heard that oxygen would help to form the natural acidic "hooch" that gives the starter that wonderful extra sour flavor, so I stirred it up a few times. And, I will continue to stir it and let it take its time to develop the good flavor that I am so hoping for. Thank you for all your instruction/tips/tricks!! Also, I had seen another RUclipsr had named her starter (Bready Vedder) and wondered if and what I would name mine. Well, I decided on "Yeasty Boi", but then I thought of "Bready Lamar" and THAT'S what name I'm going to stick with. Thanks again!

Rye flour and pineapple juice works 100% every time.. look it up! there are some videos on it already but it has to do with the acidic pH environment and the cultures found in rye flour that seem to make the most 'efficient' starters
Since i'm new to making it I experimented using All Purpose flour, Barley flour, and Organic Red Wheat flour. AP Flour took about 7 days to get bubbly and rise (and it's not unbleached) at this point I was like "am I doing this right?", the Red wheat flour didn't rise as high but it only took about 4 days to get it to rise and get bubbly. (I mark the container I use so I know when the starter has doubled). For a few weeks I fed them every day and used my discard to make crackers and pancakes. Now I keep them in the fridge and bring them out to rest on the counter a few hours, then I feed them, wait for the rise, the float, then on to baking. I love the Red Wheat flavor in the bread. I use bread flour or even AP to bake the bread, but I use the Red Wheat starter. Just took a loaf out of the over a few minutes ago and it looks lovely, can't wait to cut into it later today.
Mary , as a child we all loved Friday bread . You’ve guessed it, the last loaf of the week from the “mother”, made on Monday😂 Granny was a Calvinist so no baking was done on the Sabbath so the best bread may have been “started” on a Saturday but by the following Friday we enjoyed “sourdough”. So many men taking over the simple craft of women from bygone years and making it a mystery. Xx
Thank you for your kitchen wisdom, very grateful in finding your web site. I have a few questions to ask you. 1: do you ever change your starter to a clean bowl? I notice the dish gets crusty, but I am worried of throwing off the balance of the bacteria and the yeast. 2: I have chosen to begin with a whole wheat starter. By day 4 it was foamy and sticky and I took one cup out and replace it with a half of a cup of whole wheat and the same with my well water. In the meantime I made some beautiful blue berry muffins; which my family loves. But it isn’t as foamy or sticky after I feed it. This is the second day after the muffins, and I kept feeding the starter a half a cup of water and flour. Should I add more flour with equal amounts of water? Or, should I have replace it with whole cup of flour and water? Looking forward to your reply, Sheila
I made this starter. I used a half pint canning jar. By day 4 it had raised and overflowed my jar! I’m ready to make sourdough bread! Thank you for your recipe!!
I made the no kneed recipe and it was fabulous! I can’t believe how much it raised. The crust was crunchy and inside was soft with lots of “holes”. Not a lot of sourdough flavor but I think that will come as starter matures.
Hi Mary! Do so enjoy your videos. Got a kick out of your ol' Vitamix! I have nearly the same one. It still grinds grains like it did when it was a 'kid', but I also add sourdough starter to the flour with water, give it a back and forth twirl a few times, cover the top and let the dough rise in the container. When it doubles, I add the rest of the ingredients and pulse the motor back and forth to kneed the dough well. When that is done, out rolls a pan ready ball of wonderfulness ready for final rise and then to head to the oven. Those old machines were designed to make bread. Love mine, so much in fact, I found another one for $15.00...nearly unused and snapped it up as a reserve. Have a new one, but it is not near the hefty, work horse as the great oldy, goldy ones. BTW...I moisten 1/4 C. corn meal to add to the sourdough and it makes the greatest, crunchy morning toast. Also, I use a childs rubber hand ball as a stopper for the feed shute. Same ball for more years than I will own up to! Keep on sharing your wisdom - I am a fan.
Mary I just cannot get sourdough to start like this! I have tried it so many times. So in the end I used kefir and flour - and wow, that worked!! In 12 hours it was climbing out of the bowl. So I have made a few delicious loaves now, and I'm still going!
I am so excited to hear this!! Are you familiar with Cultures for Health? They say that getting a starter going is a real experiment in discovering what works best in your kitchen. It may be flour and water, it may be flour and yogurt...or as in your case...Kefir, or it may be using fruit or fruit juice...on and on and on. I am so happy that you found what works for you! I much prefer the recipes that don’t involve discarding from the starter (even though you can use the discard in other recipes). Thank you for sharing your approach! ❤
Another great video of traditional and healthy foods. Thanks. I am very interested in this bread because I have an allergy to milk (not just a lactose intolerance) and besides tortillas and lefsa (traditional flat bread from potatoes) bread doughs contain milk, so this is working out for me and my leaky gut syndrome as well. A friend just gave me a starter that has been in the family for 125 years! So light and fine, almost a bit sweet, unlike any I've ever had. Great to know how to make this homemade from scratch.
You should see some of the messes I've made in the kitchen making doughs, pasta, noodles and such. Have to use a shop vac and a leaf blower for clean up. I'll give it a try, it's the mad scientist in me, but I'll probably end up sweet talking my friend and his wife to make a few extra for me as she makes a big batch of biscuits every week for their church functions and they feed the needy from the street or anyone who shows up hungry. Your video is excellent also because you show how to make a starter from scratch. Thanks again.
Hi Mary! I’ve been watching you on RUclips. I tried three times to get a sourdough starter going. I didn’t succeed until the 4th time. In 5 days my starter is about to overflow the jar. Since I’m not ready to use it can I put it in the refrigerator to use later? I love your RUclips channel! You are easy to follow for a 75 year old beginner. Mary..,,., I must have done something wrong. I never saw bubbles. My rye flour was a couple months old. I’ll have to try again, I’ll grind my own whole wheat since I have whole grain. This is like my 4th time trying to make a sour dough starter. I will conquer this👍🏼. I love the fact you don’t throw out all the extra starter.
So sorry - I just saw this comment!! Oh my goodness!! I am so sorry that this is giving you some trouble. Yes, the old flour can be harder to get a good sourdough starter going. Fresh is best - and fresh ground is even better! As a substitute, whole wheat flour - especially fresh ground - is a great second choice. What I would recommend is that you feed your starter more often than the process I go through in this video. Follow the same steps - just shorten the feed times. Everyone's kitchen is different - and for some reason - to get a starter going in your kitchen, it may need more frequent feedings. Let me know how it goes. We will work through this together! Hi Mary, years ago, a place I used to work, we were sharing a sourdough starter. We made pancakes and all kinds of goodies with it. This brings back fond memories.
I started a starter with bread and wheat flour, it was doing ok but after a week it still wouldn't pass a float test. I got very lucky and the little hole in the wall grocery store next to my house carries organic dark rye flour. After two feedings with this flour my starter looks 100% better. I am new to all this and your channel has been great. Thank you!

Hello Mary, this is Debbie, Bob's better half 😀. I am on my second starter. My first one failed because the flour was old. (I didn't look at the expiration date as it was just purchased.) Got fresh flour. It's really cold here and my starter just wasn't working well. On day 5 I fed the starter and turned on my oven light. Wow what a difference. Made the sponge and popped it back into the warm oven. Woke up to success! It's taken 7 days and I didn't give up. Thank you for "holding my hand"
If you have a microwave or toaster oven, you can set it in there too and it should work too because it keeps it from any drafts. Just make sure not to put it in a recently used microwave, it’ll be too warm/hot. Another good spot is on top of the fridge because higher=warmer. These are my tried and true. A really sweet gal from overseas also gave me some recommendations a while back. Her house gets unbearably cold…like unlivable cold because the cost of fuel is astronomical over there and so she plugged in a seed-starting mat, stuck it in her cold oven and placed her starter/dough above that.
Mary, you are such a blessing to all of us trying to learn the traditional ways of cooking that have been preserved for generations. You also have such a sweet soul and pleasant manner of teaching. The starter my aunt gave me is made with instant potato flakes and beer.
Feed it once a week with water, potato flakes, sugar.
I use it to make sour dough bread with bread flour.
I have that exact Vita-Mix and it’s still going strong! I’ve used it to grind my own wheat and love that. I don’t care for rye bread, so I’m glad to learn you can make other breads using the rye starter. I’ve made bread many times before, but am just starting on a sourdough journey. I feel like some RUclipsrs will just buy updated products (or maybe their gifted by manufacturer) just to push a product. Hi again..the easiest way to make a starter,is to brake into little pieces a piece of sourdough rye bread,add 4 cups of warm water ,3 cups of rye flour (preferably freshly ground),cover with a cloth,put in a warm place,stir firmly every once in awhile,when it forms bubbles, in about 12 - 14 hrs, its ready for use! Take half a cup aside ,put in the refrigerator or freezer (you may add flour into it),,when you want to make bread again,defreeze it, add warm water and flour, to form a runny porridge(,take half a cup aside for next time),add flour to bake a bread, and on and on it goes...easy....love your videos!!! My husband loves sour dough rye loaves and I have tried 3 times to make a starter using other instructions that make a huge batch, has to be fed weighed flour daily etc. They failed spectacularly. I'm new at this sour dough starter thing, so I'm watching your videos to learn. We have lived for the past 2 years in our RV but now we have decided to buy a house and have a "home base", I'm so ready for it! Hello Mary, I just baked my first sourdough bread today it turned out delicious. I use your recipe for Busy Mothers Sourdough Bread. I also made your fool proof starter with Rye organic flour. I'm going to bake that one tomorrow. Thank you for your great step by step teachings.
OhMiGosh Mary! I began a sourdough starter of my own, following your instructions in this video (I think. I'm pretty sure...) Using Bob's Red Mill Dark Rye Flour and filtered water, I had bubbles starting to form at the end of the first 48 hours! I had heard that oxygen would help to form the natural acidic "hooch" that gives the starter that wonderful extra sour flavor, so I stirred it up a few times. And, I will continue to stir it and let it take its time to develop the good flavor that I am so hoping for. Thank you for all your instruction/tips/tricks!! Also, I had seen another RUclipsr had named her starter (Bready Vedder) and wondered if and what I would name mine. Well, I decided on "Yeasty Boi", but then I thought of "Bready Lamar" and THAT'S what name I'm going to stick with. Thanks again!

Rye flour and pineapple juice works 100% every time.. look it up! there are some videos on it already but it has to do with the acidic pH environment and the cultures found in rye flour that seem to make the most 'efficient' starters
I was sold at the smile Mary!!
Since i'm new to making it I experimented using All Purpose flour, Barley flour, and Organic Red Wheat flour. AP Flour took about 7 days to get bubbly and rise (and it's not unbleached) at this point I was like "am I doing this right?", the Red wheat flour didn't rise as high but it only took about 4 days to get it to rise and get bubbly. (I mark the container I use so I know when the starter has doubled). For a few weeks I fed them every day and used my discard to make crackers and pancakes. Now I keep them in the fridge and bring them out to rest on the counter a few hours, then I feed them, wait for the rise, the float, then on to baking. I love the Red Wheat flavor in the bread. I use bread flour or even AP to bake the bread, but I use the Red Wheat starter. Just took a loaf out of the over a few minutes ago and it looks lovely, can't wait to cut into it later today.

Mary , as a child we all loved Friday bread . You’ve guessed it, the last loaf of the week from the “mother”, made on Monday😂 Granny was a Calvinist so no baking was done on the Sabbath so the best bread may have been “started” on a Saturday but by the following Friday we enjoyed “sourdough”. So many men taking over the simple craft of women from bygone years and making it a mystery. Xx

Thank you for your kitchen wisdom, very grateful in finding your web site. I have a few questions to ask you. 1: do you ever change your starter to a clean bowl? I notice the dish gets crusty, but I am worried of throwing off the balance of the bacteria and the yeast. 2: I have chosen to begin with a whole wheat starter. By day 4 it was foamy and sticky and I took one cup out and replace it with a half of a cup of whole wheat and the same with my well water. In the meantime I made some beautiful blue berry muffins; which my family loves. But it isn’t as foamy or sticky after I feed it. This is the second day after the muffins, and I kept feeding the starter a half a cup of water and flour. Should I add more flour with equal amounts of water? Or, should I have replace it with whole cup of flour and water? Looking forward to your reply, Sheila

I made this starter. I used a half pint canning jar. By day 4 it had raised and overflowed my jar! I’m ready to make sourdough bread! Thank you for your recipe!!
I made the no kneed recipe and it was fabulous! I can’t believe how much it raised. The crust was crunchy and inside was soft with lots of “holes”. Not a lot of sourdough flavor but I think that will come as starter matures.

Hi Mary! Do so enjoy your videos. Got a kick out of your ol' Vitamix! I have nearly the same one. It still grinds grains like it did when it was a 'kid', but I also add sourdough starter to the flour with water, give it a back and forth twirl a few times, cover the top and let the dough rise in the container. When it doubles, I add the rest of the ingredients and pulse the motor back and forth to kneed the dough well. When that is done, out rolls a pan ready ball of wonderfulness ready for final rise and then to head to the oven. Those old machines were designed to make bread. Love mine, so much in fact, I found another one for $15.00...nearly unused and snapped it up as a reserve. Have a new one, but it is not near the hefty, work horse as the great oldy, goldy ones. BTW...I moisten 1/4 C. corn meal to add to the sourdough and it makes the greatest, crunchy morning toast. Also, I use a childs rubber hand ball as a stopper for the feed shute. Same ball for more years than I will own up to! Keep on sharing your wisdom - I am a fan.

Mary I just cannot get sourdough to start like this! I have tried it so many times. So in the end I used kefir and flour - and wow, that worked!! In 12 hours it was climbing out of the bowl. So I have made a few delicious loaves now, and I'm still going!
I am so excited to hear this!! Are you familiar with Cultures for Health? They say that getting a starter going is a real experiment in discovering what works best in your kitchen. It may be flour and water, it may be flour and yogurt...or as in your case...Kefir, or it may be using fruit or fruit juice...on and on and on. I am so happy that you found what works for you! Thank you SO much for sharing this!! 🤗❤️🤗

Another great video of traditional and healthy foods. Thanks. I am very interested in this bread because I have an allergy to milk (not just a lactose intolerance) and besides tortillas and lefsa (traditional flat bread from potatoes) bread doughs contain milk, so this is working out for me and my leaky gut syndrome as well. A friend just gave me a starter that has been in the family for 125 years! So light and fine, almost a bit sweet, unlike any I've ever had. Great to know how to make this homemade from scratch.

You should see some of the messes I've made in the kitchen making doughs, pasta, noodles and such. Have to use a shop vac and a leaf blower for clean up. I'll give it a try, it's the mad scientist in me, but I'll probably end up sweet talking my friend and his wife to make a few extra for me as she makes a big batch of biscuits every week for their church functions and they feed the needy from the street or anyone who shows up hungry. Your video is excellent also because you show how to make a starter from scratch. Thanks again.

Mary is there a rule of them amount of "starter sponge" you would use per cup of dry flour? I most often make a bread using just 3 cups of dry flour.

Mary..,,., I must have done something wrong. I never saw bubbles. My rye flour was a couple months old. I’ll have to try again, I’ll grind my own whole wheat since I have whole grain. This is like my 4th time trying to make a sour dough starter. I will conquer this👍🏼. I love the fact you don’t throw out all the extra starter.
So sorry - I just saw this comment!! Oh my goodness!! I am so sorry that this is giving you some trouble. Yes, the old flour can be harder to get a good sourdough starter going. Fresh is best - and fresh ground is even better! As a substitute, whole wheat flour - especially fresh ground - is a great second choice. What I would recommend is that you feed your starter more often than the process I go through in this video. Follow the same steps - just shorten the feed times. Everyone's kitchen is different - and for some reason - to get a starter going in your kitchen, it may need more frequent feedings. Let me know how it goes. We will work through this together! I started a starter with bread and wheat flour, it was doing ok but after a week it still wouldn't pass a float test. I got very lucky and the little hole in the wall grocery store next to my house carries organic dark rye flour. After two feedings with this flour my starter looks 100% better. I am new to all this and your channel has been great. Thank you!
