    Nice! The best thing about the cold times of the year: I will be baking bred again 😊 I don't eat bread over the summer. Homemade pizza , bake it on the grill every now and then, especially with tomatoes and basil from the garden.
    I remember the finger poking well, when mom made sweet yeast breads, I do it too!

    You’re adorable! So pleased I found you! By the way, when I lived in Ireland I was told that scoring the top of Soda Bread before it was baked was to let the fairies out 😊 Much the same for Sourdough I suppose 😊

    Oh Mary thank you so much for this great recipe. I'd made my sourdough starter but have been put off by all the fuffing around for hours to make a loaf of bread. I've just followed your instructions and made my first sourdough loaf. I'm so happy. My home smells great and I now know I can make a loaf every couple of days without all the hassle. Regards Julie x

    Hello Mary! I love your channel. I just found out I'm allergic to gluten in wheat, barley and rye, I'm so sad. I love my sourdough bread very sour. I can't wait to try this recipe to see if I can digest the bread. The ancient grains are suppose to be easier to digest. I have been doing some research, so I don't continue to get sick every time I eat gluten. Any help or suggestions you may have will be greatly appreciated ;>)

    Hi Mary, I have just been binge-watching your videos on sourdough, and I love them. I went shopping and purchased some wholemeal flour and when I got home I realised it's Self-raising flour. Can you use self-raising flour in place of plain flour?

      Hi Kristine, Thank you so much for visiting and for the kind words. You ask a very interesting question! "Live Lactobacillus and other probiotic bacteria may have health benefits. Of course, the cooking process kills these bacteria. By this time though, the bacteria have already created lactic acid, which allows the vitamins and minerals present in the flour to be more easily digestible. The fermentation process helps to neutralize the phytates found in flour that inhibit absorption in yeast-leavened breads and also makes the overall glycemic index of sourdough breads lower, lessening your body's spike in insulin production after eating it."     Hi Mary!! Just found your channel and I'm so excited about your sourdough recipe! I'm struggling with rise even though my starter seems active. Only difference is I am using home ground spelt/soft wheat. I noticed your spelt is not as high as your white flour. Do you have any tips for a higher rise with home ground flour??

    Hi Mary, thanks for this video! I was wondering regarding your remark about using the discard for baking goods.
    My intend is to bake bread from 100% "discard" or sourdough and my question is then; what is the ratio of that to water? Is this even doable?

    Hi Mary! I think you are amazing and sweet! Thank you sooo much for sharing your knowledge with the ones less knowledgeable, like me. Lol..... I have a very important question. I have a daughter with a lot of digestive problems and I only want to give her bread that is “fermented and digestible”. Is this bread consider that? Does the flour need to be fermented first, for example? I’m super knew to the fermentation world. Please kindly advise. Thanking you in advance. 🙏🙏😘😘

Yes, this bread is “soured” as it is sourdough. “Souring” is basically a form of fermentation. You will need to try having your daughter eat various traditionally prepared foods...bone broth, cultured dairy, ferments, sourdough, and soaked and sprouted grains, nuts, and legumes to see what agrees with her digestive system.       OMG!!! I knew finding you was a blessing! As soon as your reply came in, you made me cry (a very good cry ❤️❤️). I can’t thank you enough for your reply. I knew the moment I found your first video (in fact, about bone broth) that I would learn a lot from you and that you would help me with my frustrations about how to help my daughter with her issues. She is only 17 years old and her esophagus is lacerated and she suffers from panic attacks and other phycological issues. 😭😭. Ive been learning a lot that a sick gut “creates” a sick brain. I hope it makes sense what I just said (english is my second language). I’ve been reading The Gut and Phycology Síndrome’s book and it saddens me to learn how much we humans have failed on feeding our bodies the right type of foods and wrecked our immune systems. I’ve been always a very “healthy” person, or so I thought, until I realized that all those “grains” we’ve been eating, for example, thinking that we were eating the “right” foods, were doing perhaps more “harm” then good for I did not know they needed to be fermented first to get rid of the anti nutrients for them to be digestible.
      Right now I’m making milk kefir, water kefir, kombucha, soaking all my grains, just baked my first sourdough bread two days ago. It wasn’t perfect but delicious. I’m sooo excited about joining this wonderful world of fermentation. My girls are calling me the “fermentation mother” already. 😂 I still need so much to near. I have sooo many question but I’ll be patient and do my best. THANK YOU! THANK YOU! You are definitely an Angel of a person. God will bless you for your good intentions to teach others. ❤️❤️
      I am obsessed with your videos now that i found you, and i am determined to watch most if not all of them :). And I will definitely show them to my family so in case they don’t believe me, they’ll believe you. Lol.... I wish you were my neighbor, at least. I know I will be in your kitchen helping you make all those delicious recipes learning from you .

    Looks so simple compared to all the other sourdough bread videos ive watched. Most fold several times and refrigerate the night before baking....too much work. Just wonder if i do fold a few more times would i get more air holes and a higher rise?

    Hi Mary, Thanks for the recipe. I am wondering if it is possible to put this doigh in the fridge overnight after mixing, so I can have it ready to bake in the morning? I know it worked for me with yeast before, but does this work with sourdough as well??

    Mary I would really appreciate it if you could come up with a sourdough bread from sprouted flour is it possible?

      Pauline - Pauline - Hi Pauline. You can definitely use sprouted flour in this recipe. Sprouted flour can always be substituted for any non-sprouted flour...in most recipes.       Hope Love Faith - Oh dear!! I know very little about what is safe for folks with celiacs to eat. Someone else mentioned buckwheat. You can bake with buckwheat flour and I believe it’s gluten-free. But it is better baked in a loaf pan rather than a freeform boule. And it does make a very dense bread. So slice thinly and toast.     Having worked in a bakery, I'm going to let you in on a little secret. Bakery bread isn't better than home baked because they are using perfect measurements and proofing times, it's because commercial ovens made for bakeries are always going to be better than home ovens.

    hi mary, I've been trying to make 100% whole wheat bread but all the time what I get is not dry (kind of gummy) bread inside (hydration is 75%). Could it be because I do not use salt? (I use pyrex kind of pot instead of cast iron one)

      Those are gluten free flours so you may be better off finding a gluten free starter. I found one on E Bay.

    Can you use Rye or buckwheat instead of spelt flour? I am allergic to wheat.

      Christine McClendon - Hi Christine, yes, you can use Rye flour but the loaf may be quite dense if it’s 100% rye. You may want to mix the rye with some organic bread flour or if you grind your Rye grain yourself, try sifting out about 1/4 of the bran and germ to lighten the loaf. Buckwheat is another story. It contains no gluten - but you can bake with it - but it creates a very dense bread that you will want to slice very thin and toast. And it works best if put it into an oblong bread pan as opposed to baking it as a boule. Hope this helps! Let me know if you have anymore questions.❤️😘❤️

    My bread didn't rise too much. Any ideas? My starter looks nice and bubbly I waited 2 hours to bake it and it looked like it about doubled in size but while baking it stayed the same size almost.

      Sometimes that can happen, especially with a young starter. Don’t worry. As your starter matures, your bread should rise more. ❤️🤗❤️

    very helpful. I need to start making my own bread and hopefully rolls because of IBS diagnosis. Sourdough spelt is the only gluten based bread allowed by the #Monash Low FODMAP diet that people seem to not have issues with. Can I make a starter only using spelt flour?

Thank you for sharing that spelt is the only allowable grain for the low FODMAP diet. I found that fascinating! BTW - Do you enjoy making traditional foods?       @@MarysNest it must be done with sough dough technique, not just plain spelt bread. I guess the sourdough process helps make it more easily digestible. I loved the video, very approachable for a person who has always had a fear of making bread. I'm a great cook but not a very good baker. You can also start making your starter with rye flour which is the easiest to get going and then transition it over to a spelt starter.     Hi I just followed this recipe last night and my bread turned out like a rock hard disc.
