    Hi Sweet Friends, This is a FAST and FOOLPROOF No Knead Sourdough Bread that you can make in one day. No overnight rise is necessary! And it's prefect recipe for beginner bakers. (And when I say a 1, 2, 3, ratio - I meant 1, 2, 3 as in steps. It's actually a 1, 2, 6, ratio. Thanks Michele for the correction! But either way, it's delicious.)       I watched your video 3 times before I attempted it. The ball was so dry and hard to get it to stick! Very frustrating. I added water a bit at a time, but was concerned about too much, so I'm sure it won't turn out.

    Hi Mary! Just made this recipe: I used bread flour, replaced 1/2 cup of it with whole wheat flour, and added a tsp of dry yeast for good measure. Just the right amount of bubbles, a great rise and awesome sourdough flavor. Excellent recipe for when you’re in too much of a hurry to spend a whole day making a traditional sourdough bun, this video is going straight to my favorites!

    I am trying your sourdough starter recipe. Thank you and exciting; I found dark rye flour in my grocery store. I have just canned 100 jars of green beans and ready to freeze corn. I am 76 years old and still able to do this. You encourage me. Thank you! Ohio

    Wow, I'm in shock right now lol, I'm 2 years retired from 30 years of cake decorating, never a baker. Well, I've watched tons of RUclips videos in these 2 years to learn how to bake all kinds of bread and rolls. My newest adventure has been the sourdough starter and bread, and I've successfully learned how to make a great loaf of sourdough bread with some definite learning curves along the way. I'm amazed at the absolute 💯 ease and perfection of your process and loaf! I baked today, but yesterday was prep day of stretch and folds, bulk fermentation, pre shape, final shape, proof on the counter, and in the fridge overnight... geez I feel like a nut lol, this looks so easy and amazing! Thank you, Mary 😊

      1 more question please...I have banneton baskets, and of course, I want to use them. Can I proof this dough in my basket upside down instead of on the baking pan? Then flip it out, score it, and put in the Dutch oven, like my regular way of baking? Thank you, Mary

      This is actually a quick way to make a sourdough bread for beginners who do not like too sour a taste. It’s a short fermentation so some might not consider it “true” sourdough. However…This is great for children new to sourdough. Love, Mary ❤️🤗❤️

    I just made my first loaf after months of putting it off and just taking care of my starter. (Mainly because taking 2 days to make a loaf of bread wasn't something I wanted to do.) It turned out great, and was super easy!!! Thank you!!!

    My beautiful Mary, I made the sourdough starter and this sourdough bread today. I followed your instruction without deviations, and my bread came out perfect. It looks just like yours and it tastes amazing. My husband watched me feed the starter all week and when he saw the finished product, he was very impressed. So, he named the starter Phillip. Hahaha. Seriously, he attached a name tag to the starter container. Thank you so much for teaching us. You are an excellent teacher!!!

      Same with me Ana....my family saw me growing our starter for two weeks and they were skeptical. Now they're all hooked. It has a name as well and they take care of it like it's our pet! lol

    Thank you so much! I made my first loaf with my sourdough starter following your directions and it came out great! It was definitely a hit in my house! I also tried your discard pancake recipe and my family couldn't get enough.Thank you so much for sharing your awesome and easy recipes. So many recipes out there take a long to make but you really show that it doesn't have to take long and be complicated! Thank you again!

    I've tried this twice. Both times it was really dense. Tasty, but super dense. I'm trying it again, this time I added vinegar and a tiny pinch of yeast..

    I agree 100% about not worrying about trying to get it perfect. Enjoy the delicous homemade bread. It's way tastier than store bought and also healthier without all of the additives.

      Mary's Nest yes I do love making traditional healthy foods. My bread flopped. It didn t raise well. So the second starter and sponge looked great but I might have been too busy to watch it.
      I threw it out. I ll try when I m not busy making masks😊

    Mary, ThankYou! I, also, wanted a sourdough bread that didn’t require a background in chemistry 😳😬 so I made this ‘glorious’ loaf, just today. I wasn’t sure about it, as was pretty un-risen after 2 hrs, and I was fearing this would be my very last sour dough attempt🤨, but it turned out beautifully! It’s so perfect looking! ☺️☺️My gas range runs hot, so I did it at 450°F, 25 min covered, 7 min uncovered. So, because I can, 🙃 I’m going to make one with a tablespoon of apple-cider-with-the-mother-vinegar, tomorrow. Thanks for sharing all of your valuable knowledge, Mary. Especially comforting during these crazy days. 😘

    Hi Mary. Made the sourdough recipe yesterday, used 2 cups of flour and 1 cup whole wheat. Had to add more water but it all turned out good and very tasty. Very rewarding experience for my first try at making a sourdough bread. Spending more time in the kitchen and enjoying the wealth of knowledge on your site. Thank You

    Hello Mary, I am a new subscriber 👍 I just love that you offer recipes that are easy for us beginners. Every time you say…. “but, if you don’t have ‘X’ don’t worry, it will work just as well with ‘Y’”. It always makes me smile and feel like I could try the recipe with what I already have in my pantry. I am a new homesteader that moved from the city and had take out every night, to the country (Texas,by the way) to cooking all meals at home. It has been a learning curve but you make it so easy an less intimidating. Thank you so much, prayers🙏 and love💖 Keep bringing us new ways to do the fancy things fast and easy!🙌

    I love your channel. I am a novice to making sourdough bread. I watched other people's video's and started to feel that the task of making sourdough bread was oh so very daunting and only professional bakers could achieve such a thing.     This has revolutionized how I make sourdough! So simple, so elegant … so tasty! I’ve experimented a bit, I prefer weights so I use 100-110 g starter, 300 g water, 300 g Einkorn flour + 100 g all purpose flour, 15ish g salt & 1 T. ACV. I do two strength folds instead of just one.
    This loaf comes out just as well or better than by following all those videos with long, complicated techniques. Some have you start Wed night to eat bread on Saturday! And many contradict each other as to ingredients & time. LOL.
    Now I take my starter out of fridge on Friday, feed it & have yummy sourdough for Saturday dinner!
    Truly awesome technique. I nominate Mary for the Nobel Sourdough Bread Prize!

    My sourdough starter gas finally "started" :) I followed your recipe and video. I am happy with how it turned out, although it looks like a smaller loaf than yours, and the crust is a bit hard, but tastes good. I am excited 😊

    Dang it, now I have to make bread 🥰
    Today is the first time I have seen your videos and I’m not getting anything else done !!!
    I want to tell you how happy I am to see you teach people to cook by giving them options, not only with utensils but ingredients. I love to cook and encourage others to cook but so often I hear “I can’t cook”, my response is always, “just do it, that’s how you learn” !!! Then I hear about their “fears” and how they don’t have this or that and don’t know how to do this or that and not sure when it’s ready or what it should look like and what if it doesn’t turn out....and so on 😬
    I explain how cooking is a lot of improvising, it gets easier and less intimidating once you get a feel for it and yes you may have something not turn out but that’s part of the learning !!
    You seem to have a way of taking the fear and perceived perfection out of the process and give people the encouragement to get started, which I think is wonderful because cooking is becoming a lost art !
    I’m so happy I let my kids “experiment” in the kitchen when they were young....even through all the messes and flops because they all love to cook !!!
    Thank you and well done.....now I need to go make bread 🥰

    Thank you so much for making these instructional videos filled with grace. I made sourdough as a project for my advanced foods class in college (I was a home economics major at the time!) and loved how simple it was. Fast forward 30+ years... I bought a starter, made a great loaf, then it began to fail. Not to mention it was a very tedious overnight process with many steps. I got very discouraged. Tonight I'm encouraged by you to make my own starter once again and make bread!!! We will have homemade bread for the holidays! I can't thank you enough!! XOXOXOX

    Mary, you remain my all time favorite RUclipsr. So excellent at explaining the processes. I’m a newbie at sourdough. I bought a freeze dried 100 year San Francisco recipe from a homesteader in AR. My starter is on its 6th day. I think we go to 10 days. Then, I can use it. I’m so very excited about this venture. The only thing I found with the freeze dried starter is, it won’t completely dissolve. I’ve tried a bit more warm water along the past 6 days, but no dice! Any suggestions? Mary, my best to you husband and son! We love you out here in RUclips land!!♥️🙏🏼♥️

    I just made two loaves of sourdough bread following your recipe. I made one from a starter I started another from a very old starter that was given to me. It was super easy, the way you explained it made it so easy. They look perfect 👍 I can't wait for them to cool and cut into them 🤤

    Mary, you are such a gift! I have spent the past several years attempting to repair the ruins of my lack of traditional cooking skills since I was raised on packaged foods. You remind me so much of Julia Child! She was a natural teacher and brought so much joy to the kitchen and made seemingly complex recipes and skills attainable.     Cannot tell you how much I love this. I have a sourdough loaf fermenting in my fridge that I started two days ago. Will likely cook it tomorrow. But as a very busy (who isn’t these days) wife, mom, full-time nurse as well as having pets and a decent sized family farm (about to go milk goats now), I don’t always have time, energy or the inclination to do a very involved, timed, hands-on sourdough. Sure, I do regular yeast doughs frequently. But I love sourdough and have a very active starter. I want my family to have the benefits of sourdough - and they love it - but I cannot always make the time commitment. There are plenty of “same day” sourdough recipes, but this makes it so easy to follow, concise and beginner friendly. And I love listening to your soothing voice and manner. It’s relaxing and non-stressful. Which we all could use a little more of in our lives. Thanks again!

    Mary I made the bread today as I just finished my starter and my bread came out perfect. I did put mine in a large glass casserole dish with a lid and I put polenta in the bottom of the baking dish and I sprayed my doagh with water before I put it in the oven. My bread came out better than the grocery store! Thank you so much, God bless you

    This reminds me of a bread I had that came from Italy. It was a traditional Italian restaurant with a northern flair. Also it reminds me of a bread my mom said her mom used to make in South Dakota. I’m gonna have to try it

    Hello Mary, I tried your recipe for No Knead Sourdough Bread but had a couple of problems. No 1 after carefully measuring the ingredients the dough was very sticky and difficult to work with I had to add more flour when trying to shape it. No 2 although there were lots of holes the bread was very heavy and doughy and sticky despite me cooking it for an extra 10 mins.

    Made yesterday 2/2/22 using foolproof sourdough starter with rye flour. Thank you for both tutorials. This bread was so easy to make and a big hit in our home. Most of the loaf gone before we went to sleep and it was done baking about 6pm so that says a lot. I learn much from your videos and am grateful for your wonderful teaching style. God bless!

    The polenta I used kept the bread from burning on the bottom! It worked so well and like I said my bread came out perfect! Thank you so much, God bless you

    Good Morning, Mary, I have been making bread for about 7mos and at first, was hesitant but following step-by-step recipes works excellent for me. I find the recipes that are somewhat easy, there are a lot of bakers whom I have learned, But when you present a recipe I am very intrigued, explanation your calm voice along with logic in the way of doing things.     Lordy! I love that Mary scrapes the bowl. That’s how I learned from my mom who is 103yrs old. Mom learned, of course to not waste a bit, and taught us of “the hungry 30’s, when things were scarce. :) I squirm and will turn off cooks, chefs or bakers that aren’t conscious of the privilege they have to be able to bake anything, let alone have their own 15 minutes of fame on RUclips. Mary is the real thing!!! Now my husband will nudge me and suggest I “turn Mary on” for new ideas. 😂 👏

    I'm so glad you talked about not worrying about the rise of the dough. Sourdough was so overwhelming that I stopped for 3 months then I started again. I'm trying my second sourdough today.

    just for clarification, one 1/2 cup of starter, two 1/2 cup of water(which is 1 cup), and 3 CUPs of flour. That's the 1:2:3 ratio, right?

      I tried the 1, 2, 3 method. Do a search as this is a method I played with and learned from the fresh loaf. I know it as 1 part starter, 2 parts water, 3 parts flour. So it’s like 100g, 200g, 300g. Not 3 cups flour if you’re using 1/2 cups. Better to weigh, trust me, I’m a home bread baker and been doing no kneads for years.
