I'm new to bread making, especially working with whole grains and ancient grains. I've never used spelt flour. I had some organic sprouted spelt flour so I made your recipe, used maple syrup instead of sugar... You gave wonderful instructions. Didn't have a mixer so I hand kneaded the dough. The bread came out beautifully. The taste is delicious. I was pleasantly surprised. This recipe is a keeper, so easy! Thank you, subscribed.

I had organic spelt flour so I watched your video through then pretty much paused as I went through it a second since I was making it as I followed. Thank you for this recipe, personally based on the family's suggestions, I have added around 50-60ml more water, the dough is stickier to handle but the bread is less dry the following day. I hope your channel gets the recognition it deserves ❤

I recently invested in an electric mill grinder and now grind my own Spelt and Hard White Wheat berries (organic, non-gmo) and have made a few batches of rolls using either or both flours but have yet to try a spelt loaf and your video is a tremendous help! Nice video. I've been working with einkorn flour for a bit and a friend sent me some spelt to play with. I was happy to find your video. I do wonder if there's a difference in the measurement of the flour between whole grain and all purpose?
Welcome aboard! I'm glad you found me. I haven't baked with Einkorn yet. When I first started baking with white spelt flour I used white spelt and swapped my recipes 1:1 for all-purpose flour. Wholegrain flour both spelt and regular wheat flour usually is denser and weighs more. But it also can vary from brand to brand how fine it is milled. Over the years I have found it's best to always weigh with scales when experimenting with different grains. eg. Cups vary from the UK/Australia to the US/Canada. flour type. So to have consistent results scales are best. Some pancake and cake recipes are forgiving with cups but with bread, you really need to be accurate. Bread making is also intuitive and you need to use your eyes to check the dough and adjust the water content. Happy baking.

I just purchased some freshly ground spelt and soaked it in yogurt for 24 hours as per the recommendations of the book “nourishing traditions.” I’m going to now try using my spelt with this recipe. I have just a few hours before my soaked flour is ready. Wondering if you’ve ever tried this technique and if you have any recommendations? Thanks
Thanks for your lovely comment. I haven't tried baking bread using soaked spelt yet. I must check out that book too. I think you could use my recipe as a guide, but keep an eye of the water and flour content as the soaked spelt flour would need less water added or extra flour. Only add a little extra at a time. Let me know what you end up doing I am interested to know how it turns out. Happy baking. nb. last month I tried baking a bread using soaked buckwheat groats and it was a disaster and tasted terrible.
@@SueMareeP well, sadly I realized I have no yeast left. So I went with the recipe from nourishing traditions that called for baking soda. The batter made enough for a loaf and then I made 12 mini muffin loaves. They taste great, but sadly didn’t rise. When they first went in the oven, I looked through the glass and everything was rising beautifully. I came back 15 minutes later, and everything had sunk 😭. Not sure what happened, but I don’t want to give up. Next, I will try your recipe. Just need to order some yeast. 😁. Have a lovely day!

Loaf tin 900g 2 lb Internal size 12.5cm 5inch 22.5cm 9inch 6.5cm 2.5 inch I hope that helps. Let me know how you get on. It could still work but won’t look as high.
@@SueMareeP Hi!!!!! So I went to the shop and got a smaller tin. Mine is definitely big enough for a whole kg of flour. I just had two slices, on their own. This bread is DELICIOUS!! I made this yesterday and for some reason it did not rise as much on the second rise but still tastes good! I’m just wondering what I could have done wrong. I used a Pullman pan and fresh milled whole grain spelt. Do you think that may have been the issue? I’m going to try it again soon.
Depending on your kitchen temperature you might need to leave it to rest a little longer. From my experience the second rise is never as big as the first. Some courser grains won’t get the spring like fluffy white bread. I would trust taste over form. Well done 👍🏻
👋 hello I have a question do I not need to wait 10 minutes for the yeast to active and see bubbles before mixing? I'm new to baking bread I was just wondering because this is a step that's used in making just regular Loaf bread. Is this step not needed because it's spelt flour?
It depends where you live and what the yeast is called. If you’re using fast dried yeast no need to wait you add this directly into the flour. If you’re using active dry yeast then yes. Here in Sweden now I add the dry yeast straight into the flour and it seems to still work. So I reckon it’s fast yeast. In mu early days of baking bread and some of my earlier videos I thought waiting was the way to go but it really depends on the brand of yeast. Another tip what the packet says. I hope that helps.
@@SueMareeP I was watching A video of someone making spelt bread and they used xanthan gum to replace gluten make more puffy. It’s 1 tsp per cup flour. No I haven’t tried it yet didn’t know if it was really needed. Your bread looks pretty fluffy without it
Interesting. Spelt flour already has gluten. Maybe it helps?? I find adding enough hydration, no over kneading & add water to your oven the breads is soft snd fluffy. Not like a white bread loaf but for spelt flour very good.
+Charlotte Beseke hello it is similar to processed wholewheat/wholemeal flour unbleached. It is bought packaged already milled & ground. In the stores it’s called wholegrain spelt. I haven’t tackled grinding my own yet. I have only baked with white spelt flour or wholegrain or wholemeal spelt. I hope that is clearer.
Oh. I’ll adjust my notes. The sugar is optional. Sometimes it’s good to add to help the yeast activate but also okay to leave it out. I often swap between adding or not. Thanks for letting me know.

+John Ross hello. I may have made a mistake with my calculations. I would highly recommend weighing the spelt flour. Flour weights vary from brand to brand & country to country. I use UK/Aust cup sizes. To my knowledge my 1 cup is approx. 125g but wholegrain flour is often heavier. Hope this helps. I am moving house today so I can’t double check for you.

Another thought add an extra teaspoon of yeast. Your homemade flour could be more grainy than my store bought brand. This will give it more lift!

No I’m not that diligent. I always buy my flour already milled or sifted.
Sue do you find using xanthan gum helps at all?
I’m not too experienced with xanthin gum I have only tried it once in gluten free pizza bread. Have you had success with it? What’s the purpose of it?
@@SueMareeP I was watching A video of someone making spelt bread and they used xanthan gum to replace gluten make more puffy. It’s 1 tsp per cup flour.
No I haven’t tried it yet didn’t know if it was really needed. Your bread looks pretty fluffy without it
Interesting. Spelt flour already has gluten. Maybe it helps?? I find adding enough hydration, no over kneading & add water to your oven the breads is soft snd fluffy. Not like a white bread loaf but for spelt flour very good.
Can the bread be made with just White spelt flour?
Yes indeed. Just check the water. You may not need the full amount. Add 3/4 first when mixing. Then the balance gradually.
What is whole grain spelt flour? Does that mean it isn't milled/ground?
+Charlotte Beseke hello it is similar to processed wholewheat/wholemeal flour unbleached. It is bought packaged already milled & ground. In the stores it’s called wholegrain spelt.
I haven’t tackled grinding my own yet. I have only baked with white spelt flour or wholegrain or wholemeal spelt.

I was wondering on the video you add teaspoon of sugar but on the recipe there is no sugar? Is this an error?
Oh. I’ll adjust my notes. The sugar is optional. Sometimes it’s good to add to help the yeast activate but also okay to leave it out. I often swap between adding or not. Thanks for letting me know.
Does spelt dough not rise in the oven the way wheat dough does?
No it is structurally different less gluten, so sometimes it doesn’t rise as much

+John Ross hello. I may have made a mistake with my calculations. I would highly recommend weighing the spelt flour. Flour weights vary from brand to brand & country to country. I use UK/Aust cup sizes. To my knowledge my 1 cup is approx. 125g but wholegrain flour is often heavier. Hope this helps. I am moving house today so I can’t double check for you.

Some of my other spelt recipes add eggs or milk. At the time I had a specific request for a vegan recipe. That’s why it’s in the title!
