    When using syrups, you may have to adjust your ratios depending on their sweetness (they can vary greatly depending on the brand or homemade recipe). Experiment and find out the perfect recipe for YOU!

      @@auto_math Applejack is mixed with vodka as mentioned in the video. Lairds apple brandy is made from eating apples these days, mostly red delicious or whatever is cheapest, because cider apples are vanishingly rare in the US and command a high price. A lot of French apple brandy is still made from cider apples so it’s honestly higher quality imho. I’m from NJ and love Lairds but it’s on the rough side compared to better French apple brandy. This cocktail tames it nicely though.

    The production value of all of these videos is trough the roof! (great lighting, perfect colors, awesome depth of field, super nice slow-mo b-roll, cool subtle text animations) let alone the great recipies and the easy and fun presentation.     one of the first cocktails i "invented" when i first started bartending is very similar to these two. essentially a gin sour with lemon, egg white, and simple syrup, but i used chambord (black raspberry liqueur) instead of raspberry syrup, grenadine, or apple brandy. i called it a gin royal haha

    It is pretty known that the Clover Club originally contained an amount of dry vermouth as well (those 15 ml missing from the Pink Lady, to re-balance ingredients). So, making the Clover Club this way, the two cocktails wouldn't be slightly different anymore, but they would be well distinguished :-)

    I made these but I didn't have all the right ingredients. In fact, all I had was some Malort and Strawberry Quik. After the third one, the taste wasn't so bad. Pretty color too!

    I’ve done a clover club with Chambord instead of raspberry syrup (I had one, not the other on hand) and it was delish!

    @Anders I know some other version of Clover Club(that I make at the bar) and i found yours missing 1 important ingredient, which makes the whole different cocktail imo. Missing star of the show is Dry Vermouth.
    So we make it:
    - 30ml London Dry Gin
    - 20ml Dry Vermouth
    - 20ml raspberry cordial
    - 20ml lemon juice
    - egg white
    Try it that way if You haven't yet!

    Thank you for this recipes! When making Pink Lady, I used St. George Spiced Pair liquor as a substitute for Applejack, and I loved it!
    I found it richer and more complex than Applejack.

    Another great video Anders! I personally love to add just a touch of peach liqueur to my clover clubs! I love the subtle peach flavor underneath the fluffy raspberry flavor profile of the clover club, and may add just enough complexity to let it stand up to your Pink Lady!

    My favorite drink is a whiskey(or gin) sour so when you mentioned the pink lady may be something I'd like I hopped on it. I just happen to have the apple jack and gin here at home! Its a delicious drink! So glad I found this channel and I look forward to trying your other drinks.

    I just recently found this channel and I love your videos! You make everything feel so accessible. I went out a got a cocktail shaker because you really removed the intimidation factor for me. Thank you!
    I just made the clover club with Bombay Bramble (skipped the raspberry syrup) with some muddled blackberries and it’s uhhhhhh real good. Just a hot tip for anyone else who loves a lazy cocktail. Plus I don’t have raspberry syrup or grenadine yet lol
    (Also highly recommend a bees knees with Glendalough Rose. I might have a thing for pink gin….)

    One of my favorite cocktails is the clover club made with a raspberry cordial. I find the drink too effervescent and light with og specs. I think the balance shines best when it's sweet. I've had good results though from 2 oz strong gin, 1 oz rasp syrup, .75 oz lemon juice, 1/2 egg white.

    Yaaaas! I choose to believe this is because I requested the Clover Club at some point, somewhere on here. Please never relieve me of my delusion. In the Okanagan (Canada) we have a company that makes a damn fine raspberry liqueur, which is what I use. Gives you a full raspberry hit - credit for this tip goes to the folks at Krafty Kitchen in Kelowna. Thank you for this. I'm off to get some apple jack and try that Pink Lady. Well done as always. I'm waiting for the world to discover you.

    Can you do an episode on whiskey sours with different types of whiskey?
    I see a lot of recipes that are with bourbon but my personal preference is Irish whiskey for my whiskey sours. Bourbon is my favorite type of whiskey but for me it just doesn’t go into a whiskey sour

    Brilliant video Anders as always. I must say I used to make Pink Ladies with equal gin and Allejack, but your version might be more balanced. I would love to see more comparisons of similar style of drinks in the future. Perhaps El Presidente vs Corn ‘n’ Oil. Or Manhattan vs Brooklyn, etc.

      Great idea, David! I actually have the Brooklyn coming up. But you're right, a lot of cocktails are pretty close to each other and would be good for comparing. As for your pink lady rendition, I bet it's still pretty tasty with a bit more applejack!

    Just add a few drops of red food colorant in your home grenadine. It won't change a lot the concentrate BUT will do a major difference in the cocktail. Don't add too much or the cocktail will be candy red.

    I'll have to try the Pink Lady! For the Clover Club, I usually add 1/2oz of Noilly Prat, I think it gives it the complexity that is missing in the original recipe.

      That IS the original recipe. According to Dave Wondrich The oldest printed version of the Clover Club calls for 1/2 oz dry vermouth. Julie Reiner has re-popularized this drink and her version is definitely on par with the best of any version of the Pink Lady.

    I've recently made both of these cocktails (for personal recreational use), and I, too, prefer the Pink Lady to the Clover Club. My recipes were different, but the ingredients were similar except that I used Boodles for the Pink Lady (Brokers for the Clover Club, though). To me, the Pink Lady would be a terrific Fall cocktail. I suspect that the Pink Lady is sensitive to the quality of the grenadine. I used a really terrific craft grenadine, and I suspect a mediocre grenadine wouldn't be as good. (I used homemade raspberry syrup in the Clover Club, but I know that my homemade grenadine isn't as good as this craft grenadine, so a better raspberry syrup than my homemade stuff could have led to a different opinion.)

    Would have been interesting to see you use Julie Reiner's version of the Clover Club. It's a more complex (and possibly more authentic-if you believe Dave Wondrich) version of the drink.

    Just tried the Pink Lady. Had to use higher quality purchased grenadine as I haven’t gotten around to making my own grenadine (will do that next weekend along with raspberry syrup for Clover Club). Used Laird’s Applejack that I already had on hand after pricing Laird’s Apple Brandy - $70 a bottle, ouch!
    Delicious cocktail, though more brownish tan than pinkish (I’m sure due to the purchased grenadine, which was dark brownish rather than red). Looking forward to trying it again with homemade grenadine.

    It's interesting that you mention they felt the need at one point to add grain liquor to Applejack because the Pink Lady can also be thought of as a Jack Rose with gin and egg white added to it.

    Just an armchair mixologist here, but I saw recipes asking for vermouth in the Clover Club and once I added that, it really elevated my drink. Try it. You may like it better!

    I just made these back to back after a rough week at work - I bought the diluted Laird’s at my last liquor store trip :( so I played with the ratios - added 1/2 oz dry vermouth to the clover club - Winner is... Pink Lady!

    Just made a pink lady. SO good. I emulsified it for a few seconds but it started leaking on me. Does the shaker have to be very locked?

    I think it is time for me to finally make these two drinks. In the past my hold up has been working with egg whites, was afraid of failing to get a good a foam. After a week of making whiskey sours for a family get away I am finally ready to do this!! Now to get some eggs for my bar fridge. LOL

    Can you do the raspberry syrup without water? The same way you would with strawberry? Just equal parts sliced fruit and sugar? Or will it not pull from raspberries the way it does strawberries

    Real cloverclub needs dry vermouth, at leat 1/2 once with 1 1/2 oz of gin. So yeah, please retry this because cloverclubs without vermouth dont taste the same, so please try again to see if Pink lady still beats cloverclub. I havent tried a Pink lady yet so I count on your opinion. Thanks for your videos

    Great video!
    I did a Hawaiian sunset with a new grenadine I got the other day. Very good quality but the color is just off. Looks like all the good stuff isn’t turning a drink into a pink pebto bismol.
    What about a Singapore sling? Id love to see your creation on this amazing drink because it’s so different in every single bar you go. Or... went... back in the old days :D

    A Pink Lady, in my experience, is made with Créme du Noyaux…not grenadine. That could be why your Pink Lady isn’t pink. Plus the addition of almond and peach flavor make the PL an under-appreciated cocktail

    Yes!! Love these drinks! I make my Pink Lady exactly the same way. Well almost, I do 3/4 - 3/4 but your syrup is the 1.5:1, right? So same same.
    For Clover Club, I do think that the recipe with dry vermouth is better. At least for me. Can't seem to find the history behind that though...calling David Wondrich tomorrow 😄

      Haha. Let me know what he says! I do use my semi-rich syrup in the pink lady, so I’m guessing ours taste similar. As for the clover club, I want to try it again with the vermouth. It was good, but I thought the pink lady had an unfair advantage with the applejack. I might come back to this one in the future.

    When you say that apple jack used to be straight apple brandy (before it started being cut with neutral grain spirits), was it also 100 proof? In other words, would an apple brandy like calvados work (or be closer to the original recipe)? Thanks!!

    Are you right handed? Maybe that is the reason that the clover was better mixed and shaken than the pink lady. If you dont shake well enough the egg white doesnt incorporate air enough and there isnt that top foam. when i make whiskey sour poorly shaken that is the same result.

      I found a couple of small glass carafes online. They come in different sizes, but I like the small size. I’m glad you noticed! The little things really help.

      Agreed. I always make mine with fresh raspberries. and 0.75-1 part simple depending on the guest's palate!

    I make what I like to call the "pink clover" which is a pink lady with 15ml of raspberry puree too, which might be blasphemy? But I think it is delicious 😂

    Since in the original Clover Club they used grenadine, why are you using raspberry syrup? Is there any specific reason? I will try to make it with grenadine (your recipe of course). Both cocktails look very nice.

    Clover Club is one of the prettier cocktails in cocktail-dom. Lol. However I’m not surprised the Pink Lady is better tasting. Applejack is a gamer changer and really shouldn’t be reserve for the Fall. It’s too good.

      I get the thought with the Pink Lady having Applejack, but it turns out the cocktail predates the apple by a long shot. The apple wasn't created until the 70s. I didn't know this, btw - had to look it up, but thought it was interesting. It was a great question! Cheers!

    I do not have the apple jack, so pink lady it is... also wouldnt use such a volume of raspberry syrup to make one, unless I want to drink the clover club everynight. Nah Im just gonna muddle a few fresh pieces

      It's true. A lot of bartenders will use dry vermouth in the clover club, but many of the early recipes didn't call for it. That said, after tasting it next to the pink lady, I'd be curious to compare them again with the dry vermouth. The addition of the applejack gave the pink lady the upper hand. Maybe adding vermouth to the clover club would've evened the playing field a bit. Good call. I appreciate the comment!
