Lemon Sugar Cookies |Small Batch | Makes 4-5 cookies

- These lemon sugar cookies taste like sunshine in a cookie. A light, chewy lemon sugar cookie topped with amazing lemon buttercream!!

Ingredients:
4 Tbsp or 1/4 cup butter, salted and softened.
1/4 cup granulated sugar
1 tsp lemon zest or zest of one lemon
1 tsp lemon juice
2 Tbsp beaten egg
1/2 cup plus 1 Tbsp all purpose flour
1/4 tsp baking soda
pinch of salt
1/4 tsp cream of tartar
Directions:
In a bowl, cream together butter, sugar, lemon zest, lemon juice and egg. Beat with a hand mixer until fluffy.
Add in dry ingredients including flour, baking soda, salt and cream of tartar.
Mix just until dry ingredients are incorporated, don't over mix.
Scoop dough onto a parchment lined baking sheet. Will make 4-5 cookies
Bake at 350 degrees F for 8-10 minutes. Don't let them get brown.
Frosting Ingredients:
2 Tbsp butter, salted and softened
1/2 cup - 3/4 cup powdered sugar
1 Tbsp lemon juice or enough to make a good spreading consistency
After baking remove cookies from oven and let sit for a few minutes then move to a cooling rack to cool completely before frosting.

I knew to save this recipe before even viewing this video. Always delicious. I do have a question though, can I use just the egg white of the egg instead of beating and using the whole egg? Thank you!

neat trick with the cup; does anything substitute for cream of tartar? just wondering.
For every 1/2 teaspoon of cream of tartar in the recipe, use 1 teaspoon lemon juice or white vinegar.

Can you substitute oil for butter? I know it will change the flavor and texture but I live in west Africa and butter is not available where I live. And can you use something else besides tartar?
Double the amount of lemon juice to replace the cream of tartar. Not sure about using oil but it's worth a try.
