Cooked milk frosting is my favorite, favorite, favorite! It's the frosting I grew up with on red velvet cake, and as much as I love a good cream cheese frosting, it's just not what "goes" for me. The colors of your sprinkles (and sweater, and mixer . . . ) are just the loveliest. xox
I desperately hate store bought sprinkles and I can't believe I had never thought to make them! This is such a lovely idea! I would love to experiment with colors and shapes. And I am excited to try that frosting! Thanks for this recipe!

The idea of homemade sprinkles is genius, and the fact that it doesn't have all of those artificial ingredients in it is satisfying. Also, that frosting looks amazing. As someone who hates the taste of eggs, I couldn't make all those Swiss/French/German Merengue frostings, and Buttercream was always too heavy and overly sweet. I love this alternative you've provided. I'd love to see you tackle an eggless cake next, I'm still trying to find a good recipe!

I usually mix the sugar and flour together before cooking it with the milk, that way the sugar dissolves and it helps the flour from clumping. I then beat the butter on its own (for about 5 minutes) before I add the cooled paste. Its not my favorite buttercream to use, but it works.
Hi Lindsay, I had a question for you or for anyone in the chat who can answer. Most butter creams are way too sweet for my pallet, almost sickening sweet, but I know that sugar plays an important role for the structure of the butter cream. My questions is, how much if at all can you reduce the sugar amounts without compromising the structure of the buttercream so that it is not so sweet?
Using the reverse creaming method means that the fat from the butter coating the flour prevents the gluten strands from forming (and getting tough from mixing). It's similar to working in the butter for brioche bread to create a light, fluffy, crumb. The beauty of the reverse creaming method is it's basically impossible to overmix!

At 39 years old, I'm kind of in the middle of younger and older. Nearly there though. In any case, any time you eat cake, no matter the type, it's basically flour, a leavening agent, sugar and butter. That much butter is in every cake.

You don't need a mixer for this. It just saves a bit of elbow grease. They also have these things at grocery stores called "cake mixes"....they're designed for whiners like you. What luck!

Make Italian, Swiss or French buttercreams. It's the American ones that are sickeningly sweet.
