  • Here's a good way to use your lean, healthy and tasty venison backstop. Go ahead an butterfly the backstops, marinate using the recipe below, and wrap em in partially cooked bacon. Then get your grill good and hot. Cook them only about 2.5 to 3 minutes each side (5-6 minutes total) on that hot grill. The bacon will finish cooking on the grill. Take em off and let em rest for about 7 minutes and then enjoy!
    Bacon wrapped Backstrap Filet Marinade
    1/4 Cup Worcestershire
    1/4 Cup Soy Sauce
    1/4 Cup Balsamic Vinegar
    1/4 Cup Water
    1/4 cup Vegetable Oil
    1/4 Cup Honey
    2 Tablespoons Brown Sugar
    2 Tablespoon Steak Rub
    1 Tablespoon Lemon Pepper
