Im gonna be doing a couple 3-4 lb roasts for our church game dinner. Not sure if i need to change anything here. Thicker cuts of course. Someone did it one year and i fell in love with the smoked method . Now its up to me to get it right. Ive got one shot- any advice is welcome
Biggest thing is to not overcook it. The lower the temp you cook at the better because it'll give the most control over how it cooks. You should still be good, but don't hesitate to use a meat thermometer and pull within about 5 degrees of desired doneness.
I have a question. After its done being smoked at 140, do you heat it up more? Ive done this before but it cools down really quick. Would it hurt to nuke it for a minute to get the meat hot?
Great question. I would just leave it in ambient heat - like an oven on warm or your smoker just on the lowest setting. If you nuked it even for just a minute you risk that gamey flavor.
Morning John...I personally have never liked venison. My argument is that if it is so good, why do you have to spice the hell out of it? That's what I always told my sister. However, if looking for ideas, how about wild boar? I have had that years ago and really enjoyed it. Keep up the awesome job!

The key is the cook time. If you take it past a medium rare it’s gonna be like shoe leather. Salt and pepper is all you need!
