- This week on Basics, things take a turn for the sweeter because I'm making ice cream. We're going to try a few different techniques that vary in difficulty, but they all have one thing in common: you don't need a standalone appliance.

+ Blended Banana Ice Cream:
2 bananas, frozen
Whole milk
2 Tbsp cocoa powder (or more to taste)
+ Sweetened Condensed Shortcut:
1 pint of heavy whipping cream
1 can sweetened condensed milk (14 ounces)
4 Tbsp melted butter (optional)
2 heaping Tbsp cocoa powder (or more to taste)
+ Standard Ice Cream (Hand Churned):
2 cups whole milk
2 whole eggs
1 cup white sugar
1/3 cup cocoa powder
1 1/2 cups heavy cream
Medium bag of ice
1/2 cup Kosher salt
Special Equipment:

You gotta season it with Kosher Salt and Fresh Ground Pepper and line it on a Piece of Parchment Paper.
And also use a fine mesh sieve
So that way the flavors can get to know each other
now use tiny wisk to toast the buns
And what I'm going to say is almost embarassing, but it tasted delicious!

The sweetened condensed milk one is BY FAR the easiest and tbh I can hardly tell the difference especially if you whip it to where it's JUST starting to turn into whipped cream and not when it's fully whipped cream. When you do it like that, it tastes like a very rich and creamy ice cream, kinda like Ben and Jerry's.
is it not too sweet when you add the sweetened condensed milk? I've tried it twice and it was far too sweet.
@@corneliusnowicki5363 Tbh, I think it works well with more bitter / salty flavors like Chocolate, Coffee, Peanut Butter (the peanut butter one is almost like a peanut butter fudge).
To me though, I do like the sweetness and you can balance it with more salt.
@@corneliusnowicki5363 You can try making your own condensed milk. Just put less sugar in it. It is fairly simple.
Doesn't require special tools... except a freezer that has enough room to fit that metal bowl

I used a loaf tin instead. Lot less shallower and it slotted right in next to me peas.

@@bobsnob3073 if you want it to blend right, yes. You just need to buy the things you NEED and will use often. Like I have an ice cream machine I got as a gift because I refuse to buy the garbage corn syrup crap from stores AND ice cream shops. I just mix pureed fruit, yogurt and maple syrup.
But yes, if you want to make moles, sauces, smoothies etc a lot, you want to make sure its smooth, a cheap blender wont last.

you can use something like a mandolin and make shaved ice like the ones on INSIDER, if ya wanna be fancy 🍧

Loo I've made icecream dozens of times its super easy.. but I am a pretty good cook.. and I took culinary arts but still pretty simple
I had some excess whipped cream once and i added some condensed milk and Instant coffee to it once and froze it and accidentally made icecream. I feel validated that it is an actual recipe. 😌
It's a pretty old one. Called a Mocha Semifreddo. It's hard to make but it's totally worth the trouble
I ran into the same issue after making the (rather failed) lime pie, and instead I got ice cream that was so chewy!
The recipe was then changed to match that consistency later on. All I did - not sure if we met the same condition like you did - was 2 pint of cream, 150-180gr baking sugar (add slowly), 2 plain yogurt (egg substitute) and churning under 3m. More sugar to thicken the thing. Flavor like lime, passion fruit, carrot (for real), choco and margarita to whenever I preferred.
Aside from pie and cookies every year, we've seen more homemade ice cream on our table rather than the cheap stuff (unless Haagen-Dazs). Andrew's Basic series just fill in the rest for my homecook trickery!

I believe making food and having an inability to consume it are separate matters. There are chefs/bakers who make food every day that would kill them in a moment if eaten.

For chocolate ice cream, I've been using melted high end 100% cocoa bars whisked into the custard base. It has a nice effect on the texture.

I love that you added butter into the condensed milk ice cream - I was thinking of a way to sneak something cannabis infused into ice cream, and I think I found the way. I love this.

@@calebbeaudoin8726 every recipe that has butter in it will work. :) To make cannabis butter lard: grind the weed in a mixer until it is a powder. Spread it out on parchment paper and put in the oven for 20 minutes at 110 degrees celsius. Afterwards heat the butter lard and add the cannabis powder, cook for 3 hours minimum on low heat, preferably 5 to get every bit of thc into the butter lard. Dont use regular butter because the hours of cooking will make it burn, also lard can be stored in the fridge for months. Be really careful with the dosage, 0,3g are enough to make you question reality. Hope you enjoy

I'm so happy there's someone else out there whose fave ice cream is also just plain chocolate. I always get teased for that being mine!
Love your videos! One tip: The ice cubes would cool your bowl faster if you use a water/ice mixture and not just ice with some salt on it. The salt melts the ice but it then drops down to the bottom which only helps a little. Ice/water is the way to go! Much much faster.

Homemade: 4 ingredients
Store bought: over 15 ingredients.
I used the custard base to make plain jane vanilla ice cream and I have never tasted anything so delicious. I used an ice cream bowl attachment on my kitchenaid mixer, so not technically hand churned. I am blown away that I was able to make something with that flavor and the most perfect consistency in my own kitchen. THANK YOU BABISH! This quarantine weight is never coming off...

I used the last variation to make my first ice cream in my new ice cream maker and it turned out awesome! I can't have cocoa right now, so I turned it into a vanilla tahin ice cream, which was heavenly :) Thanks for the recipe and the instructions!

I like the way you talk, you're like reading an informative book with humorous twists. :) thank you, I agree with "you get what you whisk for". I tried that method once and I enjoyed the result very much.
There's a pretty good trick that I saw elsewhere on youtube for the last method that works well for slightly smaller batches.
Instead putting it in 2 big bowls, put the ice and salt in a very large ziplock baggie, and then put the cooled/chilled icecream custard in a smaller ziplock baggie inside the ice bag.
Then shake it around for like 20 mins, or until it reaches the consistency shown in your video, and then throw it into the freezer.
Not sure if it's actually easier, but it's a little quicker, and saves room in your freezer.

I’ve had ziplock bags burst on me in several occasions and if I was in the mood for ice cream that would hurt
alexjav21 might try a version of this or find smaller bowls because my freezer isn't big enough for that ginormous bowl he's using.
@um22w22 yeah, especially because this is basically the last step. First time i tried it, it was after i hand picked berries for the custard flavouring; I would've died a little inside if the bag burst had burst when i was shaking it.
better than ziplock bags is to use two metal tins, like the ones coffee used to come in, put the liquid in the little tin, tape the lid shut. Put in large tin with ice and salt, and tape large lid shut. Roll around the tins

If the bowl has a large and flat enough bottom, for the custard you could wrap a towel around a slab of dry ice, leaving a portion uncovered to set the bowl on and mix until done.

You can do that last method with plastic bags where the ice cream is in a smaller bag inside a larger bag with the ice and salt and you shake the bags until you get ice cream. We did that in my high school chem class as an experiment bc we were the cool class that actually did fun stuff

I tried the Ice Cream Mustard and it taste good! Better than the store bought. The trick is to mix it vehemently for 5 mins (if you have a hand mixer) so it can have smooth texture.
I made basil ice cream with the hand churned option and OH MAN WAS IT HARD but DEFINITELY WORTH IT

My favorite ice cream recipe that I've made the flavoring had to be added while heating the custard, but on the other side of the coin you had to strain the solids out of the custard before freezing so you didn't have chunks of cinnamon bark in your bowl of ice cream.
